Historia.

En el siglo XIX Navarra tuvo su esplendor vinícola como consecuencia de la crisis de la filoxera en Francia. No obstante, este esplendor duró poco porque la misma filoxera se extendió a los viñedos navarros y solo lograron salvarse 1000 hectáreas. Los viñedos fueron replantados con cepas de vid traídas de América, que eran resistentes al insecto, y los productores se asociaron en cooperativas bodegueras. En los años ochenta se crea la Estación de Viticultura y Enología de Navarra, los bodegueros realizaron importantes inversiones para modernizarse y trajeron variedades reconocidas internacionalmente para mezclarlas con las autóctonas. Constituida en 1933, la Denominación de Origen Navarra no publicó su primer reglamento hasta 1967.

Generalidades.

En Navarra existe un amplio abanico de variedades blancas y tintas, que se utilizan para elaborar vinos de todos los estilos adaptados a los gustos de los consumidores, desde los afamados rosados navarros, hasta los blancos, tanto jóvenes como con crianza, tintos jóvenes y envejecidos y vinos secos y dulces. Más del 70% del viñedo lo ocupan las variedades autóctonas, mientras que el 30% restante está compuesto por las más famosas variedades internacionales. En total, el 90% de las uvas producidas en Navarra son tintas y sólo el 10% son blancas. Las variedades de uva tinta incluidas en esta denominación de origen son cabernet-sauvignon, garnacha tinta, graciano, merlot, mazuelo, pinot noir, syrah y tempranillo. Por su parte, se permite elaborar vino D.O. Navarra con las variedades de uva blanca chardonnay, garnacha blanca, malvasía, moscatel de grano menudo, sauvignon blanc y viura.

Diversidad de climas y paisajes.

Una de las principales características que definen a la D.O. Navarra es la gran diversidad de paisajes y climas que se dan en los más de 100 kilómetros que separan el norte de la zona, situada en las cercanías de Pamplona, del sur, enclavada en la ribera del Ebro. Y es que en Navarra se produce una situación excepcional, prácticamente única en la Península Ibérica, que es la confluencia de los climas atlántico, continental y mediterráneo. La cercanía del Cantábrico, la influencia de los Pirineos y la bonanza del valle del Ebro permiten esta variada climatología. Circunstancia que marca profundamente el paisaje navarro, donde las más de 10.500 hectáreas de la Denominación de Origen se asientan en todo tipo de ecosistemas y situaciones de cultivo: laderas, riberas, mesetas, llanuras, y que definen 5 áreas de producción diferenciadas: Baja Montaña, Valdizarbe, Tierra Estella, Ribera Alta y Ribera Baja.

Evolución de viticultores y bodegas.

En las últimas dos décadas el vino navarro inició una evolución que lo ha transformado totalmente y no ha dejado de dar sus frutos. Primero, en los años ochenta se introducen variedades foráneas como la blanca chardonnay, y las tintas cabernet sauvignon y merlot, que empezarán a convivir con las tradicionales viura, tempranillo y garnacha (mayoritaria y gran protagonista de la zona). Variedades muy bien adaptadas a la región que, sin arrinconar el siempre vivo potencial de las uvas tradicionales, han ido a la búsqueda de una nueva expresión. Después, en los años noventa con la entrada en escena de un puñado de inquietos bodegueros dispuestos a dar un vuelco a la situación, desde la exigencia y la experimentación y con la calidad como objetivo. Nombres propios que desembarcan trayendo nuevos aires y un revolucionario concepto enológico, al tiempo que se erigen como dignos sucesores de lo mejor de la tradición vinícola de la zona. Un fenómeno que no cesa y que se traduce en la actualidad en la incorporación de nuevas bodegas con proyectos basados en el terruño y la originalidad.

Vinos blancos.

Los jóvenes de viura, y mezcla de viura-chardonnay, son afrutados y frescos, y deben ser consumidos dentro del año siguiente a su vendimia, de color, amarillo pálido, y su nariz, suavemente frutal. Por su parte los chardonnays sin barrica son más estructurados y acídulos, son vinos de mayor persistencia cuyo consumo es perfectamente adecuado dentro de los 2-3 años de su elaboración, de color amarillo pajizo intenso, poseen una marcada fruta en nariz y una boca marcada por una fresca acidez. Los chardonnays fermentados en barrica cuyos mejores mostos fermentan en barricas nuevas y tras una permanencia de unos 6 meses con sus lías, al más noble estilo borgoñón, se trasiegan y embotellan y en ellos encontraremos colores amarillos dorados y su nariz, compleja, marcará notas de humo, mantequilla, avellanas y frutas maduras.

