Español [ ES ]Alipus San Juan se produce en San Juan del Río, Tlacolula, en la zona de Oaxaca por el palenquero Don Joel Cruz e hijos. Se elabora con 100% de maguey Espadín (Agave angustifolia Haw) de montaña alta muy pronunciada (altitud entre 1100 y 1400 msnm), lo que genera menor exposición al sol, y poco estancamiento de agua. El agave es cocido en horno de piedra de canto rodado, cónico, bajo tierra, calentado a base de leña (encino negro).Se destila 2 veces en alambique de cobre y fermenta en tinas altas cónicas de encino (1,500 lt) con jugo y bagazo por 8 días. Este mezcal se distingue por las condiciones de la planta de tierras anaranjadas y blancas, y fermentaciones largas, que marcarán en sabores los tonos frutales y minerales. |
