Historia.

La historia de la marca Ceretto incluye 3 generaciones cuya misión durante más de setenta años ha sido la excelencia en el vino, y ser embajadores del Piamonte e Italia a lo largo del mundo. Riccardo Ceretto, fundador de la empresa, y su amplísima gama de vinos se han convertido en verdaderos embajadores del Piamonte italiano, una marca con una larga lista de pagos y bodegas (Bricco Rocche, Bricco Asili, Monsordo Bernardina, Vignaioli di S. Stefano, e incluso una destilería de grappa), acogidas a no menos denominaciones de la zona de Le Langhe: Barbaresco, Barolo, Barolo Chinato, Langhe Arneis, Langhe Bianco, Langhe Rosso, Dolcetto d'Alba, Barbera d'Alba, Nebbiolo d'Alba, Moscato d'Asti y Asti Spumante.




Trayectoria.

Bruno y Marcelo Ceretto son los propietarios de una de las bodegas más punteras de las DOCG Barbaresco y Barolo. La filosofía del “vino de finca” se constata en la gran diversidad de pagos y bodegas que poseen en el Piemonte. En Bricco Rocche elabora sus más preciados y unos de los más cotizados Barolos, y en Bricco Asili sus reputados Barbarescos. Los vinos de Ceretto transmiten la tradición muy bien combinada con una elegante modernidad. En el año 1930 Ricardo Ceretto fundó la Casa Vinicola Ceretto, que actualmente constituye uno de los núcleos de la Aziende Agricole familiar. En 1960 sus hijos Bruno y Marcelo tomaron las riendas del negocio y lo posicionaron en la élite del país. El objetivo era elaborar vinos que transmitieran la tipicidad de su origen. Poco a poco y descubriendo los mejores viñedos, fueron comprando terrenos. En 1970 adquirieron Bricco Asili en Barbaresco mientras que Bricco Rocche nació en Barolo, entre 1977 y 1982, con una bodega ultramoderna. Después fueron creando nuevas bodegas: Monsordo Bernardina, Arbarei, Rossana y Blangè en Alba; I Vignaioli Di Santo Stefano en Santo Stefano Belbo, y la Distilleria Ceretto en La Morra.




La calidad desde el viñedo.

Elaboran uvas de la propiedad y de otros viticultores con los que mantienen contratos exclusivos. Desde hace unos años, Alessandro Ceretto, hijo de Marcelo, controla todos los viñedos y es el responsable enológico de la compañía. Aplican un estricto criterio para seleccionar las uvas para elaborar los vinos. Los parámetros de calidad, muy exigentes, empiezan en el campo y siguen en las vinificaciones y la crianza.

La uva.

Es una variedad de uva de piel oscura cuyo lugar de origen es la región de Piamonte, esta región cuenta con denominación de origen controlado y garantizado (DOCG) que han sido proporcionadas exclusivamente a la Dolcetto.
Las DOCG más considerables se les atribuye a viñedos ubicados cerca de Dogliani, Diano d'Alba y Ovada mientras que la denominación de origen controlada (DOC) se le ofrece a los vinos italianos como el Dolcetto de Alba, Acqui y Asti. La Dolcetto cuenta con maduración temprana (al contrario de Nebbiolo y Barbera, variedades muy parecidas) y su cultivo a sudo relegado a lugares más de mayor altitud, donde sus parientes podrían tener poblemas de maduración. El vino.

La uva Dolcetto es utilizada para elaborar vinos tintos y aunque es originaria de la región de Piamonte, en Italia, ha encontrado un gran destino para su cultivo en Australia y Estados Unidos. Esta variedad de uva es considerada como el pariente pobre de Nebbiolo y Barbera, otras variedades italianas. A pesar de su nombre, el vino Dolcetto es raramente un vino dulce; es más bien un tinto suave y afrutado caracterizado por una acidez baja y equilibrada, que cuenta con baja intensidad aromática y colores que vas desde el rubí profundo hasta el púrpura. Un típico vino Dolcetto es de colores brillantes, cuenta aromas terrosos de almendras y nueces, y en la boca es intenso pero no están preparados para un largo envejecimiento sino que deben ser consumidos jóvenes y podrían almacenarse máximo por cuatro años. Si el actual Dolcetto tiene un sabor notable y notas de cata estupendas, su futuro promete grandes cosas mientras que el responsable tiempo de envejecimiento en barricas de roble le puede dar un impulso en calidad y prestigio.




Vinificación.

En las fases de vinificación, solo las prácticas enológicas justas y constantes en la zona son adecuadas para dar a los vinos sus características de calidad peculiares. Las prácticas de vinificación del vino Dolcetto d'Alba DOC incluyen, entre otras cosas, que: El rendimiento máximo de las uvas en el vino Dolcetto d'Alba DOC no debe exceder el 70%; Si se superan estos parámetros dentro del límite del 5%, el excedente no puede tener derecho a DOC.
