DO Montsant y sus cifras.

Las primeras Denominaciones de Origen vinícolas españolas fueron reconocidas en 1932 en el Estatuto del Vino promulgado por el gobierno estatal, entre las que figuraba la DO Tarragona. Dentro de los límites de la DO Tarragona se diferenciaba la "subzona Falset", que ocupaba el actual territorio de la DO Montsant. Finalmente, teniendo en cuenta las características específicas de nuestros vinos y la importancia del cultivo de la vid en la zona, en 2001 se aprobó la creación de la Denominación de Origen Montsant, que arrancaba con 28 bodegas inscritas, y hoy cuenta ya con 53. Estos 53 bodegas se encuentran repartidos entre 16 municipios, la mayoría de la comarca del Priorat y algunos de la Ribera de Ebro: Cabacés, Capçanes, Cornudella de Montsant, Darmós, Els Guiamets, El Masroig, El Molar, Falset, La Bisbal de Falset, la Figuera, la Serra d'Almos, la Torre de Fontaubella, Marçà, Margalef, Pradell de la Teixeta y Ulldemolins. El Consejo Regulador.

Los vinos de la DO Montsant están amparados por la normativa del Consejo Regulador de la Denominación de Origen. Este organismo está integrado por los representantes del entorno vitivinícola: viticultores, elaboradores y la Administración Pública. Su misión es garantizar la tipicidad y la calidad de los vinos que se producen en el territorio. El reglamento de creación, publicado en el Diario Oficial de la Generalidad de Cataluña el día 5 de noviembre de 2001, establece las especificidades de todos los vinos que se producen bajo el amparo de la DO. Este reglamento fue actualizado y publicado en el DOGC el 28 de junio de 2005, y es vigente en la actualidad. El control de los vinos se ejerce desde la viña hasta su comercialización. Los vinos se someten a diferentes controles analíticos y organolépticos para conseguir el sello de garantía de la DO, que le acredita ante el consumidor como un vino de la DO Montsant. Un panel de catadores se encarga de llevar a cabo la cata sensorial de calificación de los vinos que salen amparados con el distintivo de la DO Montsant.




El estudio de las zonas.

El estudio de zonificación de la DO Montsant, iniciado en 2008 en colaboración con el NCAVI, es un proceso de autoconocimiento de la propia DO para profundizar en el vínculo del vino con el territorio, afianzar su identidad y explotar su potencial vitivinícola. A partir del análisis de diferentes parámetros como el clima, el paisaje, los suelos, y del ciclo fenológico de viñedos de garnacha y cariñena, se ha llevado a cabo la segmentación de la DO Montsant en 6 zonas diferentes. Aunque estas primeras conclusiones, la DO Montsant se encuentra inmersa todavía en este proceso de autoconocimiento. Los estudios de zonificación son un proyecto vivo que a la larga debe permitir llegar a conocer todas las características de la zona parcela a parcela hasta saber qué carácter transmiten estas variables en las cepas allí plantados y, en consecuencia, a sus uvas y vinos.




Las Garnachas y Cariñenas.

Las garnachas y las cariñenas son las variedades más representativas del territorio de la DO Montsant, con un 37% y un 31% respectivamente. Con estos datos en la mano, la DO Montsant apuesta por dar valor a estas variedades autóctonas y, en su voluntad de autoconocimiento, inicia este proyecto en colaboración con el VITEC, el Parque Tecnológico del Vino de Falset. A partir de sus primeros estudios de zonificación, el año 2016, la DO Montsant se propone conocer a fondo cómo son sus garnachas y cariñenas, y qué diferencias presentan en función de la zona donde se encuentran plantadas. De cara a la elaboración de este estudio de caracterización se han seleccionado una veintena de viñedos de ambas variedades y de diferentes zonas, pero que comparten rasgos comunes como, por ejemplo, la edad de la cepa. Han sido viñedos vendimiadas en el mismo punto de maduración y se han vinificado igual (en depósitos de acero inoxidable, sin madera). De este modo, sin diferencias de ningún tipo, los matices vendrán dados por la zona donde crecen y su entorno. Las vinificaciones hechas hasta ahora están ayudando tanto a los viticultores como a los enólogos a trabajar estas variedades en las mejores condiciones posibles. De momento, los resultados analíticos de los parámetros estudiados por VITEC y las valoraciones de los técnicos del centro y los enólogos de la DO establecen grandes diferencias entre ellas. Diferencias que van desde la coloración, la tanicidad, la acidez o el grado alcohólico hasta matices que afectan el volumen en boca, a la presencia de notas florales o fruta, los toques de hierbas aromáticas.




