Historia de una pasión.

La historia de Equipo Navazos va de la mano de la pasión compartida por un amplio grupo de grandes amantes y conocedores de los generosos andaluces. Conscientes de los tesoros que reposan escondidos en los cascos de bodega de Jerez, Sanlúcar y El Puerto, y también de Montilla y su entorno, nos propusimos recuperar algunas de esas joyas. A finales de 2005, Equipo Navazos comenzó a seleccionar algunas de esas botas de vino en atención a su especial complejidad y finura y a embotellarlas en series muy limitadas, mayormente para disfrute y satisfacción propios y de nuestros amigos. Al principio, la distribución tenía carácter casi privado entre un grupo de apasionados de estos vinos asombrosos de España, Alemania, Reino Unido y Estados Unidos, en su mayor parte gente del vino: enólogos, escritores, distribuidores, sumilleres y aficionados con profundos conocimientos.




A propósito.

Todo comenzó en diciembre de 2005, a propósito de la visita a una pequeña y antigua bodega sanluqueña, cuando “descubrimos” varias docenas de botas de un amontillado natural viejo y finísimo que llevaba veinte años prácticamente parado, sin comercializar. Seleccionamos y adquirimos el equivalente al contenido de una bota bodeguera y lo embotellamos privadamente bajo una marca que evoca el conocido relato de Edgar A. Poe: La Bota de Amontillado NAVAZOS. Estas poco más de 600 botellas fueron el inicio de las actividades de selección y producción de vinos por parte del Equipo Navazos. Después, vinieron otras dos selecciones realizadas a lo largo de 2006 con carácter exclusivamente privado para el mismo grupo de aficionados y profesionales del vino. Los resultados fueron entusiasmando a los “socios” de la iniciativa, lo que alentó su continuación, ya con una parte de la producción puesta directamente en el mercado a través de varios influyentes distribuidores nacionales e internacionales que, por otra parte, formaban parte del equipo desde los inicios.




Trayectoria.

A partir del verano de 2007, como consecuencia de la entusiasta insistencia de algunos amigos que a la vez son destacados comerciantes de vinos, tanto en España como en otros países, una pequeña cantidad de botellas de cada una de las sucesivas ediciones comenzó a estar a la venta para el público en general: La Bota de Amontillado “Navazos”, La Bota de Fino “Macharnudo Alto”, La Bota de Palo Cortado “Bota Punta”, La Bota de Manzanilla, etcétera.




La evolución de un proyecto.

El número de botellas en circulación ha ido creciendo, siempre dentro de unos límites artesanales: como máximo unos pocos miles de botellas, a veces unos pocos cientos tan sólo. Asimismo, Equipo Navazos ha ido implicándose cada vez más en las etapas previas, colaborando intensamente con los productores en las diferentes fases de la producción, desde el mismo viñedo, e incluso asociándose con algunos de ellos en la elaboración de algunos vinos y brandys específicos bajo nuestra directa participación. Los vinos de las ediciones “La Bota” se embotellan en ediciones limitadas y cerradas, en una serie que sigue un orden numérico correlativo y con la fecha de saca identificada con exactitud, a fin de que el consumidor pueda comparar conscientemente las diferentes ediciones de una misma solera. Y, también, para que se pueda llevar un control preciso de su evolución, pues -como todos los grandes vinos- éstos también maduran y pasan por diversas fases en su larga vida disfrutable en botella. Las primeras ediciones se distribuyeron exclusivamente en un círculo cerrado, de modo que, en caso de que pueda encontrarse alguna botella suelta por ahí, provendrá necesariamente del lote privado de los poco más de treinta “socios” particulares que con su ayuda y colaboración hicieron posible y siguen apoyando este apasionante proyecto.

Historia y consecución DO.

