El fútbol y el vino.

El popular jugador del Fútbol Club Barcelona y de la Selección Española, Andrés Iniesta, comienzó su proyecto vitivinícola en su población natal, Fuentealbilla (Albacete), con la adquisición de unos viñedos en la misma localidad, allá por el año 2010. Previamente, en los años 90, José Antonio Iniesta, inicia este proyecto con la plantación de 10 Ha de viñedo. El Consejo Regulador.

El Consejo Regulador de la Denominación de Origen “Manchuela”, constituido el 29 de julio de 2000, es una de las más recientes de Castilla-La Mancha. Comprende un amplio territorio que abarca 44 municipios del sureste de la provincia de Cuenca y 26 del noreste de la provincia de Albacete, en el que se cultivan 100.000 hectáreas de viñedo que producen vinos a granel en grandes cantidades. Sin embargo, desde hace diez años se ha reorientado la producción hacia una mejora de sus parámetros de calidad, a lo que obedece la creación del Consejo Regulador de la Denominación de Origen “Manchuela”, cuyo objetivo es establecer un rasgo de identidad propio para sus caldos y afianzar su reconocimiento en los mercados nacionales e internacionales.




La historia.

El primer reconocimiento de la Denominación de Origen “Manchuela” se realizó mediante una Orden Ministerial de 2 de marzo de 1966, al amparo del Estatuto del Vino de 1933. No obstante, la Ley 25/1970 estableció el requisito de revisión y de reordenación de las Denominaciones de Origen existentes, proceso que no llegó a culminarse en el caso de La Manchuela, perviviendo la asociación entre el nombre de esta comarca y sus vinos al amparo de la indicación geográfica “Vinos de la Tierra”. En 1997, un grupo de viticultores y bodegueros de esta comarca quisieron rehabilitar la antigua Denominación de Origen “Manchuela” e iniciaron el proceso administrativo necesario hasta que en julio de 2000 se constituyó legalmente la Denominación de Origen “Manchuela”, con el fin de situar los vinos amparados en un lugar relevante dentro del difícil mercado de los vinos de calidad. Actualmente, se encuentran inscritas en el Consejo Regulador 35 empresas, entre cooperativas, bodegas y embotelladoras, pertenecientes a 25 municipios de los 70 que abarca la comarca de La Manchuela, de manera que de las 100.000 hectáreas que se cultivan en toda la comarca, son ya 4.000 las hectáreas de viñedo protegidas bajo esta Denominación de Origen, repartidas prácticamente al 50% entre las dos provincias que abarca.




La geografía, el clima y el suelo.

La comarca de La Manchuela, situada en las faldas de las sierra que separan las provincias de Cuenca y Albacete de la vecina Comunidad Valenciana, enmarcada entre los valles de los ríos Júcar y Cabriel, se ve favorecida por unas condiciones edafoclimáticas muy particulares. Los viñedos, cultivados en una superficie aproximada de 72.000 hectáreas, se ubican a una altitud que va desde los 600 a los 1.100 metros sobre el nivel del mar y gozan de un clima continental influido por los vientos húmedos del Levante. Las altas temperaturas diurnas producidas por el viento de poniente y el frescor nocturno de la brisa mediterránea favorecen una maduración lenta y una perfecta formación de los polifenoles de la uva, aportando aroma y color, haciendo de esta comarca una zona vitícola especialmente adecuada para el cultivo de las variedades tintas. LA escasa humedad, la usencia casi total de lluvia entre los meses de mayo y septiembre, y la gran cantidad de horas de sol recibidas durante su maduración hacen que el riesgo de enfermedades sea ínfimo, y, por lo tanto, su calidad no se ve afectada por tratamientos fitosanitarios. Con los planes de reestructuración para la modernización del viñedo mediante ayudas europeas, se introdujeron nuevas variedades que sustituyeron, en gran parte, a las autóctonas de la zona, que son Bobal en variedad tinta y Macabeo en blanca. Las características del terreno, suelos desarrollados sobre sedimentos terciarios y cuaternarios y predominantemente arcillosos de base calcárea de los sedimentos de los ríos Júcar y Cabriel, recogen y mantienen el agua de lluvia que cae cuando aún no ha crecido la uva. junto al clima, de contrastes térmicos acusados, proporcionan a la zona un microclima y unas características especialmente propicias para el cultivo de la vid, como lo demuestra su larga tradición vitivinícola que siempre ha tenido un enorme peso en su economía, hasta el punto que son muchos los pequeños pueblos que viven enteramente del cultivo de la vid, siendo ésta su única fuente de ingresos.




Las uvas.

