Origen.

El origen de la variedad Godello se remonta a la época de la colonización romana y, según las últimas investigaciones, parece ser producto de la introgresión genética de material traído por los colonizadores romanos, sobre vides silvestres seleccionadas por las poblaciones primitivas del noroeste peninsular. La Godello, también denominada Agudello, Verdeja, Verdelho o Berdello Ojo de Gallo, es un uva autóctona de la ribera del río Sil. Es la variedad más importante de la D.O. Valdeorras y, además, está presente en otras localizaciones como Ribeira Sacra, Monterrey y Bierzo (Castilla y León). Actualmente se conservan viñedos antiguos en la D.O. Tierra del vino, en Villamor de los Escuderos (Zamora), donde se pueden observar cepas bicentenarias, plantadas aproximadamente en el año 1.800, de las que aún se obtienen maravillosos vinos. En el año 1885, el viticultor José Ramón Gayoso decidió plantar viñas de esta variedad en la región gallega de Valdeorras, en contraposición al resto de viticultores de la zona se decidía por variedades alóctonas, debido a la plaga de filoxera. Esta variedad ha adquirido importancia en los últimos años, y se ha hecho destacable por su mayor capacidad de envejecimiento en barrica de madera, produciendo vinos con matices complejos y elegantes.




Características.

Las cepas de godello son vigorosas y porte erguido, de elevada fertilidad, su desborre y maduración son precoces. Los racimos son pequeños, homogéneos en el tamaño de sus uvas, bastante compactos y con un pedúnculo de tamaño medio. Las uvas son pequeñas, pero de excelente calidad, sección circular y perfil elíptico, con hollejo verde amarillento, grueso y con mucha pruina. La pulpa, muy vascularizada y jugosa, no está pigmentada Sin sabores particulares, presenta un aroma intenso, peculiar y persistente, complejo y diverso con una madurez determinada. Recibe infinidad de nombres gouveio, godella, agodello, agodenho, agudanho, agudello, agudelo, berdello, cumbrao, guveio, guvejo, ojo de gallo, prieto picudo blanco, quveyo, trincadente, verdeiho, verdeleu, verdelho, verdelho branco, verdelho de madeira, verdelho do dao, verdelho du dao y verdello, muchas de ellas nomenclaturas en portugués y en gallego. Zonas de cultivo.

La Godello es una variedad que produce vinos blancos de carácter atlántico y su cultivo en D.O. Valdeorras se localiza sobre las laderas y llanos del río Sil, el Valle de Larouco y el Valle del Bibei, como destacadas sub-zonas reconocidas en la Denominación de Origen. También existen viñedos de godello en otras zonas de Galicia, como la Ribeira Sacra y Monterrey. En menor medida se cultiva en Castilla y León, sobre todo en la D.O. Bierzo, donde las plantaciones han aumentado tras un periodo de declive. En Portugal la principal región productora de vinos gouveio, godello en portugués, es Tras-os-Montes, en el noreste del país, donde suponen el 60% de las viñas existentes.




Vinos.

La uva Godello produce unos vinos meramente atlánticos, finos y delicados, con un gran cuerpo. Por suelen ser monovarietales con una acidez y un nivel de alcohol medio-elevado, gusto suavemente amielado, equilibrados y de excelente aromaticidad y un amargor elegante. Su perfil aromático suele ser muy complejo, menos definido que otras variedades blancas, aun así, suelen ser bastante distintivos los aromas cítricos y frutales, cargados de mineralidad, con toques herbáceos y un sutil aroma floral, como anises e hinojo. En muchos casos se elaboran con crianza sobre lías, donde se estabiliza su carácter y ganan en untuosidad y volumen. También son vinos que tienen una gran capacidad de mejora con un envejecimiento en barrica de roble, gracias a su acidez y buena estructura.

Origen.

El Palomino es la variedad base de los vinos de Jerez, traído en el siglo XVI por las tropas de Flandes y perfectamente adaptado a las características del medio y clima de las comarcas vitícolas andaluzas y extremeñas. La variedad blanca de uva palomino es una variedad autóctona española, utilizada en la elaboración de los vinos generosos de jerez y manzanilla, concretamente, la variedad es muy predominante en el Marco de Jerez, el triángulo formado por las localidades gaditanas de Jerez del Frontera, Sanlúcar de Barrameda y El Puerto de Santa María y que abarca, además las localidades de Chiclana, Chipiona, Puerta Real, Rota, Trebujena y Lebrija, de donde proceden estos vinos de fama mundial, donde representa el 95% del viñedo. Es una variedad complementaria para la elaboración de vinos en otras denominaciones españolas, concretamente, según el mapa interactivo del reparto de las variedades de uva españolas, Andalucía agrupaba cerca de 9.000 hectáreas de viñedo de esta variedad. Características.

