Origen.

El término malvasía designa a una familia de variedades originarias del Mediterráneo, probablemente de Grecia, y la isla de Madeira, que en la actualidad se cultivan en todas las zonas vitivinícolas del mundo. En España la introducen los almogávares en el siglo XIV, muchos de los cuales, a la vuelta de la expedición de Bizancio, se asentaron en las huertas de Valencia y también en las de Alicante, donde plantaron cepas de esa variedad que trajeron consigo, donde se elaboraron grandes vinos valencianos entre los siglos XV y XVI. Ramón Muntaner, uno de los generales, regresa a valencia en 1307 para casarse con Xirivella, dueña de una alquería donde plantó la uva malvasía. Desde allí se exportó a las Islas de Madeira y también a Canarias entre los siglo XV y XVI.




Características.

Aunque generalmente se habla de malvasía para referirse a la variedad blanca, también existe una malvasía tinta con el nombre de malvasía negra. Las diversas variedades se diferencian notablemente entre ellas por la morfología de la planta, color, sabor y composición bioquímica del fruto, precocidad de maduración, productividad y aptitud para la vinificación. Las vides malvasía pueden ser de dos grupos: los que tienen un ligero aroma que recuerda al moscatel y otros de sabor simple. Son cepas poco productivas y de escasa fertilidad, vigorosas, con porte tumbado o semierecto, de desborre muy temprano y con envero y maduración precoces. Sus racimos son medianos y poco compactos pero uniformes, alargados, con forma piramidal, muy alados, de compacidad media a elevada. Con pedúnculo muy corto y verde. Las uvas son de tamaño medio a pequeño, de sección esférica, perfil muy ligeramente elíptico, de hollejo muy fino de color verde con tendencia a tonos amarillo-dorados, con mucha pruina. Ombligo muy marcado. Su pulpa está apenas pigmentada, blanda, muy jugosa, con sabor muy dulce y aromática. Son cepas que resisten bien al frío del invierno pero no así a las heladas primaverales. Se adaptan muy bien al encharcamiento del suelo y al exceso de humedad, sin embargo, no resisten bien las sequías. Precisa de climas suaves y suelos filtrantes. Son cepas muy sensibles al mildiu y a la botritis, así como a los ácaros y a la polilla del racimo. La podredumbre ácida y los cicadélidos afectan bastante a estas cepas, y moderadamente el desecado del raspón y un más al oídio.




Zonas de cultivo.

Es una variedad internacional pues podemos encontrarla en Portugal como protagonista en la elaboración del Vino madeira, en Francia, Croacia, Eslovenia incluso en Brasil, pero es Italia (Lombardía, Sicilia, Lipari, y también Cerdeña) el principal país productor de esta variedad. En España también existe una amplia extensión. Son las comunidades autónomas de Castilla y León y Comunidad Valenciana las claras representantes, aunque en Aragón, Baleares, Castilla-La Mancha, Cantabria, Rioja y Murcia también apuestan por ella. Siempre se ha cultivado en abundancia en casi todas las islas del mediterráneo.




Vinos.

Con esta uva se elaboran desde los vinos monovarietales más jóvenes, hasta crianza o reserva, que normalmente se elaboran con distintas variedades. Los vinos jóvenes elaborados con estas uvas presentan tonos amarillos verdosos en cambio los crianza se acercan más a las tonalidades doradas. Tiene un alto contenido en azúcar lo que la hace perfecta para elaborar vinos dulces, de este modo los vinos elaborados malvasía aguantan bien el envejecimiento. La mayoría de los vinos procede de una varietal denominada malvasía bianca. Se producen vinos de mesa blancos o de color tostado, y más raramente tintos. Con fuertes aromas. Origen.

El origen de la viognier es desconocido, aunque se cree que es una vid antigua, posiblemente originaria de Dalmacia (en la actual Croacia). Una leyenda dice que el emperador romano Probo llevó esta vid al Ródano en el 281 d. C., también se dice que esta vid fue empacada con la syrah en un barco mercante, que fue por el Ródano en dirección a Beaujolais, y que fue capturado por un grupo de forajidos (conocidos como culs de piaux) cerca de la actual Condrieu. Así como se desconoce a ciencia cierta cuál es el origen de esta uva, su nombre también ese viognier es oscuro. Probablemente provenga del nombre de la ciudad francesa de Vienne, donde había un puesto avanzado de los romanos. Características.

