La tierra y el clima.

La tierra de la D.O. Penedès es amplia y abierta y se extiende a lo largo de una gran franja de territorio entre mar y montaña, a medio camino entre Barcelona y Tarragona. Dentro de este marco natural, los vinos provienen de las mejores viñas seleccionadas de la zona. En el corazón de la Depresión Prelitoral catalana, entre la Cordillera Prelitoral y las pequeñas llanuras de la costa mediterránea, maduran las viñas del Penedès. De su singularidad nace la diversidad de los vinos DO Penedès. Mil sabores y aromas son el fruto de las diferencias climáticas, paisajísticas y de la variedad de sus suelos, aquí tintados del verde de sus montes, allí del azul de las aguas mediterráneas. Tres zonas diferenciadas constituyen la D.O:
- El Penedès Superior, cercana a la Cordillera Prelitoral, Alt Penedès, Alt Camp, Anoia y Baix Llobregat, goza de precipitaciones más frecuentes y de mayor contraste entre temperaturas máximas y mínimas.
- El Penedès Marítimo, Baix Penedès y Garraf, junto al mar y en la Cordillera Litoral. Es más templada por la influencia y proximidad del mar.
- El Penedès Central, entre una y otra zona, fundamentalmente Alt Penedès, es el compendio de ambos microclimas.
Singularidad.




Variedades Blancas.

La DO Penedès, ampliamente reconocida por su calidad en los vinos blancos, combina una oferta de vinos elaborados con las variedades tradicionales (xarel·lo, macabeu y parellada) con otros que con los años se han introducido y aclimatado con éxito (chardonnay, riesling, sauvignon blanco...). Y con los vinos del xarel·lo como estandarte de la DO, los vinos del Penedès son todo aroma, sabor y calidad. Un placer para los sentidos. Los vinos blancos del Penedès ofrecen una riqueza aromática durante todo el período de juventud, entre el primer y segundo año. Con una textura suave y un buen equilibrio entre acidez y alcohol. Los elaboradores ofrecen también blancos de fermentación en barrica o de crianza que permiten descubrir otros extraordinarias sensaciones y evolucionar positivamente entre dos y cinco años. A la hora de acompañar las comidas, los blancos ligan con comidas suaves, preparados sin salsas, como pescado, marisco, ostras, huevos, platos fríos y quesos frescos o semisecos.




Variedades Tintas.

Fruto de la experimentación, de la constante innovación y de la recuperación de variedades propias que habían desaparecido y la atención a las nuevas tendencias de los paladares, la DO Penedès ofrece una amplia y exquisita gama de vinos tintos de calidad. Todo un lujo para los sentidos..Los vinos tintos del Penedès mejoran con el paso del tiempo si se mantienen en las condiciones apropiadas como por ejemplo con protección de la luz, olores y vibraciones, temperatura uniforme no superior a 15 °C. Según la cosecha y el tipo de uva, pueden evolucionar entre 4 y 5 años. En la mesa, para acompañar un reserva tinto o sencillamente un buen vino tinto DO Penedès, se recomiendan las carnes rojas y los asados​​. Para los vinos tintos aromáticos, la carne blanca y los quesos azules resultan de lo más adecuado y sugerente.




El xarel·lo.

El xarel·lo es el estandarte de la DO Penedès. Brillante, típico, gratificante... es la esencia del territorio. Una variedad, un vino, que se deja querer. El xarel·lo es la variedad de uva más cultivada en la DO Penedès y goza de una excelente adaptación a los terruños y climas de la zona. Es una planta rústica, con brotación temprana y crecimiento regular. Resistente a la sequía y al calor, tiene una producción muy equilibrada y cualitativa año tras año que se acentúa en las viñas viejas. Los vinos jóvenes son suaves, con un carácter sedoso pero con cuerpo, buena acidez, afrutados, aromáticos y con excelente graduación alcohólica. Los vinos de xarel·lo con vocación de crianza resultan consistentes, cálidos, largos, con final mineral y expresión marcadamente varietal, a través de la maceración de la piel, la fermentación en barricas o huevos de cemento, crianzas con las lías, etc.