Aunque también se cultivan en esta comarca variedades blancas, por sus características climáticas es una zona especialmente privilegiada para el cultivo de uvas tintas, entre las que destaca la variedad autóctona Bobal, prácticamente exclusiva de esta región y con resultados extraordinarios para la elaboración de vinos rosados. Con un 70% de uva tinta y un 30% de blanca, las variedades amparadas por el Consejo Regulador son bobal, babernet sauvignon, cencibel o tempranillo, garnacha tinta, merlot, monastrell, moravia dulce, shyrah, garnacha tinotera, malbec, maoravia agria, mazuela, graciano, rojal tinta, frasco o tinto velasco, petit verdot, cabernet franc y pinot noir en variedad tinta, y albillo real, chardonnay, macabeo o viura, sauvignon blanc, verdejo, pardillo, viognier y moscatel de grano menudo.




Los vinos de bobal.

La variedad bobal es muy apropiada para la obtención de rosados, produciendo unos vinos brillantes de color fresa, con tonos vivos de buena intensidad aromática, con notas frutales y florales como la fresa, frambuesa, sandía, violetas, dando gran frescor en boca, delicado y con un largo recuerdo frutal. Cuando se introducen los racimos enteros para la fermentación maceración carbónica, se consiguen unos vinos de color cereza muy intenso, con ribetes violáceos con gran intensidad aromática, muy frutales y de gran calidad. Los vinos tintos son excelentes para envejecer, concentrados, carnosos y tánicos, de gran intensidad cromática y excelente acidez. Hasta hace no demasiado tiempo, se tenía la sospecha de que la tempranillo y la pinot noir estaban emparentadas, pero recientes investigaciones ampelográficas descartan casi al cien por ciento esa posibilidad. La vitis vinífera es, en España, el antecesor común a la mayoría de las vides cultivadas actualmente y fue introducido en la zona sur de la Península Ibérica por los fenicios. Posteriormente se extendió por toda España, aunque sólo existen algunas referencias al nombre tempranilla. En el siglo XII, en el Libro de Alexandre, se mencionan las uvas por el nombre “tempraniella” refiriéndose a zonas que hoy se encontrarían en la Ribera del Duero. Hasta el siglo XVII, esta variedad se cultivaba exclusivamente en la España continental, donde las condiciones climáticas del tercio norte de la península eran las más apropiadas para su desarrollo. En el siglo XVII los colonizadores españoles llevaron a América semillas de tempranillo, manteniéndose prácticamente inalterada genéticamente hasta la actualidad. La uva tempranillo está actualmente disfrutando de un “renacimiento” en la producción vinícola mundial, sobre todo como resultado de los esfuerzos de una "nueva ola" de cultivadores españoles, que mostraron que era posible producir vinos de gran carácter y calidad en zonas fuera de la región riojana.




Características.

La uva tempranillo es una variedad de ciclo corto con brotación en época media y maduración temprana, de buena fertilidad y alta producción que suele ser regular. Las cepas de esta variedad son vigorosas y de porte muy erguido. Producen racimos grandes, con hombros marcados, compactos, uniformes en el tamaño y en el color de las bayas, su pedúnculo es de tamaño medio y poco lignificado, excepto en la base. Las uvas tienen un tamaño entre mediano y grande, con epidermis muy oscura y tonalidades azuladas, esféricas y muy implantadas en su pedicelo lo que las hace de difícil desprendimiento. El hollejo es grueso y su pulpa, sin apenas pigmentación, es blanda, carnosa y muy jugosa. Esta variedad de uva también recibe el nombre de Cencibel, Temprana, Tinto fino, Tinta fina, Tinta de Toro, Tinta del Pais, Ull de llebre, Tinto Roriz Primerenc, Aranda, Argand, Chinchillana, Marinera, Santa Ana, Santiaguera, Ullada. Debido a su gran sensibilidad a las plagas y enfermedades, particularmente la filoxera que devastó las vides en el siglo XIX, y aún amenaza actualmente los viñedos, la tempranillo española ha sido a menudo injertada en portainjertos más resistentes, de lo que resulta un estilo de uva ligeramente diferente a aquellos hoy cultivados en Chile y Argentina. La uva tempranillo es muy regular en el cuajado, muy sensible a plagas y enfermedades, poco resistente a la sequía extrema y a las temperaturas altas. Variedad muy sensible a las enfermedades de la madera especialmente eutipiosis y complejo de la yesca. También es muy sensible al oídio, polilla del racimo, a los cicadélidos y a los ácaros, así como a las roturas por viento intenso si no están los sarmientos bien entutorados. Tiene una resistencia media al mildiu y al black rot. Soporta bastante bien los fríos de primavera ya que en este caso la brotación se retrasa. Poco sensible a la excoriosis. Tolera bien la sequía salvo si ésta es muy extrema. Responde bien a los aportes hídricos.