La cepa de variedad viognier presenta un pámpano de porte horizontal y produce racimos compactos, de tamaño pequeño, con pedúnculo visible y poco lignificado, con desborre de primera época y brotación temprana. Su maduración también es temprana, aunque en menor medida. Las bayas son de tamaño pequeño, redondas, esféricas y de coloración verde-amarilla. La calidad potencial del vino de viognier depende también de la viticultura y del clima. El hollejo es grueso. El mosto tiene un muy alto contenido en azúcares y de una baja a muy baja acidez. La uva requiere una estación de crecimiento larga y cálida, para madurar por completo, pero un clima muy cálido puede hacer que la uva desarrolle altos niveles de azúcares que den lugar a un alto grado alcohólico antes de que estas notas aromáticas se desarrollen. Su cultivo es difícil, debe podarse a poda larga moderada, dando bajos rendimientos de forma natural. Se suele plantar con densidad de plantación bastante elevada, dependiendo de la zona entre 4.000 y 6.000 cepas por hectárea. Esta variedad de viñedo es, como todas las cepas de brotación temprana, ligeramente sensible a las heladas primaverales. Aunque es bastante vigorosa tiene una sensibilidad media al viento, por lo que se recomienda su disposición en espalderas. No presenta ninguna sensibilidad particular a ninguna enfermedad y/o plaga, salvo el oídio. Se adapta muy bien a terrenos ácidos y a climas húmedos, siendo muy sensible a sequías extremas. Da mejores rendimientos en suelos profundos, aunque no necesariamente excesivamente fértiles.




Zonas de cultivo.

La viognier es una variedad noble de uva blanca, originaria de Ródano, en Condrieu, que se cultiva poco incluso en su lugar de origen, pero con mayor éxito en Languedoc-Rosellón (Francia). En Francia la viognier es la única variedad permitida en las denominaciones de Condrieu y Château Grillet, que se encuentran en el lado oeste del río Ródano, a unos 40 km de Lyon. En España podemos encontrar algunas viñas viognier en el Priorat, Jumilla, Castilla la Mancha y Castilla y León. A partir de la década de los ochenta, las plantaciones de viognier en los Estados Unidos y Canadá han aumentado enormemente. La Costa Central de California es el mayor productor de USA. Argentina y Chile tienen cantidades significativas de viognier. Se han realizado pequeños cultivos en Brasil y Uruguay. En Australia, el lugar donde está más extendida es el valle Edén, en Australia Meridional, donde se hacen vinos varietales y donde también se mezcla con shiraz.




Vinos.

En algunas regiones vinícolas, la viognier es fermentada junto con la uva tinta syrah, para aportar color y buqué al vino. Los vinos elaborados con variedad viognier dan como resultado unos vinos muy perfumados y afrutados y de un final muy largo en boca. Los vinos de viognier son bien conocidos por sus aromas florales y por los terpenos También hay muchos aromas que dependen del terruño, las condiciones climáticas y la antigüedad de las vides. Aunque algunos de estos vinos, sobre todo aquellos de vides antiguas y de vendimia tardía, son aptos para la crianza la mayoría son realizados para ser consumidos jóvenes. El equipo de Toni Sarrión nos presenta su nuevo vino: un blanco elaborado, principalmente, con uva merserguera (63%), una variedad de uva autóctona en la zona pero casi perdida hoy, procedente de su finca Calvestra, unos viñedos plantados suelos calizos de textura franco-arcillosa a más de 900 metros de altura. El resto del coupage, viognier (30%) y malvasía dan como resultado un expresivo blanco, que destaca por sus aromas de flores blancas, ligeros toques críticos y notas de miel, su frescor y cremosidad. Un blanco con carácter mediterráneo, goloso y agradable. Criado en depósitos de acero inoxidable sobre lías finas durante 8 meses.
