Historia.

HISTORIA
Agustín Huneeus fue pionero al plantar en el valle de Casablanca 40 hectáreas de Sauvignon Blanc. Su visión fue más allá al inaugurar en 1998 la primera bodega del valle, cuya arquitectura contempla un hall central con 16 metros de altura. Cumplía así su sueño de crear una bodega al estilo del valle de Napa, un espacio de reunión para ofrecer una diversidad de experiencias en torno al vino. Hoy ese hall alberga ambientes únicos en Chile: una barra de degustación de siete metros, una tienda de vinos nacionales e internacionales, Café con productos de la huerta, y un exclusivo salón para socios, todo pensado en crear un espacio para compartir y vivir el vino desde la parra hasta la botella. Casona Veramonte es el lugar que da comienzo a la historia de Veramonte, Ritual, Primus y Neyen.

Viñedos.

Nuestros viñedos orgánicos se ubican en dos de las más reconocidas apelaciones de Chile; Casablanca, perfecta para vinos blancos y de clima frío; y, Colchagua para nuestros tintos. Seguimos prácticas orgánicas y sustentables porque creemos que es la única forma de tener viñedos sanos y expresivos, que trasciendan en el tiempo y entreguen fruta pura y vinos que reflejen los suelos vivos de donde provienen.
- Valle de Casa Blanca.
Viñedos Veramonte está situado al inicio Del Valle de Casablanca, a los pies de la Cordillera de la Costa. Los viñedos están rodeados por 2.500 hectáreas de bosques nativos, reciben las brisas y nieblas matutinas que soplan desde el océano Pacífico, las hacen que se moderen las temperaturas y se den las condiciones ideales para cultivo de variedades blancas (Sauvignon Blanc y Chardonnay) y tintos de clima frío (Pinot Noir, Merlot y Syrah).
- Valle de Colchagua.
Viñedos Veramonte está en Marchigüe, un sector del Valle que está sólo a 45 kilómetros de la costa del Pacífico. La propiedad destaca por la combinación de suelos bien drenados, con textura franco arcillosa y material rocoso que ofrecen condiciones ideales para el cultivo de variedades como el Carménère y Cabernet Sauvignon.

El Valle Central es una de las seis regiones vitícolas de Chile oficialmente identificadas como tales según lo dispuesto por el Decreto de Agricultura nº 464 de 14 de diciembre de 1994, que establece la zonificación vitícola del país y fija las normas para su utilización como denominaciones de origen. Los vinos chilenos con ésta denominación de origen deben ser elaborados al menos con un 75% de uvas procedentes de la región. Las subregiones vitícolas del Valle Central se extiende desde la provincia administrativa de Chacabuco, en la Región Metropolitana de Santiago, hasta las provincias administrativas de Cauquenes y Linares, en la Región del Maule. Esta región vitícola posee cuatro subregiones vitícolas: Valle del Maipo, Valle del Rapel. Valle de Curicó, Valle del Maule.

Zonas vinícolas.

