Territorio y sus denominaciones.

El territorio de Barolo y sus regulaciones de producción se establecieron con DOC, Denominación de Origen Controlada para los vinos de Barolo, en 1966 y se le otorgó el estatus de DOCG en 1980 e incluye 11 municipios: Barolo, Monforte d'Alba, Castiglione Falletto, Serralunga d'Alba, La Morra, Grinzane Cavour, Diano d'Alba, Novello, Verduno, Cherasco y Roddi. En 1994 la familia Antinori se hizo con Prunotto, una de las bodegas históricas del Piamonte. Equidistante entre Barbaresco y Barolo, la bodega se ubica en Alba, uno de los pueblos más destacados de la región del Langhe.

Historia del Piamonte.

En el año 1904, se funda la bodega cooperativa “Ai vini delle Langhe”, siendo testigo un chico joven llamado Alfred Prunotto. Este será un momento histórico ya que inicia la trayectoria de una de las bodegas más longevas del Piamonte. La primera vendimia tuvo lugar en el año 1905 pero en posteriores años y a raíz de la Primera Guerra Mundial, la cooperativa vivió momentos muy difíciles. De hecho en 1922, muchos de sus miembros decidieron no aportar uvas y la cooperativa fue finalmente liquidada. Durante ese periodo de crisis, Alfredo Prunotto decide casarse y tomar el control de la cooperativa. Gracias a la perseverancia de la pareja de recién casada, la bodega comenzó a cosechar éxitos. Sus vinos viajaban principalmente a Sudamérica y Estados Unidos. Fueron de hecho unos adelantados para su época, apostando claramente por el Nuevo Mundo como principal mercado.

La retirada de Prunotto.

En 1956 Alfredo Prunotto se retira del negocio, entregan la bodega a su amigo y experto en vino Beppe Colla. A partir de 1961 en Prunotto se ponen a la tarea de identificar zonas y parcelas específicas para el cultivo de uvas de calidad suprema. Parcelas muy concretas que acabarían posicionándose como Crus, como por ejemplo Barolo Bussia and Barbera d'Alba Pian Romualdo. En 1989 la familia del Marqués de Antinori comienza su colaboración con Prunotto, primero encargándose de la distribución de sus vinos y posteriormente en 1994, involucrándose directamente en el proceso de elaboración y manteniendo el gran nivel de calidad en el que Alfredo Prunotto siempre había insistido.

La DOCG Barolo es el sello que garantiza la calidad de un vino italiano, que se obtiene de la fermentación de uvas nebbiolo en sus variedades lampia, michet o rosé, y es, a menudo, descrito como uno de los grandes vinos de ese país. Enología.

La guerra del barolo.

En el pasado los barolos solían ser muy ricos en taninos. Podían necesitarse más de 10 años para que el vino se suavizara y quedara listo para beber. La fermentación del vino se obtiene de las pieles de la uva durante al menos tres semanas, extrayendo grandes cantidades de taninos y luego es criado en grandes barricas de madera durante años. Origen.

Hay varias teorías sobre el origen del nombre de esta uva, una sería la palabra nebbia, que significa “niebla”, y hace referencia a la que se postra sobre las colinas de la región del Langhe, en el noroeste de Italia, durante el tiempo de la cosecha. Otra posibilidad sería por el velo lechoso, similar a la niebla, que crece sobre la piel de las uvas cuando alcanzan la madurez y, por último, es posible que derive de la palabra italiana nobile, que significa noble, por la nobleza de esta uva. Desde el punto de vista ampelográfico, el origen de la uva nebbiolo se sitúa en la región italiana de Piamonte, aunque otros autores la ubican en Lombardía. En el siglo I A.C., Plinio el Viejo describió la calidad excepcional del vino producido en Pollenzo, una región localizada al noroeste de lo que ahora es la zona DOCG de Barolo. Características.

Esta cepa es muy caprichosa, por decirlo de alguna forma. Tiende a madurar muy tarde, cuando el clima en la región empieza a ponerse difícil. Es muy susceptible a las plagas y podredumbre. En la bodega es delicada, muy propensa a la oxidación, la cual cambia su color, y puede perder sus aromas frutales. Se debe tener mucho cuidado en su manejo desde el viñedo hasta que llega a la botella, pero cuando todos estos factores convergen en una perfecta armonía, el resultado final puede ser excepcional.

Zonas de cultivo.

La uva nebbiolo no es tan viajera como la merlot o la chardonnay; es decir, no la encontramos por todo el mundo. Fuera de su natal Italia, sólo en alguna parte de California, como por ejemplo en Napa Valley, y en el Valle de Guadalupe, en México, podemos probar cierta cantidad de vinos hechos con esta uva.

Vinos.

Esta variedad es autóctona es utilizada para crear dos excelentes vinos principalmente: el Barolo y el Barbaresco. Ambos son tipos de vinos y denominaciones de origen al mismo tiempo, los cuales pueden ser considerados como los mejores vinos de toda Italia. Los vinos elaborados con la variedad nebbiolo pueden requerir años de envejecimiento para equilibrar el nivel de taninos con otras características. Así, la nebbiolo produce vinos tintos de color claro que pueden contar con mucha cantidad de taninos en su juventud. A medida que el vino envejece, desarrolla matices a piel de naranja en el borde de la copa y madura para revelar otros aromas y sabores, como a violetas, alquitrán, hierbas salvajes, cerezas, grosellas, trufas, tabaco y ciruelas pasas.
