Cada mezcal de la destilería se elabora con una sola variedad de agave (que puede ser cualquiera de las 30 aprobadas por el gobierno mexicano) que, en el caso del Doba-yej, es el espadín. El «Jimador» cosecha manualmente los agaves, que se cuecen en un horno bajo tierra y, tras su fermentación con levaduras silvestres, se destilan en alambiques de cobre. Aromas cítricos, toques ahumados y de fruta blanca, y sabor floral con notas dulces y de caramelo tostado. Las etiquetas se inspiran en las calaveras, todo un símbolo del país, que tienen su origen en La Catrina y El Día de los Muertos. |
