Esta denominación plantó sus raíces, hace más de dos mil años, en el lugar de nacimiento de los viñedos de Burdeos y se extendió hasta un “terroir” que dio a luz en el castillo Haut Brion, en el siglo XVIII, al «nuevo clarete francés». El 9 de septiembre de 1987 se firma el decreto de la denominación Pessac-Léognan, una región cuyas características de suelo, clima, tradiciones de producción de vino blanco y tinto son igualmente excepcionales por calidad y capacidad de envejecimiento, habiéndose expresado durante siglos. Original por su relieve montañoso donde, en las orillas del río Garona, los guijarros se depositaron durante casi dos millones de años, dando lugar a una variedad que solo se puede encontrar aquí. Original por su clima, debido al efecto de dos reguladores naturales, al este el Garona que suaviza las heladas y, al oeste el bosque que actúa como barrera contra el viento y mantiene los niveles de humedad. También original en su geografía, por el entrelazamiento inusual de la ciudad y los viñedos, donde la alineación de las hileras de viñas, que se encuentran cara a cara con los edificios, lucha contra la invasión urbana. Y por último original por su factor humano, con unos viticultores dinámicos y emprendedores que, conscientes del vasto potencial de su terroir, durante el último cuarto del siglo XX, lideraron una verdadera conquista con un espíritu de unidad rara vez visto. Los viticultores de Pessac-Léognan persiguen y desarrollan el extraordinario potencial cuantitativo y cualitativo, resultante de sus propias ideas y enfoques originales.
Geología y geografía.
Al final del período terciario y al comienzo del período cuaternario, el río Garona depositaba guijarrros redondeados, piedras rotas mezcladas con arcilla, y arena. Con esos componentes se formaron las famosas gravas de Burdeos, que en esta zona tienen uno grosor que varía entre los 20 cm y más de 3 metros, dispuestos sin ninguna homogeneidad, proporcionando las características y matices de los grandes vinos de Pessac-Léognan. El área de la denominación Pessac-Léognan está compuesto por los municipios de Cadaujac, Canéjan, Gradignan, Léognan, Martillac, Mérignac, Pessac, Saint-Médard-d’Eyrans, Talence y Villenave d’Ornon.
Los uvas y sus vinos.
Los vinos blancos secos de Pessac-Léognan tienen la característica única en el reino de los grandes vinos blancos de combinar complejidad, frescura, vivacidad y armonía. Básicamente, dos variedades de uva, Sauvignon, muy a menudo la mayoría, y Semillón, adecuadas para satisfacer y florecer en los suelos pobres de Graves con caracteres arenosos o calcáreos. El Sauvignon proporciona la estructura, fresco y afrutado con un recordatorio aquí Muscat menudo fragantes. El Semillon ofrece la riqueza de sus aromas únicos de fruta confitada. Son complejos, carnosos, largos y de persistencia muy aromática. Para los vinos tintos, las uvas elegidas son la cabernet-sauvignon y merlot. La primera se desarrolla maravillosamente en estos suelos de grava, su personalidad poderosa y compleja ofrece a los vinos tintos una túnica oscura, una estructura poderosa con taninos firmes, una aptitud incomparable para el envejecimiento. La variedad merlot, compensa, en las mezclas, el rigor de Cabernet-Sauvignon gracias a su redondez y su fructificación desarrollada y, por lo tanto, aporta flexibilidad. Estos vinos tienen un color púrpura brillante, profundo e intenso, con una nariz muy elegante cuando son jóvenes, con bayas trituradas, pulpa, fruta madura, pero también vainilla, almendras tostadas y ahumados. En vinos envejecidos se amplifican y concentran sus aromas de manera armónica. En boca tienen una consistencia carnosa, espeso, generalmente con taninos muy maduros y concentrados. Algo cerrados y a veces austeros en su juventud, se suavizan a medida que envejecen: los taninos frutales se mezclan con los del roble aportando redondez y suavidad, muchos sabores grasos y picantes. Terminan con una agradable flexibilidad y una gran riqueza aterciopelada que persiste.