El Consejo Regulador.

La Denominación de Origen ampara vinos blancos con graduaciones de 10 a 13 grados, vinos rosados entre 11 y 13 grados y vinos tintos entre 11 y 14, otros tipos no serán considerados Penedès. El Consejo Regulador marca el rendimiento de las viñas y las bodegas también tienen fijados unos límites de prensado. para supervisarlo, se ha desarrollado un cuerpo legal y una serie de controles, que se efectúan desde el propio Consejo Regulador. En definitiva, los vinos de Denominación de Origen suelen salir al mercado entre los dieciocho meses y los dos años, aunque esto no supone que haya productores que alarguen más todo el proceso, dependiendo de la calidad y el tipo de vino que quieran ofrecer. Desde el Consejo Regulador de la DO Penedès se controla todo el proceso de la uva, desde la viña hasta llegar a la copa, es decir, su trazabilidad. A través del mapa de suelos, se conocen las características de las parcelas plantadas de viña y el Consejo dispone de un registro de viticultores donde constan los datos de cada explotación vitícola. En el momento de la vendimia se controla la producción, el rendimiento de los viñedos y la cantidad de uva que se destinará a producir el vino calificado.

Origen.

La uva merlot, es una variedad de uva tinta de origen bordelés (Burdeos), al sudoeste de Francia que pertenece a la misma familia de los cabernet. Sus primeras plantaciones datan del siglo XIX. Es una cepa típica del Médoc Francés que, tras la Cabernet Sauvignon, es la segunda uva más plantada en el mundo, como consecuencia de que se aclimatan perfectamente a la mayoría de climas, tanto templados como cálidos. El 14% de las uvas plantadas en Francia son de esta variedad, mientras en Italia alcanza un 3%. La palabra merlot proviene de merle noir (palabra francesa), cuyo significado es mirlo. Su color es azul negruzco similar a la uva merlot.




Características.

La cepa de uva merlot bastante vigorosa, porte semierguido, buena fertilidad pero con poca producción, no se desarrollan muchos racimos por planta. Estos racimos son de tamaño medio a pequeño, con forma cónica alargada y no demasiado compacto. Las uvas merlot son pequeñas, muy uniforme a lo largo del racimo, esféricas, con un hollejo grueso, de color azul muy oscuro. Su pulpa es muy jugosa, consistente, sabrosa, dulce y despigmentada. El desborre es precoz y la maduración entre temprana y media, unos días después que el tempranillo. Si se vendimia antes se logran vinos más ácidos con lo que se aumenta su potencial para elaborar vinos de guarda. Si se retrasa su vendimia se obtienen vinos jugosos y frutales. Se adapta bien a suelos arcillosos y y ricos en calcio. La uva merlot también recibe el nombre de Alicante, Bigney Rouge, Crabutet noir, Merlau Rouge, Merlaut Noir, Merlo, Merlo Noir, Merlot Rouge, Planta de Médoc, Sème du flube, Sémilhon rouge, además de Vitraille. Variedad poco sensible a las enfermedades de la madera y a la desecación del raquis, aunque si es sensible al Mildiu y a la botritis en la maduración. Sensible al Black roth, y también a Cicadelidos y los Ácaros. Las heladas primaverales le afectan, aunque no excesivamente, pero su madera es muy sensible a los inviernos demasiado fríos. Se adapta muy bien a los distintos tipos de suelo. La cosecha con sequía es muy escasa, pero se suple bien con el riego por goteo. Sensible al corrimiento del racimo como consecuencia de la climatología lo que se puede corregir aportando boro. Requiere climas frescos, ya que en climas calurosos pierde pronto su acidez y su equilibrio tánico. Es fundamental realizar un adecuado abonado potásico., Se aconseja la conducción en espaldera, para el apoyo de su vegetación funcionando muy bien con poda de Guyot de siete u ocho yemas.




