La DO Vinos de Madrid.

En la Comunidad hay 12.000 hectáreas dedicadas al cultivo de uva de vino, 8.900 con la D.O. Vinos de Madrid, un 78% de la superficie vitivinícola, repartidas en 12.387 parcelas y con 3.038 viticultores que las cultivan. Se mantiene poco más de un tercio de la superficie del viñedo que existía en la provincia hace 40 años, debido a la presión que ejerce la realidad urbana sobre el sector agrario. La historia de lo que podríamos denominar el nuevo vino de Madrid arranca en 1984, con el reconocimiento de la Denominación Específica Vinos de Madrid. Más tarde, en marzo de 1986, el Ministerio de Agricultura aprueba de Denominación Específica Vinos de Madrid, y en noviembre de 1990 queda reconocida oficialmente la Denominación de Origen Vinos de Madrid. Es una de las 94 denominaciones de origen reconocidas en España. Está formada por cuatro subzonas: Arganda, Navalcarnero, San Martín de Valdeiglesias y El Molar -esta última desde febrero de 2019., Vinos de Madrid es una D.O. joven, constituida en el año 1990, que en los últimos años ha experimentado un enorme progreso cualitativo. Así, en el viñedo madrileño hoy conviven bodegas que desarrollan con dedicación y esmero vinos de muy diverso estilo. Tras el boom de los vinos de alta expresión que se dejó ver en todo el espectro vinícola español y de las variedades de prestigio internacional, en la D.O. Vinos de Madrid comienzan a destacar en estos días los viticultores que se empeñan en rescatar las uvas autóctonas como la garnacha, que está ofreciendo excelentes tintos en los viñedos más altos del entorno de la sierra de Gredos–, así también como los vinos de producción ecológica y las bodegas consagradas a producciones de pequeño volumen, pero de gran calidad. Sin duda, los vinos de Madrid se mueven y resultan cada vez más atractivos para el aficionado más exigente.




Las uvas.

La D.O.P. Vinos de Madrid elabora vinos con las uvas tintas de variedad cabernet sauvignon, garnacha tinta, merlot, tempranillo, syrah, petit verdot, graciano y garnacha tintorera. Las variedades blancas autorizadas son airen, albillo real, malvar, parellada, torrontés, viura, también llamada macabeo, moscatel de grano menudo y sauvignon blanc. El porcentaje de variedades de uva en los diferentes tipos de vino es, para los vinos tintos, un 85% de las variedades Tempranillo, Garnacha tinta, Merlot, Cabernet Sauvignon y Syrah. Los vinos rosados deben tener un porcentaje mínimo de un 60% de las variedades Tempranillo y/o Garnacha tinta. En cuanto a los vinos blancos deben tener un porcentaje mínimo de un 60% de las variedades Malvar y/o Albillo. Los espumosos rosados requieren de un mínimo de un 50% de tempranillo y/o garnacha tinta, y los espumosos blancos de la misma proporción de malvar y/o albillo.




Envejecimiento.

Según la última modificación del Reglamento del año 2004, los vinos de la D.O. Vinos de Madrid pueden utilizar en sus etiquetas, dependiendo del tiempo mínimo que el vino ha sido envejecido, considerando tanto su crianza en barrica de roble como el posterior envejecimiento en botella, crianza, reserva y gran reserva. Los crianzas, tanto tintos como blancos y rosados, han de tener una crianza en barrica de roble y posterior envejecimiento en botella como mínimo de dos años. El tiempo mínimo que debe permanecer en barrica es de seis meses, al que seguirá el envejecimiento en botella hasta completar los dos años. Para poder etiquetarse como reserva, han de tener, los vinos tintos, un periodo de crianza en barrica de roble y botella de al menos tres años, con un tiempo mínimo de permanencia en barrica de roble de un año. Los rosados y blancos pueden etiquetarse como reserva con un periodo mínimo de seis meses en barrica y el resto en botella hasta completar los dos años. Los vinos tintos gran reserva requieren un mínimo de dos años en barrica y un envejecimiento en botella de otros tres años o más. Los grandes reservas blancos y rosados han de pasar un mínimo de seis meses en barrica y el resto, hasta completar cuatro años, en bottella. En cuanto a los vinos espumosos, el proceso de crianza hasta el degüelle deberá tener una duración mínima de nueve meses y, en cuanto a los vinos con sobremadre, el tiempo máximo de permanencia de las madres con el vino en ningún caso debe de ser superior a ciento ochenta días. Al vino que no ha recibido crianza en barrica o la ha recibido, pero durante un tiempo inferior al mínimo legal para poder ser considerado como crianza, se le llama vino joven. De hecho, hoy en día, muchas bodegas realizan una crianza corta de sus vinos tintos de entre 2 y 6 meses en barrica antes de su embotellado, que al no cumplir el tiempo mínimo requerido se consideran vinos jóvenes. A estos vinos se les suele describir con nombres como semicrianza, joven con barrica o tinto roble, aunque como no son denominaciones amparadas por el Reglamento, no suelen aparecer en las etiquetas.




Notas de cata.

Dentro de que cada vino y bodega tiene su identidad, en el pliego oficial de condiciones de la D.O de vinos de Madrid encontramos una descripción de las características Organolépticas. Los finos blancos tienen un color amarillos pajizos pálidos con tonos de verdosos a grises o acerados en vinos jóvenes evolucionando a amarillos dorados u oro viejo en los blancos de crianza o reserva. En blancos fermentados o criados en barrica de roble de tonos amarillos pajizos evolucionando a tonos dorados con el envejecimiento. Su nariz es afrutada, bien a frutos de pepita, de hueso, tropical o caramelizados. En vinos con envejecimiento y/o fermentados o criados en barrica de roble conjugados proporcionalmente a su edad con aromas especiados, balsámicos, minerales y /o maderas. Su boca es fresca, ligeramente ácida, dulce en el caso de los vinos semidulces y dulces. Untuosos y con dejes amargos. Ligeros y de persistencia media. Los vinos Rosados tienen una fase visual rosa, de tonalidad fresa o frambuesa o salmón pudiendo aparecer colores anaranjados con rosados de más de 2 años o sometidos a envejecimiento. En nariz dan fruta roja y también notas florales y vegetales. En vinos de más de 2 años pueden combinarse proporcionalmente a su edad con aromas especiados. En boca son frescos, ligeramente ácidos, dulces en el caso de los semidulces o dulces. Untuosos con ligera tanicidad y persistencia media. Los tintos de Madrid son rojos, con tonalidades violáceas a cereza en los vinos jóvenes, pudiendo presentar tonalidades del rubí a la teja cuando están sometidos a envejecimiento. La nariz es frutal y/o vegetales en los vinos jóvenes pudiendo contener aromas de madera en los vinos elaborados y envejecidos en barrica de roble. En los vinos sometidos a envejecimiento se pueden encontrar proporcionalmente al mismo, aromas o frutos secos, especias, hierbas aromáticas, aromas empireumáticos y/o minerales. Su boca es tánica, cálida y persistente, frutal para los jóvenes y con la madera presente en el caso de los vinos fermentados y/o criados en barrica.