No se sabe exactamente cuándo se comenzó a elaborar la Manzanilla. Históricamente, se suele asociar el comienzo de la producción en las bodegas sanluqueñas con la reestructuración del negocio vitivinícola durante el siglo XVIII y con el asentamiento de la industria moderna en la zona. El primer documento en el que aparece el nombre de Manzanilla referido al vino data del siglo XVIII y se trata de un Acta Capitular del Cabildo de Cádiz. Debemos los primeros estudios sobre la Manzanilla al botánico y agrónomo Esteban Boutelou, en su libro Memorias sobre el Cultivo de la Vid en Sanlucar de Barrameda y Xerez de la Frontera (1806). La Manzanilla fue incorporada a la Denominación de Origen Jerez-Xérès-Sherry en 1933 como uno de sus tipos de vino. Hasta 1964 no se publicó el Reglamento de la Denominación de Origen Manzanilla, donde se reconoce la identidad de la Manzanilla, así como su vínculo con Sanlúcar de Barrameda. El 26 de junio de 1996, la Comisión de la Unión Europea reconoció el carácter único de la Manzanilla. Con ello dejó de ser necesario referirse a este vino con la expresión «Manzanilla de Sanlúcar de Barrameda», ya que ahora solo hay una: la de Sanlúcar. La DO Manzanilla San Lúcar de Barrameda pertenece también a su vez a la DO Jerez-Xerés-Sherry, compartiendo estos vinos geografía, zona de producción e incluso variedad de uva y proceso de elaboración como la supervisión y el amparo del mismo Consejo.




Zona de Producción.

La zona de producción del Jerez se encuentra en el extremo sur de la península. Los viñedos de Jerez, El Puerto de Santa María, Sanlúcar, Trebujena, Chipiona, Rota, Puerto Real, Chiclana y Lebrija son los únicos que pueden producir uva para la elaboración de vinos de Jerez y Manzanilla. Otra delimitación importante es la zona de crianza: el triángulo formado por las ciudades de Jerez, El Puerto de Santa María y Sanlúcar. Únicamente en estas ciudades se puede completar el proceso de producción amparado por la D.O. Hay que tener en cuenta varios factores de estas zonas, como el clima, el tipo de tierra (albariza, barros y arenas) y, especialmente, el tipo de uva autóctona: Palomino, Moscatel y Pedro Ximénez, blancas las tres.




Método de producción.

Una vez recolectada la uva, se procede a la pisa y prensado y se deja fermentar: es de ahí de donde surgen los nuevos vinos y los mostos. Los catadores prueban estos nuevos vinos y, dependiendo de las características de los caldos, se separan entre finos/manzanillas (los más pálidos) y olorosos (los que poseen más cuerpo). Una vez separados, se dejan reposar hasta alcanzar los 15º y 17º. Las botas más empleadas son de roble americano, con capacidad para 600 litros. Se llenan hasta los 500 litros, unas 30 arrobas, y se deja una superficie vacía para que se desarrolle el velo de flor. El método que se lleva a cabo es el de soleras y criaderas. Las variedades de uva utilizadas en la DO Manzanilla-Sanlúcar de Barrameda serán Palomino, Pedro Ximénez y Moscatel. La manzanilla se considera un vino generoso.




Manzanilla.

La manzanilla propiamente dicha es un vino muy pálido, de un tono amarillo pajizo. Es un vino blanco y seco, elaborado con uva palomino y envejecido bajo una capa de levaduras llamada velo de flor. Su crianza se lleva a cabo exclusivamente en bodegas de Sanlúcar de Barrameda. Las especiales condiciones climáticas de esta ciudad, situada en la desembocadura del río Guadalquivir, propician el desarrollo de un velo de flor muy peculiar. Como consecuencia, el vino adquiere características particulares y diferenciadoras. Tiene aroma punzante con notas florales que recuerdan a camomila y almendras. Al paladar es seco y fresco. Presenta, también, una ligera acidez que deja un regusto ligeramente amargo.




Manzanilla pasada.

Si las manzanillas son sometidas a períodos de crianza excepcionalmente prolongados, en los que la flor llega a debilitarse ligeramente, provocando un pequeño nivel de oxidación y una mayor complejidad; surgen así las "Manzanillas Pasadas". Son vinos con más estructura, pero con todo el carácter punzante e intenso que aporta la crianza biológica.
