La finca.

Pago Señorío de Arínzano es una denominación de origen que abarca 128 hectáreas para el cultivo. Se trata de una finca singular, de 355 hectáreas en total, ubicada en la Tierra Estella (Navarra), a media hora de Pamplona. El río Ega divide el valle con su cauce, un territorio donde se practica una viticultura sostenible, ya que participa en un programa de preservación de la Naturaleza en colaboración con WWF/Adena. La finca obtuvo la calificación de Vino de Pago en 2007, aportando al mercado un estilo de tintos frescos y bordeleses con recorrido, finura y capacidad de envejecimiento. Esta Denominación de Origen Protegida garantiza la procedencia de las uvas y el vino de un paraje o sitio rural con unas características edáficas específicas. Cuando en una finca o terreno concreto existe un microclima particular y una composición del terreno que la diferencia de otras zonas de su entorno, puede reclamar la condición de Pago y debe cumplir una serie de requisitos:
- La bodega productora debe encontrarse dentro del Pago.
* El suelo debe presentar singularidades que le distingan del resto.
* Los clones de cepas deben ofrecer características peculiares.
* El clima debe aportar cualidades diferenciadoras.
* Toda la uva con que se elabora el vino de pago debe proceder del viñedo.
* En la elaboración de los vinos de pago debe utilizarse un sistema de calidad integral.
* El sistemas de calidad integral debe abarcar desde el cultivo de la uva hasta la comercialización de los vinos.Historia
Sancho de Fortuñones de Arinzano elaboró por primera vez vino en esta finca en el siglo XI y desde entonces el Señorío de Arinzano ha sido reconocido por la calidad de su viñedo.En el siglo XVI, el palacio pasó a manos de Mosén Lope de Eulate, Señor de Arinzano y posteriormente en el siglo XVIII, el Marqués de Zabalegui ordenó la construcción de la actual casona para disfrutar de la belleza del paisaje. A principios del siglo XIX, se construyó la pequeña iglesia dedicada a San Martín de Tours, una de las pocas construcciones religiosas en Navarra de estilo neoclásico. El paraje natural donde se encuentra, está atravesado por el Río Ega y parte de la finca está situada al este de este río, mientras que la otra puede verse al oeste con toda una explosión de belleza natural. La fauna es muy variada y abundante, un regalo para los sentidos.




Las variedades y su elaboración.

Las variedades de la plantación son 45 % Tempranillo, 30% Chardonnay y entre 15 a 20% de Merlot. El resto, según las añadas pertenecen al de Cabernet Sauvignon. La densidad de plantación es de alrededor de 5.000 plantas por hectárea. Las técnicas de vinificación optan por la maceración en frío con fermentación en barrica o en tanques de acero inoxidable. Todos los vinos tienen crianza en barrica salvo dos excepciones, el rosado de tempranillo y el Hacienda Blanco de Chardonnay que tiene un 30% del volumen de crianza en barrica. La mitad del viñedo utiliza riego debido a que los suelos no retienen la suficiente agua lo cual sería muy grave ya que la savia dejaría de circular en las plantas y se frenaría todo el proceso de maduración de la uva.En las parcelas del Merlot cerca del río, el viñedo está calificado como ecológico y las actividades son auditadas frecuentemente. Se respeta concienzudamente la normativa para que mantengan las normas biológicas.En el pago, las barricas son 100% roble francés y sólo se usan tres veces. Todos los vinos van a crianza, exceptuando el Rosado porque por ley, no pertenece a ninguna D.O. Los tintos ganan con la madera y por eso en Arinzano van a barrica al igual que el vino blanco.




El clima y la Tierra.

Tiene una significativa influencia atlántica, con elevada variación entre las temperaturas diurna-nocturna en verano, al mismo tiempo que el río Ega modera las temperaturas. Los viñedos de Arínzano se localizan en un área de geología compleja, mostrando cada parcela unas características diferenciales. Los suelos de los viñedos son de origen, en su mayoría, terciario, con proporciones variables de limos, margas, arcilla y degradación de roca calizo-calcárea.




Los compromisos de la bodega.

Convencidos de que es el propio entorno natural de la Propiedad de Arínzano el que hace a nuestros vinos, se inicia en 1997 un acuerdo de colaboración con Adena, el órgano representativo del World Wide Funds for Nature en España, con el propósito de contar con su ayuda para preservar el medio natural en Arínzano y para llevar a cabo una viticultura sostenible. Se crea el "Programa para la Preservación de la Naturaleza en la Propiedad de Arínzano" y se lleva a cabo un riguroso inventario de la flora y fauna en la propiedad, sobre el que se basan una gestión y un sistema de producción sostenibles, únicos en el mundo del vino en España.
El proyecto se basa en cuatro líneas de acción:
• Conservación y restauración de los recursos naturales.
• Gestión sostenible de los viñedos utilizando técnicas del menor impacto ambiental.
• Utilización de materiales certificados en la construcción de la bodega.
• Gestión de los afluentes de la bodega para una depuración por medio de un sistema de lagunas naturales.




