Una experiencia de cinco generaciones permite a la casa León Beyer ofrecer, desde 1580, vinos alsacianos de primer orden apreciados en el mundo entero. En el corazón mismo de Alsacia, admirablemente situada a los pies de sus tres castillos, la pequeña aldea de Eguisheim es uno de los estandartes del viñedo alsaciano. Su historia se remonta a principios de la Edad Media. Uno de los condes de Eguisheim, sobrino de Santa Odila, fue el padre del gran papa alsaciano San Leon IX, nacido en esta aldea en 1002. Desde siempre los vinos de Eguisheim han gozado de gran prestigio en todo el mundo. El viñedo se cultivó y prosperó gracias al cariñoso cuidado puesto por los monjes de los conventos vecinos. La casa León Beyer es una de las más antiguas de la región y es propietaria de viñedos muy importantes, situados en las mejores zonas.
Producir un buen vino y darlo a conocer.
Viticultores de padres a hijos en Eguisheim desde 1580, han ejercido su profesión sin interrupción y con excelentes resultados. Fue en 1867 cuando el señor Emilio Beyer fundó la razón social para el embotellado de sus vinos y actualmente es dirigida por Léon Beyer con la ayuda de su hijo Marc. En sus extensas bodegas, excavadas en la misma ladera debajo de sus viñedos, los vinos se elaboran y cuidan siguiendo estrictas normas de prensado, vinificación y envejecimiento en las mejores condiciones. La casa Léon Beyer ofrece a sus clientes una selección de toda la gama de vinos alsacianos, del Sylvaner y el Muscat a los más prestigiosos Riesling, Pinot Gris y Gewürztraminer, con sus más excepcionales variantes. La bodega no solamente elabora grandes vinos, sino que ofrece además una amplia gama de eaux-de-vie, aguardientes alsacianos de frutas de primera calidad y prestigio mundial. A falta de una denominación específica podemos decir que eau-de-vie, agua de vida, es cualquiera de esos soberbios brandies de fruta, por los cuales Alsacia es especialmente famosa. Estas peculiares destilaciones se conocen también como “alcools blancs”, por haber madurado en cristal en lugar de madera y por tanto ser incoloros. La fruta es la única materia prima utilizada para los aguardientes, Eaux-de-Vie, de Léon Beyer. El aroma, el sabor, la delicadeza de los grandes aguardientes de frutas depende estrechamente de la calidad de dicha materia prima. La habilidad del destilador influye desde la selección de la fruta hasta su destilación.
La fruta se prensa y experimenta una fermentación lenta, de varias semanas de duración, antes de proceder a su destilación. Las frutas de pulpa, como es la Pera Williams, deben fermentarse, como el vino, mientras que otras, como las bayas, deben ser objeto de una maceración. A ambos procesos les sigue una doble destilación con el método Charentié. Las frutas de grano que no poseen el suficiente azúcar para fermentar prensadas se ablandan con alcohol: en este proceso – denominado maceración – el alcohol extrae las sustancias aromáticas y las absorbe. Como envejecen en damajuanas “demijohns” botellas de cristal de 50 litros, rodeadas de mimbre, cuya denominación se debe a la desfiguración del nombre francés “Dame Jeanne”, se conservan claros como el agua. Posteriormente si se desea, se envejecen en barricas de roble, dependiendo del gusto del consumidor final.
