Este era el estilo de la ginebra de la época victoriana, de producción clandestina. Durante la fiebre de la ginebra del siglo XVIII, se montaron placas de madera con forma de gato (el viejo gato Tom) en la puerta de algunos bares clandestinos. Cuando los peatones depositaban una moneda en la boca del gato, ponían los labios alrededor de un tubo pequeño entre las patas del gato y el camarero depositaba un trago de ginebra desde su interior. De aquí el nombre de «Old Tom». En 2007 apareció en el mercado Hayman's Old Tom Gin, utilizando una receta original de la época, dando como resultado una ginebra sumamente aromática en nariz, con un paladar redondo, suave y gustoso. |
