En 1994, Nicolas y su equipo estaban seguros de haber identificado los mejores lotes para el cultivo de Chardonnay, Cabernet Sauvignon y Malbec. En primer lugar, Jose Galante, enologo principal desde 1975, embotelló un pequeño corte de uvas de los lotes más antiguos y uniformes del viñedo Uxmal, que posteriormente a este viñedo se le llamó Agrelo, por su ubicación en el distrito de Agrelo, y se fraccionaron 300 cajas de vinos de Catena Alta Cabernet Sauvignon. En 1995, Jose embotello el primer Catena Alta Chardonnay, elaborado con uvas del lote 4 del viñedo Domingo, situado en la región fría de Tupungato. Al año siguiente, en 1996, una hectárea, correspondiente al lote 18 del viñedo Angélica, otorgo las condiciones ideales para elaborar el mejor vino Malbec. Fue entonces cuando Nicolas decidió elaborar su primer Catena Alta Malbec. La cosecha 1997 fue un año excepcional para el Cabernet Sauvignon. Nicolas Catena y Jose Galante decidieron crear otro cuvee top, que cumpliese el sueño iniciado en los años 80. El vino, denominado Nicolas Catena Zapata es un blend de 95% Cabernet Sauvignon y 5% Malbec. El lanzamiento se llevo a cabo en el año 2000, a través de una serie de catas a ciegas realizadas en USA y Europa, contra grandes vinos del mundo como Chateau Latour, Chateau Haut Brion, Solaia, Caymus y Opus One. En todas las degustaciones, el vino Nicolas Catena Zapata quedó el primero o segundo.
Nicola Catena, el fundador.
Era el hijo menor de una familia de cinco hermanos proveniente de la región de Le Marche, en Italia. Sus hermanos abrazaron el sacerdocio o la carrera militar. En cambio, él amaba la tierra y comenzó a trabajar desde muy joven, junto a su padre, en las pequeñas huertas y viñedos de la familia. Con el sueño de tener un viñedo propio en el Nuevo Mundo, en 1898, a los 18 años de edad, partió en barco hacia Mendoza, donde en 1902 plantó su primera viña de Malbec. Cuando me inicié en la conducción de la bodega familiar, a mediados de los años 60, mi abuelo y mi padre elaboraban sus vinos finos de acuerdo a las antiguas tradiciones italianas. Posteriormente, Domingo Vicente Catena, hijo de Nicola, se convirtió en uno de los viticultores más prósperos de Mendoza. Vendía su vino en antiguos toneles de roble, que eran embotellados en la capital argentina. El apellido Catena se hizo famoso gracias a su ensamble Tinto Buenos Aires. El secreto de este vino, vendido en los bistrós más elegantes de Buenos Aires, eran las uvas de La Consulta, al norte del Valle de Uco. Don Domingo estaba convencido de que el Malbec podía dar vinos tan buenos como los mejores de Francia.
Un gran paso al frente.
A principios de los 80, Nicolás fue invitado a la Universidad de Berkeley como profesor de Economía Agrícola. Al visitar Napa, se sorprendió de que los californianos aspirasen a elaborar vinos tan buenos como los mejores de Francia. Regresó a Mendoza decidido a modernizar la industria, desde la selección de plantas hasta la incorporación de nueva tecnología. Nicolás introdujo prensas europeas, barriles de roble francés y nuevas líneas de embotellado. Su visión fue crear vinos de una calidad similar a la de los mejores países productores. Sus colegas pensaban que cometía un error al no elaborar volúmen a precio accesible. Cabernet Sauvignon y Chardonnay fueron las dos variedades con que Nicolás inició su revolución. Tras la muerte de Domingo, se focalizó en el Malbec y su intuición le decía que los viñedos fríos, de altura, serían la dirección correcta. En Mendoza había entonces sobreproducción de Malbec y las largas maceraciones no favorecían el desarrollo de aromas y taninos delicados. En los 90, Nicolás emprendió el resurgimiento con viñedos de altura, selección de plantas e hincapié en suelo, clima e irrigación.
El Catena Institute of Wine.
Nunca tuvo intenciones de trabajar en la bodega familiar. Luego de estudiar biología en la Universidad de Harvard y Medicina en Stanford, se graduó como médica. En 1995, su padre le pidió representar a la familia en la New York Wine Experience, organizada por la revista Wine Spectator. Fue la primera bodega sudamericana invitada. Laura observó largas filas para probar los vinos franceses, italianos y californianos. Pero cuando la gente pasaba frente a Catena y veía vinos de Argentina, seguía caminando: eran completamente desconocidos. Laura sostuvo desde un principio que el clima de altura extrema y la variedad Malbec debían estudiarse localmente, pues ningún consultor externo sabría qué hacer con el terroir al pie de los Andes. Por lo tanto, en 1995 Laura decidió fundar el Catena Institute of Wine, cuyo proyecto inicial consistió en llevar a cabo la primera selección de Malbec de Argentina, una población de 135 plantas cultivadas en el antiguo viñedo Angélica perteneciente a la familia. La tarea del instituto, explica Laura, consiste en utilizar la ciencia para preservar la naturaleza y la cultura, no para modificarla ni mejorarla.

