Origen.

No hay unanimidad sobre el origen de la uva shirah. Características.

Las cepas de la variedad syrah son muy vigorosas, de porte erguido o semierguido con sarmientos muy largos, delgados, delicados y con muchos hijuelos. Su desborre es de media estación a tardío y maduración precoz. Los racimos de la variedad syrah son de tamaño medio, compactos cilíndrico-alargados, con pedúnculo largo y poco lignificado. La pulpa no tiene pigmentación, es consistente y de jugosidad limitada. La uva syrah también es conocida como como shiraz, sirah, sérine, candive, hignin, sirac, syra, biaune, balsamia. Es una variedad que se adapta bien a todo tipo de suelos, siempre que no tengan excesos de humedad. El viento produce bastantes daños en esta cepa si sus sarmientos no están bien tutorados y sujetos, se recomienda utilizar espalderas altas. Es muy sensible a la eutipiosis, a la sequía y a la clorosis férrica, así como a los ácaros. Sensible al mildiu y al black rot, a la polilla del racimo, a la fitotoxicidad por herbicidas, especialmente al diurón. Es poco sensible al oídio al principio de su brotación, pero su sensibilidad aumenta a partir de la cierna. Tolera bastante bien la botritis, pero cuando la maduración es excesiva puede verse afectada por ella. No suele verse afectada por corrimiento de racimo. No es una cepa que requiera de altos niveles de magnesio pero sí de nitrógeno, fósforo y potasio. Sus injertos deben hacerse sobre portainjertos que resistan bien la clorosis férrica. Se puede realizar la poda en pulgares cortos o en Guyot y se desaconseja despuntarla.




Zonas de cultivo.

Hoy en día podemos encontrar la variedad syrah en toda Europa, pero también en Australia, Argentina, Chile, Sudáfrica y California. En España el cultivo de la variedad syrah se extiende prácticamente por toda su geografía, siendo recomendada su plantación en las Denominaciones de Origen en Cataluña, Extremadura, Comunidad Valenciana, Andalucía, Aragón, Asturias, Baleares, Canarias, Cantabria, Castilla-La Mancha, Comunidad de Madrid, Navarra, Murcia, viña syrah.




Vinos.

La uva shyrah produce vinos de buena calidad, amables y sabrosos, con un alto grado alcohólico. Los tintos shyrah tienen mucho color y cuerpo, por tener gran cantidad de extracto seco. Son opulentos, vigorosos, potentes, de textura sedosa, con cuerpo, gran cantidad de taninos y materias colorantes, un característico aroma a violeta y cassis, y ligeros toques ahumados. Tienen una gran capacidad de envejecimiento donde mantienen bastante bien su color y no adquieren exceso aroma a madera, aunque sí tienen toques de cuero, alquitrán y ahumado, y ligeramente a vainilla. Es un vino con una capa oscura muy cubierta, con intensidad, aromático, un vino que ha adquirido mucha fama a nivel mundial. En nariz aromas a fruta madura, recordando a las grosellas, las violetas, las moras silvestres y a las frambuesas, manteniendo aromas a pimiento o canela y clavo. El color es intenso, refinado, sólido y austero, especiado y de acidez destacable.El vino syrah se utiliza mucho en coupages con Cabernet Sauvignon y Merlot.

Origen.

La variedad pinot negro, o más conocida con el nombre en francés pinot noir, pertenece a la familia de las uvas pinot y, aunque no está muy claro el origen de la variedad, se piensa que la pinot noir fue la primera de la familia de las pinot, y una de las primeras variedades obtenidas a partir de viñas silvestres en la parte occidental de Europa Central. A la región del Lago de Constanza llegó alrededor del año 900. En la región de Rheingau comenzó a cultivarse en el siglo XIII. Los perfiles de ADN de la pinot gris y la pinot blanc son idénticos a los de la pinot noir, así que parece claro que se derivan de ella. A pesar de tener un hollejo grueso, es muy sensible al agrietado y a los roces. La pulpa es antociánica, poco o nada pigmentada, blanda y muy jugosa con sabor herbáceo. ES una variedad muy delicada en su cultivo, ya que es muy sensible a las enfermedades fúngicas de la madera a la botritis y al desecado del raspón. Es sensible al mildiu, al oídio y al corrimiento climático, así como a la polilla del racimo, a los cicadélidos y a los ácaros. Se adapta bien a climas templados y a todo tipo de suelos, siempre que tengan buen drenaje, aunque lo ideal sería elegir suelos argilocalcáreos. Es sensible a los fríos primaverales y muy sensible a temperaturas excesivas en verano, ya que se solean sus racimos y pierde muy pronto sus hojas. En climas cálidos madura muy rápidamente y es sensible a las quemaduras solares del fruto. Tiene altas necesidades de magnesio, respondiendo muy bien a los aportes de fósforo y tiene bajos requerimientos en nitrogeno y potasio. La variedad pinot noir recibe también el nombre de Spätburgunder, burgunder, pineau, klevner, plant fin, noirien, pinoz y dorada.




Zonas de cultivo.