Zonas de cultivo.

La mayor presencia de la uva merlot se da en Italia y también Francia, en la región del Médoc. En España podemos encontrarla en Navarra y también en Cataluña, La Mancha, Huesca y se está empezando a plantar en Andalucia. También se localizan viñedos de merlot en la península balcánica, en Bulgaria, Croacia, Eslovenia, Montenegro, además de Rumania. Fuera de Europa existen plantaciones de esta variedad en California y región nordeste de Estados Unidos, Argentina, Nueva Zelanda, Sudáfrica, Chile y Australia.




Vinos.

Produce vinos redondos con cuerpo y estructurados. Vinos intensos de buena graduación alcohólica, que agradecen la crianza en madera. Son vinos con pocos taninos y acidez ligera, por lo tanto, se pueden mezclar con vinos más tánicos para aportarles así equilibrio. Origen.

La variedad Petit Verdot es una uva tinta clásica para los ensamblaje de los vinos en la región de Burdeos. Características.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia La uva petit verdot se desarrolla en cepas muy fértiles, medianamente vigorosas, porte semierguido y entrenudos muy cortos. Su brotación y maduración son tardías. Los racimos son reducidos de tamaño, poco compactos y con un pedicelo muy largo. Las bayas son pequeñas, esféricas, muy uniformes en todo el racimo, con piel oscura de color violeta, con una cicatriz estilar muy marcada, rodete grueso y pedicelos largos, de difícil desprendimiento. Su hollejo es grueso y su pulpa, sin pigmentación, es compacta, muy jugosa y con sabor que recuerda a las frambuesas. Al ser una uva de brotación temprana y maduración tardía, la viña petit verdot es sensible al clima helado de los comienzos de la primavera y del invierno, lo que dificulta su cultivo. Es una variedad muy rústica, con buena adaptabilidad a todo tipo de suelos y a la sequía, poco sensible al mildiu, al oídio y bastante resistente a la podredumbre gris. Es muy sensible a la polilla del racimo y a los ácaros y tiene elevados requerimientos en magnesio y fósforo, y bajas necesidades en nitrógeno y potasio.




Zonas de cultivo.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia donde, debido a sus características climáticas, tienen ciertos problemas para la maduración, por lo que fue sustituida por otras variedades más adecuadas, pero hace algunos años se volvió a plantar en Burdeos. En España, donde fue introducida en 1991, en Ronda, por el enólogo Juan Manuel Vetas, se están obteniendo vinos muy interesantes por disponer de un mayor número de horas de insolación y una temperatura media más alta. Es variedad autorizada para las Comunidades autónomas de Andalucía, Castilla-La Mancha, Castilla y León, Extremadura, Región de Murcia y Comunidad Valenciana. Vinos.

Las características organolépticas de los vinos de petit verdot se podrían caracterizar por una fase visual de color rojo violáceo, intenso, brillante, con aromas de frutos rojos, ciruelas y moras combinadas con una nariz más acaramelada, vainilla y moca, adquiridos en su crianza en barrica, por lo que presenta una gran complejidad aromática. En boca tiene un gran gran volumen, muy graso y carnoso con una acidez bien marcada. Los taninos son dulces y bien equilibrados con la dulzura de la fruta y de la madera. Sus aromas también se han comparado a las virutas del plátano y del lápiz. Adquiere fuertes tonos violáceos durante el proceso de maduración. Cuando la uva alcanza su plena madurez, produce vinos con mucho cuerpo con taninos cautivadores y ricos en color. Debido a esto, petit verdot ganó su fama como una uva de mezcla popular en los vinos de Burdeos, pero hoy solo juega un papel más pequeño en las mezclas.
