La región vitivinícola Mosela es la más conocida de las 13 regiones vitivinícolas alemanas y, al mismo tiempo, el tercer mayor productor de vino en Alemania. La región vinícola sigue el curso del Mosela que comienza en Francia y desemboca en Alemania, donde gira bruscamente durante 150 millas (250 km) y se deposita en el Rin en su camino hacia el Mar del Norte. Es a lo largo de esta sinuosa garganta del río donde encontramos los vinos Riesling más clásicos del mundo. desde Coblenza hacia el suroeste hasta la frontera con Luxemburgo y Francia. Historia.
En los valles de Mosel y Rin, la vid silvestre creció mucho antes de que los seres humanos se establecieran allí, pero para los vinos alemanes la historia comienza con la conquista romana. Los primeros en cultivar la vid en Alemania fueron los legionarios romanos y, en la Edad Media, los monasterios continuaron desarrollando viticultura mediante el cultivo de los mejores viñedos. Un buen ejemplo es el monasterio cisterciense Eberbach, en Rheingau. Tal como sucedió en Borgoña, cuando Napoleón conquistó el valle del Rin, las grandes propiedades de los monasterios se dividieron entre el estado y los campesinos. Después de la Segunda Guerra Mundial, los vinos alemanes, el "Liebfrauenmilch" o el "Kröver Nacktarsch", no alcanzaban una calidad suficiente, es decir, eran excesivamente dulces y de muy bajo costo, eso dañó la reputación del Riesling a nivel internacional. Para lavar esa imagen negativa, un grupo de viticultores alemanes consiguieron en la década de los setenta y ochenta trabajar la calidad de las cepas, a riesgo de lastrar la cantidad, hasta conseguir lo que hoy en día reconocidos enólogos llaman el "Boom del Riesling". Entre las ciudades de Trier y Koblenz, a lo largo del río Mosela y sus afluentes, Saar y Ruwer, encontramos uno de los mejores distritos vitivinícolas de Alemania. Los vinos que provienen de las laderas de las terrazas son vivos, ligeros, elegantes.y tiene un encanto sin igual entre los vinos blancos del mundo. Muy por encima de las laderas, donde se obtienen los mejores vinos Riesling, dominan las tierras de pizarra. En el fondo del valle, la tierra se vuelve arcillosa y más fértil y aquí se cultiva el Müller Thurgau especialmente para la producción de vinos más simples. El Riesling de esta zona da un vino con reflejos verdosos, a veces casi espumosos, ligeros, con un maravilloso aroma a flores y con notas de minerales y pedernal. Los vinos más importantes se encuentran alrededor de Wiltingen y Sharzhofberg en el Sarre y Ruwer en el centro de Mosela, alrededor de Piesport, Brauneberg, Bernkkastel, Graach, Wehlen, Zeltingen y Erden.
Riesling.
La región vinícola Q.b.A. Mosel es especial por sus vinos Riesling, una uva que se caracteriza, en general, por sus aromas frescos y claramente distinguibles cuando es joven, y que armonizan al envejecer, especialmente al llegar a diez años de envejecimiento. Los viñedos de Riesling representan más del 60% de las cepas plantadas, conviviendo con el Müller-Thurgau que es la segunda en importancia. Originaria de Alemania, la uva riesling es la más conocida en su país natal, muy apreciada por su característica “transparencia” y la influencia del suelo en sus aromas. El riesling alemán se caracteriza, en general, por sus aromas frescos y claramente distinguibles cuando es joven, y que armonizan al envejecer, especialmente al llegar a diez años de envejecimiento. El valle del Mosel es ideal para la producción del Riesling porque permite que las uvas tengan una agradable acidez y, por lo tanto, una mejor conservación a través de los años. Además, el tipo de tierra es rocosa y de grano fino, durante el día tiende a calentarse y cuando llega la noche mantiene el calor para que las uvas no se congelen, así no se interrumpe el proceso natural de fotosíntesis de las plantas. Esta característica facilita el drenaje del agua en época de lluvias. Los vinos.