Vinos rosados.

La garnacha, sola o acompañada de tempranillo y cabernet Sauvignon, da lugar a vinos de sugerente color, de rico aroma afrutado y fresco paladar han de consumirse dentro del año siguiente a su elaboración. Se obtiene por el sistema de sangrado de mostos que es el único que está admitido en la Denominación de Origen Navarra y es, sin duda, con el que se obtiene una mayor calidad. Hacen falta 2 o 3 kilos de uva para obtener una botella de un buen rosado DO Navarra. En el rosado se extrae lo mejor de la uva y su elaboración es más complicada que otro tipo de vinos”. En la DO Navarra sólo se elaboran vinos rosados que proceden de uvas tintas y con ese único método, el de “sangrado. La identidad de los rosados DO Navarra reside en su atractivo color, sus aromas y frescura.

Vinos tintos
Partiendo de la garnacha o el tempranillo (en menor medida de la merlot o de la cabernet sauvignon), se obtienen unos vinos de color púrpura y grana, llenos en nariz de notas de regaliz y deliciosas frutas del bosque, tanto negras (cassis y moras) como rojas (fresas y frambuesas). En el caso de los tintos roble, la permanencia de al menos tres meses en barrica los dota de una sápida estructura. Su boca, golosa y viva, los hacen apropiados para aperitivos de charcutería, patés, quesos del país, e incluso algún preparado de bacalao salseado.El reglamento de la Denominación obliga a que los tintos crianza no salgan al mercado hasta que como mínimo hayan pasado dos años (desde diciembre del año de la vendimia), y que hayan madurado como mínimo un año en barrica. Las uvas tempranillo, cabernet sauvignon y merlot son las protagonistas de estos vinos marcados por una selecta crianza, que los dota de hermosos colores cereza con suaves matices teja. La nariz mantiene el carácter frutal, matizado por finas notas de roble y vainilla. En boca son potentes y sabrosos. Serán grandes compañeros de carne a la brasa, asados, guisos de carne y quesos curados.

Tintos reserva, gran reserva e "iconos".

Las variedades empleadas son las mismas que para los de crianza, muchas veces incrementadas con la graciano. Los tintos de reserva tienen un mínimo de tres años (de los cuales, uno como mínimo fue en barrica) y los gran reserva tienen un mínimo de cinco años (de los cuales, dieciocho meses como mínimo fueron en barrica). Poseen un bello color cereza-rubí, con bonitos tonos teja, limpios y brillantes. Su nariz es compleja, rica en matices especiados, buenas maderas y fondo frutal que se mantiene con el paso del tiempo. La boca, pulida pero amplia y carnosa. También acoge actualmente una gran selección de vinos de alta gama, que se ha dado en llamar "iconos" o "vinos de alta expresión": frutosos, concentrados, expresivos y maravillosamente complejos. Acompañan bien platos de caza y guisos.

Otros vinos.

También se elaboran bajo la D.O. Navarra vinos blancos dulces, con una nivel alcohólico entre 11 y 14 grados, que provienen habitualmente del vidueño moscatel de grano menudo. La delicadeza, untuosidad y fragancia son sus características más destacables. Su momento de consumo se hallaría acompañando quesos de cabra, foies y postres, así como para las sobremesas. Otros vinos que se elaboran son los de licor de moscatel, coon mayor graduación, que muchas veces experimentan una larga crianza en barricas de roble y damajuanas de cristal.

Origen.