Ejes de trabajo de la D.

O. Montsant.
La DO Montsant tiene marcada una política de trabajo que se centra en tres puntos, como son, el control, para garantizar la trazabilidad y la calidad del producto. Esto pasa por mantener el control de la procedencia de la uva durante la vendimia y para controlar los puntos de venta del producto etiquetado como DO Montsant. Otro punto es la promoción, que durante los últimos años, la DO Montsant ha dedicado una parte importante de sus esfuerzos en los principales mercados exteriores, tanto con acciones en el punto de destino como con diferentes misiones inversas. Siempre sin descuidar el mercado catalán, tan importante para la DO Montsant por el contacto directo con el consumidor, y por último, el conocimiento: La DO Montsant se encuentra inmersa en dos grandes proyectos, LIFE Priorat-Montsant y PECT Priorat. De esta manera, con recursos propios y ajenos, se trabaja para conocer los beneficios de las prácticas sostenibles, tanto en el campo como en la bodega, y para tener un conocimiento en profundidad de las 1.860 ha que integran la DO. La voluntad es adquirir todo este conocimiento para luego transmitirlo a todos los que forman parte de la DO Montsant.

Origen.

Esta uva, procedente del noreste de España, hay controversia sobre si de Alicante, Aragón o Cataluña, es una mutación de la garnacha tinta. Como toda mutación, comparte gran parte de las características de su predecesora, salvo por el color del racimo. Es conocida también como Alicante blanca, belan, feher grenache, garnatxa blanca, vernatxa blanca, rool grenache, silla blanc, sillina blanc y grenache blanc. Su cultivo se extiende por el sureste de Francia y el noreste de España, formando parte de los vinos con D.O. Alella, Costers del Segre, Tarragona y Terra Alta, siendo en ésta última donde se encuentra la tercera parte de la producción mundial. No obstante, también está autorizada en otras D.O. españolas como Cariñena, Cigales, L’Empordá-Costa Brava, Navarra, Priorat, Somontano y Rioja y en Francia en las zonas vitivinícolas de Rousellony el Valle Agy.




Características.

Las viñas de Garnacha Blanca se caracterizan por tener hojas de tamaño medio, pentagonales y con cinco lóbulos, con racimos de tamaño pequeño/mediano, bastante compactos y provistos de pedúnculos mu cortos. Las con uvas son medianas, de forma elíptica, que en su estrujado generan un hollejo fino. Las cepas son muy vigorosas y fértiles, de brotación media, así como su maduración, dando unas producciones medias, al igual que sus rendimientos. Resisten muy bien a la sequía y se adaptan a terrenos poco fértiles y pedregosos, no así a zonas con exceso de humedad y a condiciones de encharcamiento. Como la garnacha tinta, es muy sensible al corrimiento del racimo, aunque en menor medida. Esta variedad de viña es muy sensible a varias enfermedades y plagas como la excoriosis, mildiu, botrytis y necrosis bacteriana, pero en mucha menor medida al oídio. También le afecta sensiblemente la polilla del racimo, pero no los ácaros. Los suelos con carencia de magnesio suelen exteriorizarse fácilmente en esta uva.




Vinos.

Las extraordinarias características propias de la garnacha blanca como la acidez que le confieren esta compensación con el alcohol, el equilibrio en los matices oxidativos tan complejos a la hora de su elaboración y su madurez tardía a pesar del calor, hacen de ella una variedad que no deja impasible a quien la disfruta. Especialmente en la D.O. Terra Alta, han sabido entender la garnacha blanca como uva principal para elaborar vinos varietales de altísima calidad que ofrecen la frescura de su fruto y la tipicidad del Mediterráneo. Los vinos elaborados con uvas garnacha blanca son alcohólicos, con acidez media alta y ricos en extracto, con bajos contenidos en potasio y ácido málico. En fase visual presentan un tono amarillo-verdoso, expresándose en nariz con aromas de intensidad media, notas florales, afrutadas y herbáceas. Su boca es ligera, ácida y con persistencia media. Su contenido en oxidasas aconseja una esmerada elaboración para evitar oxidaciones precoces. Con esta variedad se elaboran vinos blancos monovarietales, o bien en mezcla con otros tipos de uva blanca. Suelen utilizarse para producir vinos blancos dulces naturales, así como vinos rancios de color dorado, grasos y amplios, que se consumen como vinos de postre.