La pinot noir es originaria del viñedo de Borgoña, concretamente de la región de Côte-d'Or. También se planta en Italia, España, Alemania, Luxemburgo, Hungría, Kosovo, la Macedonia del Norte, Moldavia, Grecia, Rumanía, Serbia, Eslovenia, Suiza, Bulgaria, República Checa, Eslovaquia, Ucrania, el norte de Croacia, la República de Georgia, Israel, Chile, Argentina, Uruguay, México y Estados Unidos. En Alemania se cultivan unas 11.800 hectáreas de pinot noir, conocida como spätburgunder, lo que representa más del diez por ciento del total de las parras en el país. La mayoría de los viñedos de pinot noir se hallan en Baden (casi 5.900 hectáreas) y en el Palatinado (casi 1.600 hectáreas). Vinos.

La variedad pinot noir produce mostos con mucho azúcar, siempre que la uva haya tenido una maduración correcta. Estos mostos, de acidez media, recien prensados son incoloros, pero si se mantienen en contacto con los hollejos, rápidamente toman un color primero rosa intenso y posteriormente rojo rubí intenso muy brillante aunque con reflejos marronáceos, por ello pueden dar vinos blancos por sangrado o escurrido rápido y tintos en elaboraciones habituales. Produce un vino de alta calidad apto para crianza, fino, con intensidad y complejo. Es una variedad adecuada para cavas, champagne y vinos de aguja y también para vinos de crianza con cuerpo y vigor, con alta complejidad aromática. El gran rango de buqués, sabores, texturas e impresiones que produce el pinot noir a veces confunde a los que lo prueban. Grosso modo, sus vinos tienden a tener un cuerpo de ligero a medio, con reminiscencias aromáticas a cereza, frambuesa y, en menor medida, grosella, y a otras pequeñas frutas rojas y negras. Tradicionalmente, el tinto de Borgoña de esta variedad es famoso por su sabrosa intensidad, aromas "granjeros" (característica asociada con el tiol y con otros compuestos), pero con el cambio de las modas, las técnicas de vinificación y con clones más modernos y fáciles de cultivar se ha favorecido un vino con más sabores a frutas y con un estilo más limpio.

Origen.

La nero d'Avola es una variedad de uva tinta de vitis vinífera que, con toda probabilidad, fue llevada a Sicilia por los Fenicios, siendo allí la variedad de uva más importante y de mayor calidad, además de una de las variedades con mejor calidad de Italia. Los análisis ampelográficos de la variedad indican que, genéticamente, procede de una uva griega hibridada con alguna casta salvaje autóctona siciliana. Su nombre significa Negra de Avola que es una pequeña localidad situada en el sur de Sicilia. También es conocida como Calabrese y, según parece, este nombre no procede de Calabria, sino que es una derivación del nombre de Cala de Vrisi (Avola). La traducción literal del nombre será uva negra dÁvola. Es la variedad estelar siciliana, hasta convertirse en uno de los símbolos de su enología, porque abarca cada rincón de la isla.




Características.

La variedad nero d’Avola es una uva de difícil maduración, sobre todo en el este de la isla, que necesita mucho calor y terrenos arenosos para expresar toda su paleta olfativa, con el riesgo siempre de que puedan destacar de forma agresiva las notas animales y terciarias y potenciarse la rusticidad que lleva consigo. En los terrenos más calcáreos y zonas menos calurosas, en algunas ocasiones, la parte placentera de la variedad puede resultar dañada por sensaciones más animales y terciarias y menos refinadas, más opulentas. Esa es una de las causas por las cuales se ensambla, para refinar el vino y hacerlo más suave sin que pierda su enorme personalidad, con castas francesas como cabernet sauvignon, merlot y syrah (sobre todo esta última) que suponen un riesgo porque en estas latitudes se acentúan de forma notable las notas vegetales, de sobremaduración y que terminan por resaltar los aspectos más agresivos, verdes y pastosos. Las vides se adaptan muy bien a climas cálidos y relativamente secos, justo las condiciones de Sicilia. Su maduración es complicada, necesitando mucho calor y terrenos arenosos para desarrollar todo su potencial. La planta es bastante resistente a las enfermedades, los racimos son medios poco compactos, de grano medio y hollejo grueso.




Zonas de cultivo.

La nero d'Avola es la variedad tinta más representativa del viñedo siciliano, y la más conocida en el mundo, con más de 18.000 hectáreas plantadas, siendo la segunda más cultivada de la isla, sólo detrás de la catarratto blanca. Desde Sicilia esta uva se ha extendido también a California, Australia, Malta, Turquía y Sudáfrica.




Vinos.

Sus vinos son rústicos, brillantes, con un vivo color rojo cereza o rubí con toques púrpura en su juventud, que se van volviendo granate en su envejecimiento. Son bastante tánicos, con un grado alcohólico elevado, nariz afrutada con intensos aromas a mora. Su boca compleja, seca, algo ácida, con notas de violeta y especias (regaliz y clavos de olor), ciruela pasa, cereza, mora, grosella negra, frambuesa y chocolate, cuero y tabaco. Es redondo, cálido y con buen cuerpo. Al mezclarse con uvas de variedad cabernet y merlot se suaviza y se hace más amable. Tradicionalmente se utilizaba para fortaleces otros caldos de uvas menos potentes. Por su alto contenido en azúcares y taninos, y su baja acidez, se consideraba una uva excesiva para utilizarse en monovarietales. Actualmente, con las nuevas técnicas de cultivos en las que se consigue una menor producción y maceraciones en frio, se consigue aumentar la acidez y disminuir el contenido de azucares, taninos y alcohol, obteniéndose unos muy buenos monovarietales.