El origen de la uva garnacha está localizado, según se ha comprobado ampelográficamente, en la región de Aragón, en el noreste de España. Desde allí fueron llevados a otros territorios de la Corona de Aragón, como Cerdeña o el Rosellón, en el sur de Francia. Uno de los primeros nombres que recibió fue "tinto aragonés”. En Cerdeña se conoce como cannonau, donde se afirma que se originó allí y que se extendió a otras tierras del Mediterráneo que estaban bajo el gobierno de Aragón. La garnacha ya estaba bien difundida a ambos lados del Pirineo cuando la región de Rosellón fue anexionada por Francia. A partir de ahí la vid se abrió camino a través de Languedoc y al sur de la región del Ródano, donde quedó bien asentada en el siglo XIX. A pesar de su preponderancia en las cercanas regiones de Navarra y Cataluña, la garnacha no fue plantada ampliamente en La Rioja hasta principios del siglo XX, cuando se replantaron los viñedos después de la epidemia de filoxera. Australia comenzó a plantar cepas de garnacha en el siglo XVIII, convirtiéndose en la variedad de uva de vino tinto más plantada del país hasta que fue superada por la syrah a mediados de los años sesenta. En el siglo XIX, los viticultores de California apreciaron la capacidad de la vid para producir altos rendimientos y soportar el calor y la sequía.

Características.

La variedad garnacha crece en cepas muy vigorosas de porte erguido, con elevada fertilidad y muy productivas. Los racimos son entre medianos y grandes, muy compactos y de bayas bastante uniformes, con pedúnculo corto. Las bayas son medianas de tamaño, esféricas, con epidermis de color rojo violeta oscuro, de difícil desprendimiento de su pedicelo. Su hollejo es fino, muy sensible a roces y con mucha pruina. La consistencia de su pulpa es blanda, muy jugosa, sin pigmentación. La garnacha tinta es una variedad muy sensible al mildiu tanto en hojas como en racimos, al black rot, a la excoriosis y a la yesca. Resiste muy bien al oídio, pero no al oídio tardío. Es muy sensible a distintos tipos de corrimientos ya sean fisiológicos, por frio, o inducidos por determinados patrones como Rupestris de Lot. Se ve bastante afectada por la polilla del racimo y los cicadélidos. Sensible a la necrosis bacteriana y a los virus del amarillo y bandeado de nervios, así como al desecado del raquis y por ello con altos requerimiento en magnesio. Su sensibilidad a la botritis y a la podredumbre ácida es media. No tolera bien los suelos muy húmedos o encharcados. Las cepas de garnacha son algo sensibles al corrimiento y poco a la eutipiosis y a los ácaros. Son cepas que resisten muy bien el viento y la sequía, adaptándose a cualquier tipo de suelo. Sus podas han de ser cortas, dando buenas producciones y de calidad al disponerse en espalderas, pero producciones excesivas reducen el color y minimiza su contenido en azúcar y pierde aroma. También es exigente en fósforo y boro. Poco exigente en nitrógeno.

Zonas de cultivo.

La garnacha está muy presente en todo el mundo, destacando Francia y España, aunque desde finales del siglo XX la superficie plantada ha ido decreciendo debido a que se han puesto de moda otras viñas como tempranillo, cabernet Sauvignon y merlot. En España es común en Borja y Cariñena, ambas en Aragón. Se usa en las zonas de Denominación de Origen Calificada de la Rioja y Priorato, además de en las áreas montañosas al suroeste de Madrid, al norte de la provincia de Toledo (D.O. Méntrida) y en Cebreros (Ávila). Otras regiones vitícolas con considerables plantaciones de garnacha incluyen Costers del Segre, L'Empordá-Costa Brava, La Mancha, Madrid, Penedés, Somontano, Tarragona, Terra Alta. Es una variedad recomendada en las comunidades autónomas de Aragón, Castilla-La Mancha, Castilla y León, Cataluña, Extremadura, Madrid, País Vasco y Comunidad Valenciana y otras con menor presencia. Es la uva protagonista de una gran mayoría de los vinos rosados de la D.O. Navarra. También se elaboran vinos de esta variedad, ya sea monovarietal o coupage, en Francia, Italia, Australia y EE.UU y en menor medida, en Mexico, chile, Uruguay, Argentina y Sudáfrica.

Vinos.

La garnacha es una uva que se utiliza, en muchas zonas, para mejorar el color y la graduación alcohólica de vinos de otras variedades. Los Los vinos jóvenes de garnacha tienen aromas de pimienta recién molida pero manteniendo aromas de frambuesa y moras. Al envejecer, con poca crianza en barricas de roble, los vinos mantienen su color potente, adquieren aromas a fruta madura, manzana y toques minerales, sobre todo los procedentes del Priorato. Son vinos de grado alcohólico elevado, afrutados, redondos y amables, con gran intensidad aromática (frutas negras muy maduras, ciruelas secas) y con buena capacidad de crianza.