Dos son las claves del éxito de esta variedad, por un lado, su carácter neutro, perfecto para la elaboración de los vinos generosos. Por otro, su perfecta adaptación a las épocas del año idóneas para la vendimia en el marco. La palomino es una variedad de brotación y maduración tardía que resulta muy resistente a la sequía y sabe vivir en condiciones de adversidad. Sus racimos son grandes y tienen forma piramidal mientras que las bayas de las uvas son esféricas, aunque irregulares, de tamaño mediano y de un color que oscila entre el verde y el amarillo. También es conocida como palomino, palomino blanco, Chipiona y pinchito. Es una variedad muy resistente a la sequía y a los intensos calores estivales, bien adaptado, si el patrón es adecuado a los suelos calizos, en los que muy difícilmente muestra clorosis férrica. Es sensible a la rotura de sarmientos por el viento y es muy conveniente establecer las cepas en espaldera y podas en cordón. Es muy sensible al mildiu, al oídio, sobre todo en ataques a los racimos, a la podredumbre gris, la botritis y a los ataques de la polilla del racimo. No se ve muy afectada por las enfermedades de madera.




Zonas de cultivo.

Destaca el cultivo en Jerez, donde representa el 95% del viñedo. Se cultiva en la zona formada por Jerez de la Frontera, El Puerto de Santa María, Sanlúcar de Barrameda y Trebujena, todas ella comunidades gaditanas. Está admitido su uso, como variedad complementaria, en vinos de otras procedencias, como Tierra del Vino de Zamora y D.O. León. Según la normativa, es una variedad recomendada para la comunidad autónoma de Andalucía (donde es conocida como listán, palomino y palomino fino).




Vinos.

Con la variedad palomino se elaboran varios vinos de los considerados generosos secos. En los vinos de Jerez hay dos grandes ramales o familias: las que pertenecen a la crianza biológica y las que pertenecen a la crianza oxidativa. Además, están los amontillados y palos cortados a medio camino entre las dos crianzas. Todos ellos utilizan la variedad palomino en su elaboración, de hecho, los únicos vinos elaborados en Jerez que no utilizan la variedad palomino son los vinos dulces, que se elaboran con pedro ximénez y moscatel. Origen.

La Treixadura es una variedad de uva blanca autóctona de Galicia. Es la cepa predominante en las DO Ribeiro y presente en el resto de denominaciones gallegas. Se cultiva en suelos frescos y drenados, de composición granítica. La variedad Treixadura también es conocida como Trajadura, Trincadeira, Trincadete, Verdelho Rubio y Verdelho Louro.




Características.

La treixadura es una variedad de brotación y maduración tardía, por ello conviene un cultivo bien orientado en valles y laderas, y preferentemente en terrenos cálidos. Es una cepa vigorosa que presenta un pámpano de porte erguido, con una fertilidad media, que da considerables producciones de un alto potencial cualitativo. Los racimos son de tamaño grande, compactos y de forma piramidal. Las bayas son elípticas, de tamaño mediano y de color verdoso.Tienen un hollejo grueso. El racimo tiene un tamaño medio o grande y las uvas se encuentras compactas en él. Las uvas, de forma elíptica corta y dimensiones uniformes en todo el racimo, son de tamaño pequeño y medio, con una piel gruesa de color verde amarillento. Es una cepa vigorosa, de fertilidad media y da considerables producciones de un alto potencial cualitativo. Se adapta muy bien a suelos frescos y drenados, de composición granítica. Es bastante resistente al mildiu y al oídio, por contra, es una variedad sensible a la podredumbre gris y así como a la excoriosis.




Zonas de cultivo.

En España, suele encontrarse en las DO de Rías Baixas y Ribeiro, aunque también se encuentra en la DO Monterrei, donde es mezclada con doña blanca, godello y palomino. En las Rías Baixas, la uva suele mezclarse con albariño, loureira, caino blanco, torrontés y godello. En Ribeiro suele mezclarse con albariño, albilla, godello, palomino, loureira, macabeo y torrontés. En Portugal, la treixadura se encuentra sobre todo en el vinho verde de Minho, en la cual hay 58.000 ha plantadas cerca de la frontera española y 12.000 ya fuera de dicho entorno. Aunque en esa zona, el albariño es la uva más plantada, también se cultiva treixadura y se mezcla con albariño, loureira, paderna, azal branco y avesso.




Vinos.

La uva treixadura se utiliza exclusivamente para vinificación, dando un rendimiento medio-alto. Da vinos equilibrados, con una graduación alcohólica media-alta y una acidez total media-baja. La uva contiene un punto ácido más que interesante y, en comunión con la jerezana Palomino da lugar a vinos muy afinados, frutales y del gusto de ahora. También se mezcla con Albariño para destacar sus aromas, demasiado sutiles, poco manifiestos. Aunque hay vinos cien por cien de treixadura, muchas veces se mezcla con albariño por su aroma delicado y poco acentuado. Los vinos blancos de la variedad Treixadura son aromáticos, finos y elegantes. En nariz son frutales y florales, con notas balsámicas. El buen contenido alcohólico equilibra la acidez, por lo que resultan frescos, untuosos y sabrosos. Los vinos con un alto porcentaje de Treixadura evolucionan positivamente por lo menos hasta dos años después de la vendimia. Tradicionalmente con esta variedad se elaboraban vinos dulce con uvas pasificadas bajo cubierta durante varios meses, son los vinos denominados “tostados”.
