Ubicación y suelo.

Valtellina Superiore DOCG es una de las denominaciones importantes de Lombardía y una de las más conocidas en el ámbito de la viticultura de montaña. Su vino, un tinto seco con buena estructura, se produce con uvas Nebbiolo, localmente llamadas Chiavennasca , una variedad de vid con orígenes del Piamonte pero que en Valtellina ha encontrado una nueva declinación positiva. El valle de Valtellina se extiende en dirección este-oeste dentro de un territorio completamente montañoso. Está rodeada al norte por los Alpes Réticos, con picos de más de 4.000 m, y al sur por los Alpes Orobios menos impresionantes. La DOCG.

Valtellina Superiore DOCG nació en la provincia de Sondrio , en una de las zonas vitivinícolas más importantes de Lombardía . Esta Denominación de Origen Controlada y Garantizada se creó en 1998. Este es un vino que ha sido reconocido por sus excelentes peculiaridades. Junto con el Sforzato di Valtellina puede considerarse uno de los buques insignia del territorio valtellinés. Valtellina Superiore también puede tener los nombres de 5 subzonas: Sassella, Grumello, Inferno, Maroggia y Valgella. Los vinos que se producen en estas áreas básicamente poseen características que pueden definirse como homogéneas. La producción máxima permitida de esta denominación es de 80 quintales por hectárea, mientras que el rendimiento de las uvas en el vino nunca debe superar el 70%. El período mínimo de envejecimiento de este vino es de 24 meses, de los cuales al menos 12 en barricas de madera (generalmente roble). El contenido mínimo de alcohol es del 12%. En años particulares, con al menos 3 años de envejecimiento, se permite la calificación de "Reserva".




Los viñedos.

Una visión sorprendente: 850 hectáreas de viñedos, 2.500 km de muros de piedra seca , el lado rético de Valtellina es el área en terrazas más grande de Italia, rica en biodiversidad y variabilidad geológica, morfológica, climática y ambiental. Tanto por su exposición al sur como por las lluvias moderadas distribuidas de manera uniforme durante todo el año, es particularmente adecuado para la viticultura. El cultivo de viñedos en Valtellina se remonta a la antigüedad. Es el resultado de una selección de uvas Nebbiolo que inmediatamente después de la cosecha se colocan en bastidores en cuartos secos y bien ventilados, durante aproximadamente tres meses. Después del secado, las uvas han perdido el 40% de su peso, concentraron los jugos, desarrollaron fragancias aromáticas particulares y están listas para el prensado. Siga 20 meses de envejecimiento y envejecimiento en madera y botella y solo en este punto este rojo con un contenido mínimo de alcohol del 14% está listo para la degustación.

Origen.

Hay varias teorías sobre el origen del nombre de esta uva, una sería la palabra nebbia, que significa “niebla”, y hace referencia a la que se postra sobre las colinas de la región del Langhe, en el noroeste de Italia, durante el tiempo de la cosecha. Otra posibilidad sería por el velo lechoso, similar a la niebla, que crece sobre la piel de las uvas cuando alcanzan la madurez y, por último, es posible que derive de la palabra italiana nobile, que significa noble, por la nobleza de esta uva. Desde el punto de vista ampelográfico, el origen de la uva nebbiolo se sitúa en la región italiana de Piamonte, aunque otros autores la ubican en Lombardía. En el siglo I A.C., Plinio el Viejo describió la calidad excepcional del vino producido en Pollenzo, una región localizada al noroeste de lo que ahora es la zona DOCG de Barolo. Aunque Plinio no menciona explícitamente el nombre de la uva de la que se hacía el vino de Pollenzo, la descripción del vino guarda similitudes con las descripciones posteriores de los vinos basados en nebbiolo. Características.

Esta cepa es muy caprichosa, por decirlo de alguna forma. Tiende a madurar muy tarde, cuando el clima en la región empieza a ponerse difícil. Es muy susceptible a las plagas y podredumbre. En la bodega es delicada, muy propensa a la oxidación, la cual cambia su color, y puede perder sus aromas frutales. Se debe tener mucho cuidado en su manejo desde el viñedo hasta que llega a la botella, pero cuando todos estos factores convergen en una perfecta armonía, el resultado final puede ser excepcional.




Zonas de cultivo.

La uva nebbiolo no es tan viajera como la merlot o la chardonnay; es decir, no la encontramos por todo el mundo. Fuera de su natal Italia, sólo en alguna parte de California, como por ejemplo en Napa Valley, y en el Valle de Guadalupe, en México, podemos probar cierta cantidad de vinos hechos con esta uva.




Vinos.

Esta variedad es autóctona es utilizada para crear dos excelentes vinos principalmente: el Barolo y el Barbaresco. Ambos son tipos de vinos y denominaciones de origen al mismo tiempo, los cuales pueden ser considerados como los mejores vinos de toda Italia. Los vinos elaborados con la variedad nebbiolo pueden requerir años de envejecimiento para equilibrar el nivel de taninos con otras características. Así, la nebbiolo produce vinos tintos de color claro que pueden contar con mucha cantidad de taninos en su juventud. A medida que el vino envejece, desarrolla matices a piel de naranja en el borde de la copa y madura para revelar otros aromas y sabores, como a violetas, alquitrán, hierbas salvajes, cerezas, grosellas, trufas, tabaco y ciruelas pasas.
