La destilería Poli, fundada en Schiavon en 1898 y propiedad de la familia Poli, produce grappa utilizando un alambique completamente de cobre, entre los pocos existentes, compuesto por calderas de vapor con ciclo discontinuo y es uno de los principales productores de grappa artesanal en el área de Vicenza. La historia de la destilería Poli comenzó en 1898 con el grappaiolo Giobatta, hijo de Paolo, cuya familia se originó en el Altopiano dei Sette Comuni, en torno a una pequeña destilería montada en un carro, para que los vecinos de los pueblos destilaran orujo.
