Dehesa del Carrizal: Brand.
El fundador.
El fundador de la bodega Dehesa del Carrizal, Marcial Gómez Sequeira, plantó su primer vid en 1987 en Retuerta del Bullaque (Ciudad Real). Esta bodega de reconocido prestigio se incluye en el Club de Calidad de Turismo Enólogico. Para elaborar caldos de calidad, Dehesa del Carrizal se apoya en unas modernas instalaciones que les permite tener capacidad para 250 mil kilos de uva. Además, para el envejecimiento de sus vinos con crianza, cuenta con 1.000 barricas. Todo el viñedo está conducido sobre espaldera en cordón royat y tienen a disposición una moderno sistema de riego por goteo subterráneo, que permite en los meses muy caluroso de verano aportar un poco de agua a las viñas.
Hasta finales de los 90, Marcial Gómez fue ampliado la extensión de viñedos y de variedades cultivadas por Dehesa del Carrizal y a día de hoy cuentan con 22 hectáreas de viñedo. Y como variedades ademas del Tempranillo cultivan el Syrah, Chardonnay y Merlot.
El pago.
Dehesa del Carrizal está situada en los Montes de Toledo, cerca del Parque Nacional de Cabañeros, entre las cuencas del Tajo y del Guadiana. Dehesa del Carrizal es un Vino de Pago, la más alta calificación que contempla la legislación. Se trata de una Denominación de Origen Protegida y limitada a 15 bodegas españolas. La singularidad del enclave, los suelos y el clima hacen que se obtengan vinos excepcionales. Según la ley 24/2003 del 10 de julio de la viña y el vino se considera pago a “Un paraje rural con características edáficas y de microclima propias que lo diferencian y distinguen de su entorno, y donde se obtienen vinos con rasgos y cualidades singulares. Además, la producción de uva, la elaboración del vino y el embotellado deben realizarse dentro del pago, siguiendo estrictamente las normas de producción reguladas por Orden Ministerial específica para cada Pago”. En ella se define exactamente cómo debe elaborarse cada uno de los vinos para ser aprobados por la Comunidad Autónoma, por el Ministerio de Agricultura de España y, finalmente, por la Unión Europea. El Pago se sitúa, de esta manera, al mismo nivel de un Consejo Regulador.
Bodega.
La elaboración se realiza íntegramente en nuestra finca, superando estrechos controles de calidad. Con los años, nuestro viñedo está dando cada vez mejores resultados. Apostamos por la enología responsable.
Elaboración.
La elaboración se realiza íntegramente en nuestra finca, superando estrictos controles de calidad. Comprende varias fases: vendimia, transporte, enfriamiento, selección y fermentación. Todo el proceso se realiza con el máximo cuidado para que la uva quede entera, consiguiendo que mantenga su calidad del viñedo al depósito. Se inicia entonces la fermentación y el paso por la cuba correspondiente –madera francesa, hormigón o acero inoxidable–, donde se van incorporando los diferentes matices. Ésta finaliza en el momento del descube donde termina una compleja dinámica de disolución de los componentes de la uva en el vino. Un seguimiento muy preciso de esa fermentación es primordial y se realiza con catas diarias. Al final del descube, el vino se pasa a barricas y el orujo se extrae de la cuba y se aprieta con nuestra prensa vertical que dará lugar al llamado vino de prensa. Esa operación es muy delicada y le damos todo el cuidado pues de su éxito depende la calidad del futuro ensamblaje.
Crianza.
Tras la fermentación, los vinos pasan a nuestro parque de barricas de roble francés de diferentes maestros toneleros y niveles de tostado, según sean necesarios para cada vino. Así descansarán para seguir perfilándose. La puesta en barrica busca la finura aromática y la potencia tánica, complices naturales en nuestros vinos. Las condiciones de humedad y temperatura son siempre muy controladas. El frío invernal favorece la precipitación de los compuestos inestables, mientras que la subida de las temperaturas en verano acelera las reacciones químicas y permite al vino evolucionar en suavidad. Cada 3 ó 4 meses realizamos un trasiego que consiste a pasar el vino de una barrica a otra con mucho cuidado para separar las lías depositadas del vino limpio. Así el vino gana una limpidez notable por decantación natural. En Dehesa del Carrizal un tercio del parque de barricas es renovado cada año.
Ensamblaje.