Zonas de cultivo.

A pesar de su aparente fragilidad, la tempranillo viajó ampliamente durante el último siglo, después de mucho ensayo y error, se ha establecido en un sorprendente número de países por todo el mundo. En España se encuentran viñedos de esta variedad en casi la totalidad del país, estando autorizada en 38 Denominaciones de Origen y considerada como variedad preferente en 14 de ellas. Se está adaptando muy bien en la viticultura de sudamérica. Durante la última década, han plantado tempranillo cultivadores de lugares tan lejanos como Australia, los Estados Unidos y Sudáfrica.




Vinos.

Los vinos de tempranillo suelen elaborarse en coupage, pero siendo muy mayoritariamente tempranillo, normalmente más del 90% de la mezcla. Se suelen aportar proporciones de otras variedades como garnacha, mazuela, graciano, merlot y cabernet Sauvignon, para aportarle azúcar y acidez. Los vinos de tempranillo tienen un carácter muy singular, con mucho cuerpo, acidez suave y taninos secos. Es una variedad que integra a la perfección con el roble, danto resultados espectaculares con su crianza en barricas de roble, tanto francés como americano, que aportan notas de vainilla y coco, frutas y sabores especiados.

Origen.

La variedad Petit Verdot es una uva tinta clásica para los ensamblaje de los vinos en la región de Burdeos. Su origen no es preciso, incluso se cree que su cultivo en la región es anterior al de la cabernet sauvignon. Sus características sugieren una procedencia de latitudes más cálidas que la zona de la Gironde. La petit verdot está emparentada con las cepas Tressot y Duras. Estas variedades pudieron haber sido introducidas por los romanos en su avance hacia el interior desde el Mediterráneo. Características.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia La uva petit verdot se desarrolla en cepas muy fértiles, medianamente vigorosas, porte semierguido y entrenudos muy cortos. Su brotación y maduración son tardías. Los racimos son reducidos de tamaño, poco compactos y con un pedicelo muy largo. Las bayas son pequeñas, esféricas, muy uniformes en todo el racimo, con piel oscura de color violeta, con una cicatriz estilar muy marcada, rodete grueso y pedicelos largos, de difícil desprendimiento. Su hollejo es grueso y su pulpa, sin pigmentación, es compacta, muy jugosa y con sabor que recuerda a las frambuesas. Al ser una uva de brotación temprana y maduración tardía, la viña petit verdot es sensible al clima helado de los comienzos de la primavera y del invierno, lo que dificulta su cultivo. Es una variedad muy rústica, con buena adaptabilidad a todo tipo de suelos y a la sequía, poco sensible al mildiu, al oídio y bastante resistente a la podredumbre gris. Es muy sensible a la polilla del racimo y a los ácaros y tiene elevados requerimientos en magnesio y fósforo, y bajas necesidades en nitrógeno y potasio.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia donde, debido a sus características climáticas, tienen ciertos problemas para la maduración, por lo que fue sustituida por otras variedades más adecuadas, pero hace algunos años se volvió a plantar en Burdeos. En España, donde fue introducida en 1991, en Ronda, por el enólogo Juan Manuel Vetas, se están obteniendo vinos muy interesantes por disponer de un mayor número de horas de insolación y una temperatura media más alta. Es variedad autorizada para las Comunidades autónomas de Andalucía, Castilla-La Mancha, Castilla y León, Extremadura, Región de Murcia y Comunidad Valenciana. También se encuentran plantaciones de viñedos de petit verdot en Australia, país que cuenta con la mayor extensión territorial de esta vid, Argentina y , Estados Unidos, específicamente California.




Vinos.

Las características organolépticas de los vinos de petit verdot se podrían caracterizar por una fase visual de color rojo violáceo, intenso, brillante, con aromas de frutos rojos, ciruelas y moras combinadas con una nariz más acaramelada, vainilla y moca, adquiridos en su crianza en barrica, por lo que presenta una gran complejidad aromática. En boca tiene un gran gran volumen, muy graso y carnoso con una acidez bien marcada. Los taninos son dulces y bien equilibrados con la dulzura de la fruta y de la madera. Sus aromas también se han comparado a las virutas del plátano y del lápiz. Adquiere fuertes tonos violáceos durante el proceso de maduración. Cuando la uva alcanza su plena madurez, produce vinos con mucho cuerpo con taninos cautivadores y ricos en color. Debido a esto, petit verdot ganó su fama como una uva de mezcla popular en los vinos de Burdeos, pero hoy solo juega un papel más pequeño en las mezclas.
