El Consejo Regulador.

El Consejo Regulador de la Denominación de Origen “Manchuela”, constituido el 29 de julio de 2000, es una de las más recientes de Castilla-La Mancha. Comprende un amplio territorio que abarca 44 municipios del sureste de la provincia de Cuenca y 26 del noreste de la provincia de Albacete, en el que se cultivan 100.000 hectáreas de viñedo que producen vinos a granel en grandes cantidades. Sin embargo, desde hace diez años se ha reorientado la producción hacia una mejora de sus parámetros de calidad, a lo que obedece la creación del Consejo Regulador de la Denominación de Origen “Manchuela”, cuyo objetivo es establecer un rasgo de identidad propio para sus caldos y afianzar su reconocimiento en los mercados nacionales e internacionales.

La historia.

El primer reconocimiento de la Denominación de Origen “Manchuela” se realizó mediante una Orden Ministerial de 2 de marzo de 1966, al amparo del Estatuto del Vino de 1933. No obstante, la Ley 25/1970 estableció el requisito de revisión y de reordenación de las Denominaciones de Origen existentes, proceso que no llegó a culminarse en el caso de La Manchuela, perviviendo la asociación entre el nombre de esta comarca y sus vinos al amparo de la indicación geográfica “Vinos de la Tierra”. En 1997, un grupo de viticultores y bodegueros de esta comarca quisieron rehabilitar la antigua Denominación de Origen “Manchuela” e iniciaron el proceso administrativo necesario hasta que en julio de 2000 se constituyó legalmente la Denominación de Origen “Manchuela”, con el fin de situar los vinos amparados en un lugar relevante dentro del difícil mercado de los vinos de calidad. Actualmente, se encuentran inscritas en el Consejo Regulador 35 empresas, entre cooperativas, bodegas y embotelladoras, pertenecientes a 25 municipios de los 70 que abarca la comarca de La Manchuela, de manera que de las 100.000 hectáreas que se cultivan en toda la comarca, son ya 4.000 las hectáreas de viñedo protegidas bajo esta Denominación de Origen, repartidas prácticamente al 50% entre las dos provincias que abarca.

La geografía, el clima y el suelo.

La comarca de La Manchuela, situada en las faldas de las sierra que separan las provincias de Cuenca y Albacete de la vecina Comunidad Valenciana, enmarcada entre los valles de los ríos Júcar y Cabriel, se ve favorecida por unas condiciones edafoclimáticas muy particulares. Los viñedos, cultivados en una superficie aproximada de 72.000 hectáreas, se ubican a una altitud que va desde los 600 a los 1.100 metros sobre el nivel del mar y gozan de un clima continental influido por los vientos húmedos del Levante. Las altas temperaturas diurnas producidas por el viento de poniente y el frescor nocturno de la brisa mediterránea favorecen una maduración lenta y una perfecta formación de los polifenoles de la uva, aportando aroma y color, haciendo de esta comarca una zona vitícola especialmente adecuada para el cultivo de las variedades tintas. LA escasa humedad, la usencia casi total de lluvia entre los meses de mayo y septiembre, y la gran cantidad de horas de sol recibidas durante su maduración hacen que el riesgo de enfermedades sea ínfimo, y, por lo tanto, su calidad no se ve afectada por tratamientos fitosanitarios. Con los planes de reestructuración para la modernización del viñedo mediante ayudas europeas, se introdujeron nuevas variedades que sustituyeron, en gran parte, a las autóctonas de la zona, que son Bobal en variedad tinta y Macabeo en blanca. Las características del terreno, suelos desarrollados sobre sedimentos terciarios y cuaternarios y predominantemente arcillosos de base calcárea de los sedimentos de los ríos Júcar y Cabriel, recogen y mantienen el agua de lluvia que cae cuando aún no ha crecido la uva. junto al clima, de contrastes térmicos acusados, proporcionan a la zona un microclima y unas características especialmente propicias para el cultivo de la vid, como lo demuestra su larga tradición vitivinícola que siempre ha tenido un enorme peso en su economía, hasta el punto que son muchos los pequeños pueblos que viven enteramente del cultivo de la vid, siendo ésta su única fuente de ingresos.

Las uvas.

