Historia.
La Ribeira Sacra es una de las denominaciones de origen más antiguas de Galicia, con más de 2.000 años de historia, este espacio natural presume de una riquísima biodiversidad y la mayor concentración de iglesias románicas de toda Europa. Así, la historia de la vid en la zona está estrechamente relacionada con la vida monacal. En efecto, fueron los monjes los que perfeccionaron las técnicas de cultivo en la Ribeira Sacra, sin olvidarse de cuidar el espectacular paisaje en el que trabajaban. Es sabido que los vinos de la zona han estado y están muy vinculados al Camino de Santiago, tanto al internacionalmente conocido Camino Francés, como al llamado Camino de Invierno, en el que se encuentran las subzonas de Quiroga, Amandi y Chantada. Nos encontramos, de este modo, con cultivos en terrazas a la sobra de los antiguos eremitorios y monasterios que dieron nombre al territorio, en el que los peregrinos tienen el privilegio de caminar por el enlosado de una auténtica vía romana durante varios kilómetros. Tras muchos años de esfuerzo, el vino que antaño se exportaba a la mismísima Roma, vio nacer su Denominación Origen: la Ribeira Sacra fue autorizada por una orden da la Consellería de Agricultura, Gandería e Montes de la Xunta de Galicia, del 3 de Septiembre de 1996, nombrándose mediante la orden de la Consellería de Agricultura, Gandería e Montes de la Xunta de Galicia, del 30 de Mayo de 1995 un Consejo Regulador que controla y protege los distintos tipos de vino autorizados y garantiza su calidad, encargándose así mismo de promocionar el producto en el mercado y proteger su nombre.
La geografía.
La Ribeira Sacra es una de las cinco Denominaciones de Origen que existen en Galicia. Repartida entre las subzonas de Amandi, Chantada, Quiroga-Bibei, Ribeiras do Miño y Ribeiras do Sil. Esta denominación de origen fue creada en 1996, con una extensión de 2.500 hectáreas de viñedo, que suponen un 5,2% del suelo dedicado a la vid en Galicia. Comprende parroquias y lugares de 20 municipios situados a lo largo de las riberas del Miño y del Sil, en el sur de la provincia de Lugo y norte de Ourense. Se agrupan los municipios en cinco subzonas diferenciadas: Amandi, Chantada, Quiroga-Bibei, Ribeiras do Miño y Ribeiras do Sil. La Ribeira Sacra guarda toda la esencia de los vinos gallegos, ya que en ella se cultivan todas las variedades autóctonas gallegas.
El clima y el suelo.
En el Valle del Miño, su clima destaca por una pluviometría de 900 mm anuales y una temperatura media de 14°C. Por su parte, en el Valle del Sil, la pluviometría es de 700 mm y una temperatura media de 13°C. Por otro lado, los suelos de la zona del valle del Miño son similares a los de origen granítico que dominan en toda la Galicia occidental, de fracciones arenosas y limosas, frescos y permeables. Los de los valles del Sil son de tipología oriental, con abundancia de arcillas, aunque el suelo de las terrazas ha mejorado notablemente la calidad de suelo original.
Las uvas.
Los vinos tintos de la Ribeira Sacra se elaboran preferentemente, además de con la variedad mencía que es la predominante, con brancellao, merenzao, tempranillo, sousón y caiño tinto, estando autorizado también el uso de la garnacha tintorera y mouratón. Las uvas blancas autorizadas son la variedad albariño, loureira, treixadura, godello, doña branca y torrontés.
Los vinos.
Los vinos Mencía son del color de la cereza intensa, brillantes y con un ribete púrpura. En nariz producen una primera impresión agradable, siendo afrutados, de intensidad suficiente y de media a larga duración. Entran suaves en boca, provocando una sensación placentera. Su acidez es equilibrada, son potentes en alcohol y están bien de taninos. Resultan sabrosos, a veces algo carnosos y mismo ligeramente astringentes. En retrogusto son elegantes y frutales, con vuelta de frutos rojos maduros, con una intensidad media y una persistencia prolongada. Los vinos blancos, obtenidos de la variedad Godello; son vinos frescos, afrutados y al mismo tiempo con una gran plenitud en boca, con aromas intensos propios de la variedad.

Origen.