El centro histórico de producción de Malbec fue Cahors, localidad ubicada en el sudoeste de Francia, cerca de los Pirineos. Se encuentra relativamente cerca de una de las principales regiones vitivinícolas de Francia, Burdeos que está 200 km al este. Una tradición sostiene que los romanos introdujeron en Cahors cepas de esta variedad, llevadas desde Italia, a mediados del siglo II. Hay quien sostiene que llegaron de otras zonas de Europa, pero lo que está claro es que allí se cultivó esta variedad. Durante el imperio romano, el vino de Cahors fue apreciado por las élites, lo que queda reflejado en obras de los autores clásicos, sobre todo Horacio y Virgilio. Después de la caída del imperio romano, se produjo el colapso del poder político y las instituciones; pero el vino de Cahors mantuvo su prestigio. En la Alta Edad Media, fue reconocido por el obispo de Verdún. Los estudios ampelográficos afirman que surge de un cruce entre magdeleine noir de Charentes y la prunelard. Características.
Las cepas de uva malbec son de elevado vigor y porte tumbado que necesita más sol y calor que la cabernet sauvignon o la merlot para madurar. Tiene un desborre precoz y madura también temprano o a media estación, razón por la cual se ve afectada tanto por las heladas del invierno como por el frío en primavera, e incluso por las bajas temperaturas en la cierna, que inducen en esta variedad un fuerte corrimiento del racimo. Los racimos son entre pequeños y medianos, muy compactos y con un pedicelo reducido del cual se desprenden las bayas con facilidad. Produce uvas esféricas de gran tamaño, el cual es uniforme a lo largo del racimo y en las que se aprecia muy claramente la cicatriz estilar. Su piel es de color negro, azulada y gruesa y su pulpa, que no presenta pigmentación, es blanda y de jugosidad elevada. Es una variedad muy sensible al mildiu y especialmente a la podredumbre gris. También, aunque en menor medida al oídio, a la excoriosis, a otras enfermedades de la madera y al black-rot. Es muy sensible a los ácaros y menos a la polilla del racimo y a los cicadélidos. Es una variedad exigente en potasa y magnesio, pero debe emplearse poco nitrógeno por su elevadísimo vigor. También es conocida como cot, cahors, pressac, auxerrois, costo rojo, lutkens, quercy, balouzat, jacobina, negro dulce, saint emilion y Cô.
Zonas de cultivo.
En Francia, las plantaciones de esta variedad se encuentran en las inmediaciones de la zona de Cahors, en el centro-sur del país, en la región de Lot. No obstante, la malbec incrementó notablemente su presencia al ser utilizada ampliamente en Argentina, donde fue introducida por el ingeniero agrónomo francés Michel Pouget en 1868. Vinos.
Los malbec franceses tienden a tener mucha estructura, taninos firmes y mucho color los años secos, mientras que el grano tiende a hincharse dando vinos diluidos los años lluviosos. A diferencia de éstos, los malbec argentinos tienden a ser mucho más afrutados, con taninos maduros y un final aterciopelado. Por lo general, los vinos elaborados con malbec destacan por presentar una fase visual de intenso color oscuro y una nariz frutal que recuerda a las cerezas, fresas o ciruelas, uvas pasas y pimienta negra y en algunos casos con reminiscencias de frutas cocidas (mermelada). Al envejecer en barrica de roble toma notas de café, vainilla y chocolate. En boca se aprecian sus taninos dulces, suaves y envolventes. Refinado, vigoroso y equilibrado, el Malbec da origen a una diversidad de estilos que reflejan su gran potencial. Es el tinto por excelencia para acompañar cualquier plato, desde el tradicional asado argentino o la típica humita a base de maíz del norte del país, hasta platos internacionales como pastas, pizzas, tamales o sushi.

Español [ ES ]La gama de vinos 'Appellation' de Bodegas Catena Zapata reproduce fielmente el concepto de vino de pueblo de la Borgoña. Tal y como sucede en Francia, esta colección de vinos tiene su principal enfoque en el terruño, por lo que la zona de origen pasa a ser mucho más importante que la variedad de uva o la crianza. Viñedos históricos y de pequeñas dimensiones como Lunlunta, Agrelo o Paraje Altamira dan nombre a los vinos. Entre ellos se encuentra este Catena Paraje Altamira Malbec, un tinto elaborado únicamente con las uvas de dicho lugar, un rincón mágico de suelos calizos capaz de ofrecer vinos de fantástica acidez e imponente mineralidad. En cada una de las poco más de 9000 botellas de Catena Paraje Altamira Malbec encontramos un vino de intenso color púrpura y nariz concentrada de frutos silvestres maduros, flores azules y piel de naranja. Su boca es compleja y concentrada, con los taninos muy bien integrados y la caliza ofreciendo toda su elegancia. A su tacto sedoso se suman los recuerdos de especias finas y cacao que derivan en un final de excepcional longitud, seco y noble, de fino rastro mineral. Envejecido durante 12 meses en barrica. La selección de barriles varía en función del viñedo y la vendimia. 85% roble francés, 15% roble americano.
