La unión de cuatro amigos.

Envínate es el proyecto de cuatro amigos que se conocieron cuando cursaban estudios de enología en Alicante. Trabajan en diferentes zonas vitícolas de España con una misma premisa: reflejar la personalidad del viñedo de origen de los vinos en vez de parecerse a los demás. Entre sus integrantes está el sarriano Alfonso Torrente, que tenía claro que Ribeira Sacra debía ser uno de sus centros de operaciones. Acogidos a la denominación de origen hasta enero del 2019, ese año decidieron que lo mejor era continuar por libre.Al igual que hasta entonces, sus vinos proceden mayoritariamente de viñedos de la ribera de Doade. También siguen elaborando en una bodega situada dentro del mapa de la denominación y que alquilaron en el 2013 después de estar varios años de prestado. ¿Cuál es la diferencia? Pues que las marcas que elaboran en la Ribeira Sacra, al menos geográficamente, salen ahora sin la contraetiqueta del consejo regulador. Una de ellas, el tinto de finca Lousas Parcela Camiño Novo 2017, es la referencia gallega mejor valorada por Suckling en el top cien de los mejores vinos españoles del pasado año. Su otro tinto de parcela, Lousas Seoane 2017, figura entre los destacados del crítico estadounidense. Ambos proceden de la primera cosecha que elabora Envínate fuera de la denominación de origen Ribeira Sacra. Esa añada tuvieron problemas para lograr la contraetiqueta del consejo regulador en el examen al que se someten los vinos antes de su embotellado. A Alfonso Torrente, ganador de un concurso internacional de cata, aquello no le pareció «normal».Torrente prefiere pasar página y quedarse con el espaldarazo de la crítica. «La exportación es muy importante para nosotros y este tipo de ránkings son los que te permiten posicionarte fuera de España. Suckling tiene además bastante influencia en el mercado asiático», dice el enólogo sarriano. Es un detalle que no conviene perder de vista en el actual momento de incertidumbre para las ventas de vino en Estados Unidos y Reino Unido. Camiño Novo y Seoane son dos de los tres vinos que coloca Envínate en el top cien de vinos españoles que firma el antiguo editor del Wine Spectator.

Los vinos.

En Galicia hacen tres vinos:
- Lousas, un vino de aldea, procedente de distintas parcelas situadas en zonas diferentes de la denominación, algo similar a lo que realizan en Canarias donde también producen un blanco y un tinto fruto del ensamblaje de varios viñedos vinificados previamente por separado. Lousas, pizarra en gallego, es prácticamente mencía, aunque tiene algún pequeño porcentaje de variedades autóctonas gallegas como la merenzao, souson y caiño. Las fincas de las que proviene se vendimian por separado. Como dicen Roberto Santana y Alfonso Torrente, patean todas las parcelas, catan las uvas, y en función de cómo venga la añada, si ésta se adelanta o no, deciden el porcentaje de raspón a utilizar. La proporción varía en función de la parcela. Indican que el raspón no marca el vino si se vendimia en el momento exacto, es decir, cuando la uva no está ni verde ni sobremadurada. Lousas permanece ocho meses en barricas borgoñonas usadas de 228 y 500 litros.
- Lousas Parcela Seoane es de Amandi. Esta finca tiene un suelo pizarroso y se sitúa a una altura entre 450 y 525 metros. Su orientación es suroeste. Las variedades son un 95% mencía y el resto es merenzano, caiño, godello y palomino. La parcela Seoane se plantó antes de la Guerra Civil. El vino es pisado a pié, el porcentaje de raspón utilizado es del 100%, se vinifica en cubas abiertas, macerándose durante unos 30 días y, posteriormente, permanece en barrica, previamente envinadas con blanco, 8 meses. El número de botellas varía entre 800 y 1200 en función de la añada. Es un vino accesible desde el primer momento. Sin duda, uno de los vinos más destacados aparecidos en los últimos años en nuestro país.
- Lousas Camiño Novo de envínate proviene de una parcela que es un anfiteatro. De este vino se dice que es muy cerrado y que necesita abrirse.

Paso a paso.

Envínate empezaron a trabajar con un viticultor y luego buscaron a otros de diferentes lugares de la Ribeira Sacra, aunque, en gran medida de Amandi. Alfonso Torrente, el gallego de Envínate, explica que la parte de la denominación bañada por el Sil tiene tres zonas muy diferenciadas: Amandi, Bibei y Quiroga. Las dos primeras son las más interesantes por las características de los terrenos, al ser terrazas pizarrosas hacia el río con una pendiente muy pronunciada. Creen que pueden hacerse en el futuro diferentes vinos de “aldea” de cada subzona ya que las diferencias son muy significativas.
Lousas Camiño Novo de envínate proviene de una parcela que es un anfiteatro. De este vino se dice que es muy cerrado y que necesita abrirse.

Nuevos proyectos.

