Orígenes y tradición.

Fundada en 1729, Alvear es una de las bodegas más antiguas de España. A lo largo de su historia, la bodega Alvear ha conservado su carácter familiar manteniendo sus raíces. Los Alvear de hoy son muy numerosos, más de 50 son ahora los propietarios, siendo también de la familia alguno de los responsables de la empresa. La bodega ha conservado su carácter familiar durante toda su historia y actualmente está dirigida por la octava generación de la familia Alvear. El prestigio de Alvear rebasa nuestras fronteras, sobre todo a raíz de logar la máxima calificación para uno de sus vinos por parte del crítico estadounidense Robert Parker, quien otorgó los ansiados 100 puntos a Alvear PX 2011. Todo un hito. La bodega, de nueva construcción, se encuentra en medio de la hermosa finca Palacio Quemado, en la Denominación de Origen Ribera de Guadiana. En este lugar, caracterizado por su tierra arcillosa y rojiza, se asienta la impresionante finca de 3.000 hectáreas, un lugar privilegiado situado en el municipio de Alange. A pesar de la amplia extensión de la finca, actualmente hay plantadas en Palacio Quemado casi 100 hectáreas de las variedades tempranillo, cabernet sauvignon, garnacha y syrah, respetando así su compromiso por un selecto rendimiento de la viña. El viñedo está dividido en parcelas de 4ha. cada una con controles, laboreo, riego y tratamientos personalizados para cada una de ellas en función del vino que se pretende conseguir. Situada en medio del viñedo, la bodega cuenta con todas las instalaciones y tecnología enológica necesaria para la elaboración de sus vinos y para la experimentación, que nos conduzca a alcanzar la máxima calidad. Al estar situada en plena zona de viñedo, en vendimia las uvas llegan en condiciones óptimas.




Historia de bodegas Alvear.

La Familia Alvear arranca en la antigua merindad de Trasmiera de las montañas de Burgos. Desde la primitiva casa solariega, en San Miguel de Aras, llega a Nájera a principios del siglo XVI y desde allí a tierras cordobesas. Juan Bautista García de Alvear y Garnica nace en Nájera (La Rioja) el 18 de julio de 1.657. Este personaje fue alcalde del Estado noble de Nájera, y cuando ejercía esta actividad fue destinado a Córdoba como Administrador de las Rentas Reales. Se casa en segundas nupcias con una noble señora cordobesa y después nace Diego de Alvear y Escalera, el primero de la saga. Diego, se traslada a Montilla y allí, más cerca del cielo y de la tierra, verá nacer su afición por el campo. Una pasión que le sitúa en la viña y en el vino cuando en 1.729 construye la bodega Alvear. Una bodega pequeña y disimulada en el apretado laberinto de Montilla. Este breve recinto de botas y tinajas será su universo íntimo. Con el tiempo, va adquiriendo una gran extensión de tierras en la zona que le convierten en uno de los mayores propietarios de la ciudad. Con su hijo Santiago impulsa la bodega hasta metas desconocidas en Montilla, cuando logra llevar un cargamento de vinos a Inglaterra a finales de ese siglo. De sus sucesores destaca Diego de Alvear y Ponce de León, que durante su existencia, desde el año 1.749 hasta el 1.830, que compaginó su vocación vinatera con una azarosa vida militar y política habiendo sido capitán de la fragata “Mercedes”, hundida en la batalla del Cabo Santa María por los ingleses, hoy famosa gracias a la empresa caza tesoros Odyssey.
De aquélla época destaca por derecho propio la figura de Carlos Billanueva, asistente que Diego de Alvear y Ponce de León trajo de Argentina y quien llegó a convertirse en su capataz de confianza. Bodegas Alvear desde sus orígenes ha mantenido siempre una vinculación entre España y Argentina, vinculación que sigue vigente en nuestros días. Carlos Billanueva (C.B) marcaba con sus iniciales los mejores vinos provenientes de la sierra. De esta forma se fue creando el estilo Alvear que aúna moderación y homogeneidad de sus rasgos, todavía presentes en el Fino C.B., marca centenaria y la más conocida de la casa. A lo largo de sus 284 años de historia, Bodegas Alvear ha conservado su carácter familiar, transmitiéndose la titularidad de padres a hijos de tal modo que, hoy en día, la propiedad de la empresa está en manos de la octava generación.