Las dos caras de una zona vinícola apasionante, con una industria vitivinícola desarrollada en los últimos 30 años que hoy se encuentra entre las zonas de mayor prestigio en la producción de vinos, en su mayoría fruto del ensamblaje de variedades como cabernet sauvignon, la más plantada, caménère, el toque personal de Chile, merlot, malbec o syrah y que ha sabido descubrir el potencial turístico que ofrece su bella geografía de suaves colinas con interminables hileras de viñedo en espaldera muy cerca de la capital. De acuerdo al Catastro Frutícola Nacional 20153​ y al Catastro Vitícola Nacional del año 2014, la región vitícola Valle Central comprende las regiones Metropolitana de Santiago, O'Higgins y del Maule, las que en su conjunto poseen 135.631,98.- ha, de las cuales 21.354,70.- ha corresponden a cultivos de uva de mesa, es decir corresponde al 16%. Más al sur de esta región vitícola no hay cultivos de uva de mesa. La región vitícola del Valle Central concentra el 78% del total de viñas destinadas a la producción vitícola con un total de 144.277,28.- ha, de las cuales hay 23.290,39.- ha, de variedades blancas y 90.986,89.- ha de variedades tintas. Las variedades de uva blancas cuentan con una superficie cultivada en esta región vinícola de 23.290.39.- ha, esto es el 20% de la superficie de viñas destinada a estas variedades. Las variedades blancas que se cultivan actualmente en la región vitícola del Valle Central, son: Albariño, Albilla, Blanca ovoide, Chardonnay, Chasselas, Chenin Blanc, Cristal, Gewürztraminer, Marsanne, Moscatel amarilla, Moscatel de Alejandría, Mocatel rosada (o pastilla), Moscatel negra, Pedro Jiménez, Pinot blanc, Pinot gris, Riesling, Roussanne, Sauvignon Blanc, Sauvignon gris, Sauvignon vert, Semillón, Torontel, Verdejo, Torontel, Viognier. Entre las variedades de la región vitícola Valle Central, las regiones administrativas que corresponden a esta división vitícola, declararon para el año 2015 una producción de 95.466.837.- litros de producción netamente vinífera. Esta región vitícola en su conjunto concentra el 82.4% de la producción nacional. La mayor parte de la producción corresponde a vino tinto con 49.874.247.- litros, es decir el 83,6% de la producción nacional de vinos sobre la base de variedades viníferas. Mientras que hay 9.266.954.- litros de vino blanco producido con variedades viníferas, lo que significa el 55% de la producción nacional. Esta región vitícola produce 32.797.322.- litros de mosto tinto, que significa el 89.8% de la producción nacional y 1.011.611.- litros de mosto blanco que es el 48,3% de la producción nacional de mosto blanco sobre la base de variedades viníferas. La mayor parte de la producción corresponde a vinos, con 33.718.799 de vino tinto y 19.398.538 litros de vino blanco. Esto indica que esta región vitícola produce el 99.7% del total del vino tinto de mesa y el 99.5% de los vinos blancos de mesa producidos en Chile. Existe además el dato que esta región vitícola y en especial en las regiones de O'Higgins y Maule, la producción de chicha alcanzó a 9.950.- litros que corresponde solo al 8,7% de la producción nacional, siendo las regiones más australes donde se produce este producto. Indicar también, que en esta región vitícola, se produce una gran cantidad de mosto tinto de mesa, unos 53.052.797.- litros, es decir 99.7% del total nacional. Y también se producen unos 1.784.121.- litros de mosto blanco de mesa que representa el 29,8% del total nacional.

Origen.

La uva merlot, es una variedad de uva tinta de origen bordelés (Burdeos), al sudoeste de Francia que pertenece a la misma familia de los cabernet. Sus primeras plantaciones datan del siglo XIX. Es una cepa típica del Médoc Francés que, tras la Cabernet Sauvignon, es la segunda uva más plantada en el mundo, como consecuencia de que se aclimatan perfectamente a la mayoría de climas, tanto templados como cálidos. El 14% de las uvas plantadas en Francia son de esta variedad, mientras en Italia alcanza un 3%. La palabra merlot proviene de merle noir (palabra francesa), cuyo significado es mirlo. Su color es azul negruzco similar a la uva merlot.

Características.