Aunque también se cultivan en esta comarca variedades blancas, por sus características climáticas es una zona especialmente privilegiada para el cultivo de uvas tintas, entre las que destaca la variedad autóctona Bobal, prácticamente exclusiva de esta región y con resultados extraordinarios para la elaboración de vinos rosados. Con un 70% de uva tinta y un 30% de blanca, las variedades amparadas por el Consejo Regulador son bobal, babernet sauvignon, cencibel o tempranillo, garnacha tinta, merlot, monastrell, moravia dulce, shyrah, garnacha tinotera, malbec, maoravia agria, mazuela, graciano, rojal tinta, frasco o tinto velasco, petit verdot, cabernet franc y pinot noir en variedad tinta, y albillo real, chardonnay, macabeo o viura, sauvignon blanc, verdejo, pardillo, viognier y moscatel de grano menudo.

Los vinos de bobal.

La variedad bobal es muy apropiada para la obtención de rosados, produciendo unos vinos brillantes de color fresa, con tonos vivos de buena intensidad aromática, con notas frutales y florales como la fresa, frambuesa, sandía, violetas, dando gran frescor en boca, delicado y con un largo recuerdo frutal. Cuando se introducen los racimos enteros para la fermentación maceración carbónica, se consiguen unos vinos de color cereza muy intenso, con ribetes violáceos con gran intensidad aromática, muy frutales y de gran calidad. Los vinos tintos son excelentes para envejecer, concentrados, carnosos y tánicos, de gran intensidad cromática y excelente acidez. Con aromas frutales que nos recuerdan a los frutos negros como arándanos, moras y regaliz.

Origen.

La teoría más probable sobre el origen de la uva cabernet franc , es la que establece sus primeros asentamientos en la zona de Libourne, al suroeste de Francia, a lo largo del siglo XVII, cuando el cardenal Richelieu transportó esquejes de la vid desde el valle del Loira. Fueron plantados en la abadía de Bourgueil, bajo los cuidados de un abad llamado Bretón, cuyo nombre se asoció a la uva. En el siglo XVIII, se encontraron plantaciones de cabernet franc en Fronsac, Pomerol y Saint-Émilion destinadas a la producción de vino de buena calidad. La popularidad de la cabernet sauvignon creció en los siglos XIX y XX, y se observó el gran parecido con la cabernet franc por lo que se extendieron las teorías sobre su relación. En 1997, la evidencia del ADN mostró que la cabernet franc había sido cruzada con la sauvignon blanc para producir la cabernet sauvignon. Características.

Las cepas cabernet franc son vigorosas, poco ramificadas, de porte erguido, que dan buenas producciones. El desborre de estas viñas es precoz o medio y su maduración también de media estación. Estas uvas son pequeñas, esféricas, la pigmentación de su piel es negroazulada, provista de una gruesa capa de pruina y una muy marcada cicatriz estilar. El hollejo es grueso y la pulpa sin pigmentar, blanda, pero con cierta consistencia y muy jugosa, con sabor herbáceo característico. La uva cabernet franc es muy sensible a la excoriosis y al complejo de hongos de la madera. Es bastante sensible al mildiu, al oídio y a la podredumbre negra, o black-rot pero muy resistente a la clorosis férrica, la eutipiosis y la botritis. Es atacada por la polilla de racimo, los cicadélidos y los ácaros . Al tener un desborre medio, se comporta bien ante los fríos primaverales, no se ve afectada por el viento, siempre que haya sido podada de manera adecuada y sea conducida en espaldera. Aunque prefiere suelos arcillosos y calcáreos, se comporta bastante bien en todo tipo de suelos, obteniéndose buenos resultados con suelos arenosos, siempre que no sean demasiado húmedos.

Zonas de cultivo.

La variedad cabernet franc se encuentra en el top veinte de las uvas con mayor extensión de viñedos en el mundo. Sus plantaciones se extienden por todo el mundo, desde Europa, donde estaca su presencia en Francia e Italia, aunque también está presente en España, Hungría, Eslovenia y Bulgaria, hasta América, China o Kazakistan. En el Nuevo Mundo, la cabernet es usada sobre todo como un componente de vinos de mezcla y se encuentra de forma escasa en Australia, Sudáfrica, Chile, Argentina y Nueva Zelanda.

Vinos.

La cabernet franc comparte muchos de los mismos compuestos fenólicos y componentes aromáticos de la cabernet sauvignon, pero con algunas diferencias apreciables. La cabernet franc tiende a tener pigmentaciones más claras y produce vinos con el mismo nivel de intensidad y riqueza. La cabernet franc produce mostos con mucho color, altos niveles de azúcar, muy perfumados y con aroma a frambuesa, grosella negra, violeta y grafito. Es menos tánica que la cabernet sauvignon dando lugar a una boca más suave. Son vinos muy aptos para la crianza en barrica, ya que envejecen muy bien.
