Entre las fechas clave en la historia de esta ‘maison' se encuentra el año 1815, cuando el propio Louis Latour compró el viñedo Corton Vigne au Saint. 1890 también fue una fecha importante. Fue cuando la propiedad adquirió también la finca del Château Cuverie de Corton-Grancey, que aún hoy conforma el corazón de las propiedades de Latour. Actualmente, la empresa está dirigida por la undécima generación de la familia Latour, en concreto por Louis Fabrice Latour, curiosamente la séptima persona con el nombre de Louis Latour que está al frente de esta compañía familiar e independiente.
Cultivos y viñedos.
Los viñedos de la propiedad Latour están plantados exclusivamente con la variedad Pinot noir para los vinos tintos y con Chardonnay para los blancos. La poda corta, llamada Guyot simple, garantiza una baja producción, indispensable para una cosecha de gran calidad. El viñedo florece generalmente a mitad de junio y la vendimia se realiza aproximadamente 100 días más tarde, con las tradicionales cestas que se utilizan en Borgoña. Cabe destacar que la mayoría de los viñedos de Louis Latour se ubican en las zonas más privilegiadas de Borgoña, aunque en los últimos 30 años la empresa ha extendido su presencia en zonas más periféricas. En ellas ha plantado cepas con las que se elaboran vinos muy competitivos comercialmente.
Singularidades.
Todos los viñedos se cultivan bajo una agricultura razonable, utilizando únicamente los tratamientos que son necesarios en función de las condiciones medioambientales. Por ello, se sirven de prácticas experimentadas y naturales como el barbecho, el compost, el deshertado, el aclarado y otras técnicas no químicas. Una de las singularidades de Louis Latour es que cuenta con su propia tonelería, capaz de producir más de 3.000 barricas de roble al año, de las cuales la mitad se utilizan para su propio consumo y el resto se exportan a diferentes partes del mundo. Además de elaborar vinos con sus propios viñedos, Louis Latour también ejerce como “négociant”. Esto significa que comercializa vinos obtenidos con uvas procedentes de viñedos que no son de su propiedad, siguiendo el mismo proceso de elaboración que normalmente realiza para las uvas procedentes de sus viñedos.