La cepa de uva merlot bastante vigorosa, porte semierguido, buena fertilidad pero con poca producción, no se desarrollan muchos racimos por planta. Estos racimos son de tamaño medio a pequeño, con forma cónica alargada y no demasiado compacto. Las uvas merlot son pequeñas, muy uniforme a lo largo del racimo, esféricas, con un hollejo grueso, de color azul muy oscuro. Su pulpa es muy jugosa, consistente, sabrosa, dulce y despigmentada. El desborre es precoz y la maduración entre temprana y media, unos días después que el tempranillo. Si se vendimia antes se logran vinos más ácidos con lo que se aumenta su potencial para elaborar vinos de guarda. Si se retrasa su vendimia se obtienen vinos jugosos y frutales. Se adapta bien a suelos arcillosos y y ricos en calcio. La uva merlot también recibe el nombre de Alicante, Bigney Rouge, Crabutet noir, Merlau Rouge, Merlaut Noir, Merlo, Merlo Noir, Merlot Rouge, Planta de Médoc, Sème du flube, Sémilhon rouge, además de Vitraille. Variedad poco sensible a las enfermedades de la madera y a la desecación del raquis, aunque si es sensible al Mildiu y a la botritis en la maduración. Sensible al Black roth, y también a Cicadelidos y los Ácaros. Las heladas primaverales le afectan, aunque no excesivamente, pero su madera es muy sensible a los inviernos demasiado fríos. Se adapta muy bien a los distintos tipos de suelo. La cosecha con sequía es muy escasa, pero se suple bien con el riego por goteo. Sensible al corrimiento del racimo como consecuencia de la climatología lo que se puede corregir aportando boro. Requiere climas frescos, ya que en climas calurosos pierde pronto su acidez y su equilibrio tánico. Es fundamental realizar un adecuado abonado potásico., Se aconseja la conducción en espaldera, para el apoyo de su vegetación funcionando muy bien con poda de Guyot de siete u ocho yemas.

Zonas de cultivo.

La mayor presencia de la uva merlot se da en Italia y también Francia, en la región del Médoc. En España podemos encontrarla en Navarra y también en Cataluña, La Mancha, Huesca y se está empezando a plantar en Andalucia. También se localizan viñedos de merlot en la península balcánica, en Bulgaria, Croacia, Eslovenia, Montenegro, además de Rumania. Fuera de Europa existen plantaciones de esta variedad en California y región nordeste de Estados Unidos, Argentina, Nueva Zelanda, Sudáfrica, Chile y Australia.

Vinos.

Produce vinos redondos con cuerpo y estructurados. Vinos intensos de buena graduación alcohólica, que agradecen la crianza en madera. Son vinos con pocos taninos y acidez ligera, por lo tanto, se pueden mezclar con vinos más tánicos para aportarles así equilibrio. Es un vino más suave y también más redondo que el Cabernet Sauvignon. Aromas complejos, además de elegantes. Aromas a frutas rojas como cereza, ciruela. Especias, tabaco y también trufa. Los vinos más jóvenes poseen un aroma a frutas rojas, como la confitura bayas, cassis y notas vegetales. Origen.

Hasta hace no demasiado tiempo el origen de esta uva no estaba claro, existiendo muchos mitos y conjeturas. Se hablaba del origen de Sauvignon como derivada del francés sauvage, que significa salvaje, y podría hacer referencia a tratarse de una viña silvestre nativa de Francia. Otra teoría era que la uva tenía orígenes antiguos y que quizás había sido la uva bitúrica, usada para hacer el antiguo vino romano al que hizo referencia Plinio el Viejo. Otra teoría sostiene que la uva se originó en la región española de la Rioja. Los verdaderos orígenes de esta variedad se descubrieron en 1996 al estudiarse genéticamente en el Departamento de Viticultura y Enología la Universidad de California en Davis, con un equipo liderado por Carole Meredith. Estos estudios determinaron que la cabernet Sauvignon fue el resultado de la mezcla de dos tipos de uva en Francia: Cabernet Franc y Sauvignon Blanc, aunque se supone que esta mezcla fue producida siglos anteriores a su nacimiento, alrededor del siglo XVII ya que lo más común en Burdeos era recoger todas las variedades de uva en una sola.

Características.