Enoturismo.

El Enoturismo es una de las actividades más destacables del Pago Señorío de Arínzano, con sus viñedos y olivos que sorprenden al visitante. Subiendo a una terraza natural, se pueden observar unos paisajes sin igual y el pueblo de Aberin, Montejurra y la sierra de Urbasa. Dentro de la bodega se puede disfrutar de los bonitos salones con los que cuentan y que tienen una hermosa vista al viñedo. El turista puede ver de cerca cómo se elabora Arinzano desde la tierra a la botella que se puede comprar en Madrid, New York o Hong-Kong. Son muchos los motivos que hacen de Finca Pago de Arinzano un lugar especial, posee un entorno único, que cambia de color con cada estación, junto a un conjunto arquitectónico donde confluyen historia, vanguardia y diseño. Origen.

La variedad Chardonnay es el fruto de una viña originaria de la región francesa de Borgoña, donde se localiza un pueblo del mismo nombre. Dentro de las uvas blancas, es la más extendida y popular en todo el mundo, por lo que, para mucho público, Chardonnay es sinónimo de vino blanco. Es una uva muy equilibrada en fruta, acidez y textura. Se puede considerar que marida con todo, desde comidas potentes hasta las más suaves, desde platos picantes y quesos fuertes, hasta pescados y aves. Además de los vinos blancos de mesa, es la uva con la que se elaboran la mayor parte de los champanes.




Características.

Si fuera una persona, Chardonnay sería un diplomático por su facilidad de maridaje, diversidad en sabores y facilidad de consumo. Como la uva en sí no tiene un sabor concreto, extrae su aroma del terruño donde se cultiva y obtiene sabores muy diversos, que pueden ser desde vinos muy limpios y sabrosos hasta otros ricos en toques de roble y mantequilla. Su racimo es de tamaño más bien pequeño, bastante compacto y con pedúnculo muy característico y de tamaño muy reducido. Las uvas en sí son pequeñas, uniformes y muy esféricas. Su piel es amarillento-verdosa cuando madura, hollejo de grosor considerable y una pulpa poco o nada pigmentada, textura blanda, muy jugosa y con aroma afrutado. La cepa es precoz en su brote, vigorosa, resistente y muy versátil por adaptarse a terruños y climas muy diversos, con la única condición de que no sean excesivamente húmedos. Es muy fértil, aunque con rendimientos bajos, aunque de una calidad bastante elevada. Esta viña se ve afectada por suelos con carencia de magnesio y precisa de niveles altos de fósforo y nitrógeno. Es una variedad de uva muy sensible a la carencia de magnesio y muy afectado por el secado fisiológico del raspón. En cuanto a sus hándicaps, es sensible al oídio, a la flavescencia dorada, al mildiu y a la podredumbre gris, así como a la polilla y a los cicadélidos y especialmente a los ácaros. Por otra parte, los hongos de la madera no le afectan en exceso y resiste perfectamente a la clorosis. Debido a su desborre precoz y maduración temprana es una viña que no gusta de los fríos primaverales, dando unos rebrotes de muy baja fertilidad, no obstante, aguanta bien los inviernos crudos y es muy resistente a los vientos fuertes.




Zonas de cultivo.

Podemos encontrar esta variedad de uva prácticamente en cualquier área vitivinícola pues está extendida mundialmente. Es muy común en Francia, España e Italia, aunque también se cultiva en Portugal, Estados Unidos, Australia, nueva Zelanda, en los países de América del sur y en África del Sur. Se calcula que hay en torno a 160,000Ha de uva chardonnay plantadas, de las cuales una tercera parte está en Francia. Además de su nombre genérico, también es conocida como Franciacorta en Italia, Chardoney y Pino Shardone en Bulgaria, Feinburgunder y Morillon en Austria y Pinot Chardonnay en Chipre.




Vinos.

Sus características pueden variar desde vinos ricos, gruesos y espesos, adecuados para envejecer en botella, a vinos más ligeros y frescos hechos sin madera y destinados a ser bebidos jóvenes. Es una de las variedades con que se elaboran el Champagne. Los vinos chardonnay presentan en su fase visual una capa variable entre pajiza muy pálido y un amarillo casi dorado, con reflejos verdosos. En nariz se observan los aromas característicos que son manzana verde, limón, pomelo, pera, acacia, frutas tropicales como mango, piña, banana, melón o ananá, algo de especias o caramelo. Cuando envejecen en barrica despiertan aromas a vainilla, miel y manteca. Su boca es elegante, larga, sin demasiada acidez, pero con una gama de sabores que va desde manzanas a cítricos, melón, peras, miel, cera, caramelo, dulce de leche y minerales entre los más destacados. Como consejo, es preferible adquirir vinos de esta variedad que se elaboren en regiones vinícolas de clima frío.