Fruto de su colaboración con Palacio Quemado en Extremadura, propiedad de Alvear, el se involucraron en un proyecto nuevo en Montilla-Moriles con el que están muy ilusionados. Allí han seleccionado cinco parcelas de viñedo de entre 30 y 80 años con diversas alturas y orientaciones y han hecho dos vendimias: Las primeras uvas se recogen antes de lo habitual, con 11º o 12º de alcohol; de este lote, una parte se vinifica en las tradicionales tinajas grandes de hormigón con placas de frío mientras que la otra parte se vinifica con pieles. El resto de las uvas se deja madurar en la viña y se vendimia y elabora tal y como es tradicional en la zona. Ahora el vino descansa en las tinajas con su velo de flor. La idea detrás de este proyecto, en el que han contado con la ayuda de Bernardo Lucena, el enólogo de Alvear, es valorar y defender el viñedo antiguo. Los viticultores de la zona están encantados porque trabajan menos y les beneficia económicamente: Al vendimiar con cuatro grados menos se gana mucho, porque la vendimia se hace casi tres semanas antes y la uva tiene más peso.
También están ilusionados con el paso que han dado en Tenerife, donde han instalado su sede en la antigua bodega comarcal de Santiago del Teide, una zona a 1.000 metros de altura en el noroeste de la isla en la que ya no quedan bodegas elaboradoras.También trabajan ahora con tres viticultores en La Orotava, un valle que desciende por la falda norte del Teide, a medio camino entre Taganana en el este y Santiago del Teide en el oeste, y que Roberto conoce bien tras sus ocho años como enólogo en Suertes del Marqués.

Origen.

El término malvasía designa a una familia de variedades originarias del Mediterráneo, probablemente de Grecia, y la isla de Madeira, que en la actualidad se cultivan en todas las zonas vitivinícolas del mundo. En España la introducen los almogávares en el siglo XIV, muchos de los cuales, a la vuelta de la expedición de Bizancio, se asentaron en las huertas de Valencia y también en las de Alicante, donde plantaron cepas de esa variedad que trajeron consigo, donde se elaboraron grandes vinos valencianos entre los siglos XV y XVI. Ramón Muntaner, uno de los generales, regresa a valencia en 1307 para casarse con Xirivella, dueña de una alquería donde plantó la uva malvasía. Desde allí se exportó a las Islas de Madeira y también a Canarias entre los siglo XV y XVI.

Características.

Aunque generalmente se habla de malvasía para referirse a la variedad blanca, también existe una malvasía tinta con el nombre de malvasía negra. Las diversas variedades se diferencian notablemente entre ellas por la morfología de la planta, color, sabor y composición bioquímica del fruto, precocidad de maduración, productividad y aptitud para la vinificación. Las vides malvasía pueden ser de dos grupos: los que tienen un ligero aroma que recuerda al moscatel y otros de sabor simple. Son cepas poco productivas y de escasa fertilidad, vigorosas, con porte tumbado o semierecto, de desborre muy temprano y con envero y maduración precoces. Sus racimos son medianos y poco compactos pero uniformes, alargados, con forma piramidal, muy alados, de compacidad media a elevada. Con pedúnculo muy corto y verde. Las uvas son de tamaño medio a pequeño, de sección esférica, perfil muy ligeramente elíptico, de hollejo muy fino de color verde con tendencia a tonos amarillo-dorados, con mucha pruina. Ombligo muy marcado. Su pulpa está apenas pigmentada, blanda, muy jugosa, con sabor muy dulce y aromática. Son cepas que resisten bien al frío del invierno pero no así a las heladas primaverales. Se adaptan muy bien al encharcamiento del suelo y al exceso de humedad, sin embargo, no resisten bien las sequías. Precisa de climas suaves y suelos filtrantes. Son cepas muy sensibles al mildiu y a la botritis, así como a los ácaros y a la polilla del racimo. La podredumbre ácida y los cicadélidos afectan bastante a estas cepas, y moderadamente el desecado del raspón y un más al oídio.

Zonas de cultivo.

Es una variedad internacional pues podemos encontrarla en Portugal como protagonista en la elaboración del Vino madeira, en Francia, Croacia, Eslovenia incluso en Brasil, pero es Italia (Lombardía, Sicilia, Lipari, y también Cerdeña) el principal país productor de esta variedad. En España también existe una amplia extensión. Son las comunidades autónomas de Castilla y León y Comunidad Valenciana las claras representantes, aunque en Aragón, Baleares, Castilla-La Mancha, Cantabria, Rioja y Murcia también apuestan por ella. Siempre se ha cultivado en abundancia en casi todas las islas del mediterráneo.

Vinos.

Con esta uva se elaboran desde los vinos monovarietales más jóvenes, hasta crianza o reserva, que normalmente se elaboran con distintas variedades. Los vinos jóvenes elaborados con estas uvas presentan tonos amarillos verdosos en cambio los crianza se acercan más a las tonalidades doradas. Tiene un alto contenido en azúcar lo que la hace perfecta para elaborar vinos dulces, de este modo los vinos elaborados malvasía aguantan bien el envejecimiento. La mayoría de los vinos procede de una varietal denominada malvasía bianca. Se producen vinos de mesa blancos o de color tostado, y más raramente tintos. Con fuertes aromas.