La clave de su éxito es que se trata de una variedad de fácil cultivo. Por ello, se adapta a una gran variedad de suelos, climas y latitudes. De hecho, desde Francia, la uva se ha extendido por Europa y por América. Es una variedad vigorosa, de brotación medio-tardía, cuyas cepas presentan un pámpano de porte erguido ramificadas, con muchas racimas, de desborre tardío y maduración de media estación.Los racimos son muy pequeños, de forma cónica, compacidad media y con tamaño de bayas muy uniforme que se desprenden con facilidad cuando están maduras. Pedúnculo corto y poco lignificado. Ocasionalmente alados. Las uvas son pequeñas, esféricas, su piel es muy oscura, azulada, con mucha pruina, la pulpa es dura y jugosa, ligeramente pigmentada cuando madura y sin pigmentación en las primeras fases del enverado, cpm sabor herrbáceo intenso y con fuerte sensación astringente. Su hollejo muy grueso. A la cabernet sauvignon se le conoce también por otros nombres como Vidure, Bidure, Burdeos, Carbouet. Es una variedad sensible a la eutipiosis, al mildiu, al oídio, a los cicadelidos y a los acaros. Resiste bastante bien al complejo de hongos de la madera, a la excoriosis y sobre todo a la botritis, así como a la podredumbre. En épocas de sequía intensa su maduración se complica, evolucionando de manera deficiente. Se adapta bastante bien a cualquier tipo de suelo, aunuque los mejores resultados se obtienen en terrenos de grava, sin exceso de agua, algo ácidos y bien expuestos. Es bastantes sensible a la carencia de magnesio, que se asocia a la desecación del raquis de los racimos. Resiste bastante bien los fríos primaverales y los vientos. Apenas se ve afectada por corrimientos de racimo. Despuntes precoces inducen la aparición de muchos hijuelos y abundantes racimas, por lo que su calidad se deteriora. Requiere podas largas y en guyot para su adecuada producción. El rendimiento de esta variedad está comprendido entre 2-14 toneladas por Ha, dependiendo del vigor de la viña.

Zonas de cultivo.

Es una planta de viña de uvas de vino tinto muy extendida en todo el mundo. Actualmente la uva Cabernet Sauvignon se cultiva en Francia, España, Italia, Chile, California, Australia y Argentina principalmente. A nivel mundial, la superficie que ocupa el cabernet sauvignon es de 341,000 Ha. Es la segunda variedad tinta más plantada (2015), después de la variedad china Kyoho (uva de mesa), ocupando la décima posición en el ranking mundial de variedades de vid plantadas. Las superficie de cabernet Sauvignon supone el 4% de la total de viñedos en el mundo.

Vinos.

El estilo de la cabernet sauvignon está muy influenciado por la madurez de las uvas en el momento de la cosecha. Mientras menos maduras están, mayor es su contenido de pirazinas y pueden exhibir sabores pronunciados a pimiento verde y a vegetales. Cuando es cosechada demasiado madura, los vinos pueden tomar sabores amermelados y pueden tener aromas a grosellas negras guisadas. Algunos viticultores escogen cosechan sus uvas en diferentes niveles de madurez para incorporar diferentes elementos y añadirle más complejidad al vino. El prensado de la uva cabernet Sauvignon produce un zumo oscuro, intenso y muy vivo, austero y tánico. Cuando el vino de cabernet sauvignon es joven normalmente exhibe un fuerte sabor a cerezas negras y a ciruela, aromas a grosella, pimineto verde y también en ocasiones notas de menta y aceitunas recién recolectadas o monte bajo y hierbas aromáticas. Posee un hollejo muy grueso del que se extraen muchos taninos dulces lo que permite su largo envejecimiento. Si la madera es suave, da vinos de textura y fineza muy agradables, con aromas a chocolates, a tabaco y en parte a mina de lápiz, pero conservando su característico aroma a grosella y en ocasiones a pimiento. El vino monovarietal puede carecer de suavidad y redondez, por eso se utiliza mucho con coupages con otras variedades como merlot o syrah. Son muy aptos para el envejecimiento, pudiendo elaborarse extraordinarios vinos de guarda.