Pocas decisiones son tan importantes en la elaboración del vino como el ensamblaje. Se trata de una operación de selección y de creación. Los lotes se fusionan en algo superior a los elementos que lo componen. Este momento llega después de la puesta en barrica, pero pensamos en él desde el primer día que empezamos a probar los lotes provenientes de parcelas diferentes. Cada variedad y/o cada parcela aporta su diferencia que permite generar un vino de gran complejidad y equilibrio. Nuestro Chardonnay también pasa por una selección rigurosa. Su crianza dura de 3 a 5 meses y todas la barricas son catadas para definir el lote final. Al finalizar el proceso de crianza, nuestros vinos pasarán el resto de su vida en una botella donde seguirán madurando, a veces durante unos años.

Origen.
La variedad Petit Verdot es una uva tinta clásica para los ensamblaje de los vinos en la región de Burdeos. Su origen no es preciso, incluso se cree que su cultivo en la región es anterior al de la cabernet sauvignon. Sus características sugieren una procedencia de latitudes más cálidas que la zona de la Gironde. La petit verdot está emparentada con las cepas Tressot y Duras. Estas variedades pudieron haber sido introducidas por los romanos en su avance hacia el interior desde el Mediterráneo. En un principio se plantó en la región de Burdeos y, al no poder ser utilizada para los propósitos que se tenía pensado, las vides de esta variedad, los viticultores comenzaron a reemplazarse a mediados del siglo XX y cayó en el olvido. Desde hace pocos años, esta cepa goza de un resurgimiento en Burdeos.
Características.
La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia La uva petit verdot se desarrolla en cepas muy fértiles, medianamente vigorosas, porte semierguido y entrenudos muy cortos. Su brotación y maduración son tardías. Los racimos son reducidos de tamaño, poco compactos y con un pedicelo muy largo. Las bayas son pequeñas, esféricas, muy uniformes en todo el racimo, con piel oscura de color violeta, con una cicatriz estilar muy marcada, rodete grueso y pedicelos largos, de difícil desprendimiento. Su hollejo es grueso y su pulpa, sin pigmentación, es compacta, muy jugosa y con sabor que recuerda a las frambuesas. Al ser una uva de brotación temprana y maduración tardía, la viña petit verdot es sensible al clima helado de los comienzos de la primavera y del invierno, lo que dificulta su cultivo. Es una variedad muy rústica, con buena adaptabilidad a todo tipo de suelos y a la sequía, poco sensible al mildiu, al oídio y bastante resistente a la podredumbre gris. Es muy sensible a la polilla del racimo y a los ácaros y tiene elevados requerimientos en magnesio y fósforo, y bajas necesidades en nitrógeno y potasio.
Zonas de cultivo.
La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia donde, debido a sus características climáticas, tienen ciertos problemas para la maduración, por lo que fue sustituida por otras variedades más adecuadas, pero hace algunos años se volvió a plantar en Burdeos. En España, donde fue introducida en 1991, en Ronda, por el enólogo Juan Manuel Vetas, se están obteniendo vinos muy interesantes por disponer de un mayor número de horas de insolación y una temperatura media más alta. Es variedad autorizada para las Comunidades autónomas de Andalucía, Castilla-La Mancha, Castilla y León, Extremadura, Región de Murcia y Comunidad Valenciana. También se encuentran plantaciones de viñedos de petit verdot en Australia, país que cuenta con la mayor extensión territorial de esta vid, Argentina y , Estados Unidos, específicamente California.
Vinos.
Las características organolépticas de los vinos de petit verdot se podrían caracterizar por una fase visual de color rojo violáceo, intenso, brillante, con aromas de frutos rojos, ciruelas y moras combinadas con una nariz más acaramelada, vainilla y moca, adquiridos en su crianza en barrica, por lo que presenta una gran complejidad aromática. En boca tiene un gran gran volumen, muy graso y carnoso con una acidez bien marcada. Los taninos son dulces y bien equilibrados con la dulzura de la fruta y de la madera. Sus aromas también se han comparado a las virutas del plátano y del lápiz. Adquiere fuertes tonos violáceos durante el proceso de maduración. Cuando la uva alcanza su plena madurez, produce vinos con mucho cuerpo con taninos cautivadores y ricos en color. Debido a esto, petit verdot ganó su fama como una uva de mezcla popular en los vinos de Burdeos, pero hoy solo juega un papel más pequeño en las mezclas.