Trayectoria.

Alvear distribuye sus marcas en todo el territorio nacional, siendo su principal mercado el área mediterránea desde Cataluña hasta Algeciras. La bodega vende fuera de nuestras fronteras el 40% de su producción a más de 25 países diferentes entre los que se encuentran Gran Bretaña, Holanda, Japón, Canadá y Australia. Alvear es una de las bodegas de mayor prestigio y reconocimiento internacional de Andalucía. La bodega cuenta con extensos viñedos situados en los más famosos pagos de la Sierra de Montilla y Moriles (Córdoba). Aquí su cepa protagonista es la Pedro Ximénez, oriunda del Rhin, uva que se convierte en la base única de sus vinos dulces, finos, olorosos y amontillados. La uva Pedro Ximémez es la variedad blanca reina de la Denominación de Origen de Montilla-Moriles y también de los viñedos y vinos de Alvear. Originaria la región del Rhin, se dice que fue traída a Andalucía por un soldado de los tercios de Flandes quien le da nombre. El viñedo se cultiva por lo general en suelos muy calcáreos. En la zona se distinguen dos tipos: las “albarizas o alberos”, terrenos muy calizos y permeables, con escaso contenido de materia orgánica y poco productivos, donde se obtienen las uvas de maduración más larga y equilibrada; y los “ruedos”, terrenos rojizos por la presencia de sales de hierro, más precoces.




Los vinos.

El milagro de la crianza bajo el velo de flor, un proceso biológico natural por el que se desarrolla, en la superficie del vino, una raza de levaduras autóctonas que forman una capa de color crema. La actividad de estas levaduras aporta al vino un aroma y sabor peculiar muy distinto al inicial. Para favorecer el desarrollo de estas levaduras se mantienen unas condiciones de temperatura y humedad en las bodegas, y se llenan sólo dos terceras partes de la capacidad de las botas, dejando la superficie libre suficiente para el desarrollo óptimo del “velo”. Los finos más envejecidos, cuando agotan su capacidad nutriente para la “flor”, se llaman amontillados, adquiriendo un color dorado. En los olorosos, a diferencia de los finos, se impide el desarrollo del velo de flor mediante encabezado hasta el 18% y llenado completo de las botas. De este modo, la crianza se reduce a la huella que el roble y el tiempo dejan en el vino. El vino Pedro Ximénez es un vino dulce y suave, se obtiene mediante el soleado de la uva, los racimos se extienden en un trenzado de esparto donde se pasifican lentamente los granos. Una vez prensadas las uvas pasas se obtendrá un mosto denso, un verdadero zumo de pasas. La elaboración y crianza posterior dará lugar a los grandes dulces Pedro Ximénez.




El proceso de crianza.

Los recipientes empleados para la crianza del fino se denominan “botas” de una capacidad aproximada de 500 litros. La madera preferida, por su porosidad, es el roble americano. Nunca se debe emplear madera nueva. Las botas se disponen dentro de las bodegas en filas de varios pisos llamadas cachones. El pasillo entre dos cachones se denomina andana, y cada uno de los pisos de botas se llama criadera. La criandera más próxima al suelo es la solera; la situada inmediatamente encima, primera criadera; la siguiente, segunda criadera y así sucesivamente. Cada criadera contiene vino del mismo nivel de crianza; la solera, el de más crianza, la primera criadera el siguiente grado de crianza y así hasta las criaderas más jóvenes. La bodega dispone de una capacidad de crianza de 5 millones de litros en botas de roble, distribuidas en diferentes bodegas con un nombre propio: La Sacristía y El Liceo, donde se guardan los vinos más viejos; Las Mercedes, más conocida como del C.B; Las Higueras y Buganvillas, donde envejecen los Pedro Ximénez. La bodega denominada “de la Casa”, primer emplazamiento de Alvear, situada en el casco antiguo, está considerada de interés histórico-artístico. Esta antigua casa solariega del siglo XVIII, encierra las soleras más antiguas de la zona, amontillados con más de 200 años de crianza.