El origen de la mencía se pierde en la historia, siendo una de las uvas más antiguas de la península ibérica, siendo introducida, con toda probabilidad, por las legiones romanas asentadas en el noroeste de Hispania pues, hace más de 2.000 años, escritos de Plinio el Viejo y Estrabón ya hacían referencia a las viñas de uva mencía en el Bierzo y Valdeorras. Ya desde tiempos remotos, las zonas donde hoy reina la mencía se destacaban por el ir y venir de legiones romanas, que plantaron las primeras vides y construyeron lagares, siendo desde entonces zonas de gran tradición vitivinícola. Por la Vía Romana se supone que se trasladaba el vino producido en algunas de esas tierras a la Roma Imperial, para disfrute de los emperadores. Al declinar el imperio, también lo hicieron las viñas. Siglos después, llegó su expansión con el desarrollo de monasterios medievales, lugares donde el vino era imprescindible en el culto, pero también lo era en la vida cotidiana de los monjes, pues formaba parte esencial de su alimentación. Fueron los monjes de aquella época los que desarrollaron nuevas técnicas de cultivo y elaboración. Además de los monasterios, el auge del camino de Santiago hizo que las viñas se extendieran por sus alrededores y cobraran una especial importancia. El vino de mencía fue tan valorado en la zona de Valdeorras que llegó a ser utilizado como moneda de cambio, para satisfacer impuestos y también para dar gracias a los santos como pago de milagros. Cuando en el siglo XIX llegó la filoxera, los viñedos fueron desapareciendo siendo sustituidos paulatinamente por gramíneas. A mediados del siglo XX, un grupo de viticultores relanzó los viñedos de mencía. Los años ochenta supusieron el inicio de una nueva era, lo que ha dado lugar a que actualmente se puedan degustar grandes vinos elaborados con esta variedad. Los romanos la introdujeron, los monjes la mejoraron y la filoxera casi consiguió acabar con ella, pero, afortunadamente, la mencía sigue dando buenos caldos para el deleite de los aficionados al vino.
Características.
La variedad mencía produce racimos pequeños y compactos, con bayas uniformes, tanto en tamaño como en color, pedúnculo de tamaño medio y poco lignificado. Las uvas tienen un tamaño entre pequeño y mediano, con forma elipsoidal, ligeramente puntiaguda. Su piel es gruesa, muy oscura azulada y con mucha pruina, es jugosa y bastante consistente sin llegar a ser dura. La mencía es sensible al oídio y al mildiu y a enfermedades de la madera. Su sensibilidad a la botritis no es demasiado alta ni su afectación por los ácaros. La planta no es muy productiva y, aunque presente una buena acidez de entrada, hay que estar muy pendientes a la hora de su vendimia, ya que cualquier alteración en el racimo puede disminuir su virtuosa frescura.
Zonas de cultivo.
La Mencía es la variedad de uva recomendada en las CC. AA. de Castilla y León, Asturias, Galicia, Castilla-La Mancha y Cantabria. De igual forma se es cultivada en la zona más septentrional de Portugal, de donde se cree que procede como resultado del cruce de las variedades Patorra y Alfrocheiro, uvas tintas de las regiones de Douro y Dão, respectivamente. La distribución de la Mencía se localiza en su mayor parte en El Bierzo y en el sureste de Galicia, donde están concentradas las denominaciones de origen de Monterrei, Valdeorras y Ribeira Sacra, siendo en las parcelas de esta última cultivada en bancada desde tiempos de la Antigua Roma.
Vinos.
No es una uva fácil de elaborar, pero bien trabajada da unos vinos de excepcional factura La mencía genera vinos de intenso color frambuesa, aromas intensos a frutas, pero también delicados a flores, buenas dosis alcohólicas, buena acidez y posibilidades de crianza. Aunque en algunas zonas como el Bierzo, la Ribeira Sacra o las Rías Baixas, hasta hace poco los tintos a base de mencía eran más bien vinos ligeros, prontos para beber, y de baja graduación alcohólica, poco a poco han ido transformándose, especialmente en el Bierzo y la Ribeira Sacra, en vinos que buscan sacar a flote toda su potencia, la expresividad del terruño, y la buena capacidad de envejecimiento que está demostrando tener la mencía, añadiendo crianzas en madera más prologandas. Esto está propiciando un renacer de esta cepa, que estudios recientes asemejan mucho con la Cabernet Franc, de ahí que algunos vinculen su origen con Burdeos. Los vinos de uva Mencía son vinos con cuerpo, de estructura medio-alta, con gran color y acidez. Su boca ofrece sensaciones aterciopeladas, llenas, sedosas. En nariz son muy afrutados, con aromas a frutas rojas, maduras, herbáceos, minerales.

Español [ ES ] Lacima nace de uva mencía procedente de tres viñedos: de un viñedo de más 50 años, plantado a 400 m. de altitud en suelos de esquistos y pizarras fuertemente meteorizadas y con gran capacidad drenante; de un viñedo de 60-90 años, plantado a una altitud de entre 300 y 450 m. en suelo pizarroso; y de un viñedo de 50-80 años de edad, plantado a más de 500 m. Se recomienda decantar. Debido a que se ha embotellado sin filtrar, puede presentar residuos sólidos. Fermentación maloláctica en barricas. Envejecido sobre lías durante 20 meses en barricas de roble francés y, posteriormente, en botella durante 18 meses más.