Los mejores vinos de Mosel pueden competir fácilmente con los vinos blancos de más alta calidad del mundo. Son vinos ligeros con bajo contenido de alcohol, notas minerales y un muy buen equilibrio entre dulzura y acidez. Estos vinos de Mosel Riesling pueden ser secos o dulces, pero los aromas primarios son fáciles de identificar pues son distintos al resto de uvas. A la vista son de color amarillo pálido que van ganando intensidad a medida que envejecen. Su nariz, cuando son jóvenes, tiene una intensidad media con notas de lima y melaza, a veces con aromas ligeramente reductores de notas plásticas o minerales. A medida que los vinos envejecen, revelan aromas de alta intensidad de miel, albaricoque,limón meyer y petroleo. Ese olor a hidrocarburo puede ser desagradable para algunos, pero para otros es un indicador clásico del Riesling alemán. En boca tiene una estructura que hace que sea tan intrigante, alto en acidez que se equilibra con cierto nivel de dulzura. Los vinos secos tienen alrededor de 6-10 g/l de azúcar residual y los vinos semidulces pueden tener hasta 30-40 g/l. La acidez persiste en el paladar y produciendo un agradable hormigueo. En términos generales, los vinos de Mosel tienen un contenido de alcohol bajo a medio bajo que varía entre 7.5 y 11.5. La variedad pinot negro, o más conocida con el nombre en francés pinot noir, pertenece a la familia de las uvas pinot y, aunque no está muy claro el origen de la variedad, se piensa que la pinot noir fue la primera de la familia de las pinot, y una de las primeras variedades obtenidas a partir de viñas silvestres en la parte occidental de Europa Central. A la región del Lago de Constanza llegó alrededor del año 900. En la región de Rheingau comenzó a cultivarse en el siglo XIII. Los perfiles de ADN de la pinot gris y la pinot blanc son idénticos a los de la pinot noir, así que parece claro que se derivan de ella. Sea como sea, las pinot son una familia, y una familia muy querida, entre las que se cuentan otras mutaciones como la pinot meunier o la pinot gouges o musigny. El nombre pinot noir es de origen francés y, probablemente, de las palabras pino (pine) y negro (noir), ya que esta variedad tiene los racimos en forma de cono, como las piñas.
Características.
Las cepas medianamente vigorosas, de porte tumbado, y presentan un desborre y maduración precoces. Desarrollan racimos pequeños, cilíndricos o cónicos, de forma similar a una piña, muy compactos y uniformes, con pedúnculo corto y sin lignificación. Las uvas son pequeñas o medianas y esféricas, tienen una piel oscura, casi negra y azulada, presentando una cicatriz estilar muy marcada y de difícil desprendimiento de su pedúnculo. A pesar de tener un hollejo grueso, es muy sensible al agrietado y a los roces. La pulpa es antociánica, poco o nada pigmentada, blanda y muy jugosa con sabor herbáceo. ES una variedad muy delicada en su cultivo, ya que es muy sensible a las enfermedades fúngicas de la madera a la botritis y al desecado del raspón. Es sensible al mildiu, al oídio y al corrimiento climático, así como a la polilla del racimo, a los cicadélidos y a los ácaros. Se adapta bien a climas templados y a todo tipo de suelos, siempre que tengan buen drenaje, aunque lo ideal sería elegir suelos argilocalcáreos. Es sensible a los fríos primaverales y muy sensible a temperaturas excesivas en verano, ya que se solean sus racimos y pierde muy pronto sus hojas. En climas cálidos madura muy rápidamente y es sensible a las quemaduras solares del fruto. Tiene altas necesidades de magnesio, respondiendo muy bien a los aportes de fósforo y tiene bajos requerimientos en nitrogeno y potasio. La variedad pinot noir recibe también el nombre de Spätburgunder, burgunder, pineau, klevner, plant fin, noirien, pinoz y dorada.
Zonas de cultivo.
La pinot noir es originaria del viñedo de Borgoña, concretamente de la región de Côte-d'Or. También se planta en Italia, España, Alemania, Luxemburgo, Hungría, Kosovo, la Macedonia del Norte, Moldavia, Grecia, Rumanía, Serbia, Eslovenia, Suiza, Bulgaria, República Checa, Eslovaquia, Ucrania, el norte de Croacia, la República de Georgia, Israel, Chile, Argentina, Uruguay, México y Estados Unidos. En Alemania se cultivan unas 11.800 hectáreas de pinot noir, conocida como spätburgunder, lo que representa más del diez por ciento del total de las parras en el país. La mayoría de los viñedos de pinot noir se hallan en Baden (casi 5.900 hectáreas) y en el Palatinado (casi 1.600 hectáreas). Otras regiones importantes de cultivo son Rheinhessen, Wurtemberg, Rheingau y la cuenca del Ahr.
Vinos.
La variedad pinot noir produce mostos con mucho azúcar, siempre que la uva haya tenido una maduración correcta. Estos mostos, de acidez media, recien prensados son incoloros, pero si se mantienen en contacto con los hollejos, rápidamente toman un color primero rosa intenso y posteriormente rojo rubí intenso muy brillante aunque con reflejos marronáceos, por ello pueden dar vinos blancos por sangrado o escurrido rápido y tintos en elaboraciones habituales. Produce un vino de alta calidad apto para crianza, fino, con intensidad y complejo. Es una variedad adecuada para cavas, champagne y vinos de aguja y también para vinos de crianza con cuerpo y vigor, con alta complejidad aromática. El gran rango de buqués, sabores, texturas e impresiones que produce el pinot noir a veces confunde a los que lo prueban. Grosso modo, sus vinos tienden a tener un cuerpo de ligero a medio, con reminiscencias aromáticas a cereza, frambuesa y, en menor medida, grosella, y a otras pequeñas frutas rojas y negras. Tradicionalmente, el tinto de Borgoña de esta variedad es famoso por su sabrosa intensidad, aromas "granjeros" (característica asociada con el tiol y con otros compuestos), pero con el cambio de las modas, las técnicas de vinificación y con clones más modernos y fáciles de cultivar se ha favorecido un vino con más sabores a frutas y con un estilo más limpio.
