La familia Domènech es originaria de Falset, y ha querido recuperar una de las fincas más emblemáticas del Priorato, con el interés renovado por descubrir por descubrir y crear nuevos vinos. Mimo incondicional a la cepa.
Joan Ignasi Domènech, propietario de la bodega, es un empresario cuya única vinculación con el mundo del vino era, en un principio, que su familia procedía de Falset (Priorat). En 2002, atraído por el apasionante mundo del vino y con el apoyo de su esposa y de sus dos hijos, creó su propia bodega: Vinyes Domènech, esencialmente una emblemática finca con 10 ha. de viñedo situada en un entorno con un gran valor ecológico, toda la finca, 15 ha., está situada dentro de un espacio natural protegido. Pero Joan Ignasi es, sobre todo, una persona entrañable que habla de sus viñedos y de sus vinos con toda ternura, preocupado por alguna pobre cepa que quizá no consiga sobrevivir al rigor del invierno; no es una táctica comercial, es amor verdadero: mima sus viñedos y éstos le ofrecen lo mejor de si. El paisaje que rodea los viñedos de Vinyes Domènech es de una belleza excepcional: un entorno en el que la actividad humana parece haber actuado sólo en su justa medida o, como a Joan Ignasi le gusta llamarla, 'su Toscana particular', un lugar para perderse entre olivos, almendros y viñedos, una atmósfera en la que sólo se respira paz y tranquilidad.
El entorno y sus vinos.
Situados a los pies de la sierras de Llaberia y del Montalt, con el mar mediterráneo a sus espaldas y el Montsant al norte, estos viñedos gozan de un microclima favorable para obtener óptimas maduraciones y de unas características singulares, en cuanto a suelos y orientaciones, perfectas para el cultivo de una uva de gran calidad. Y para conseguir transmitir toda la personalidad de este magnífico entorno y terruño, la familia Domènech cuenta además con la profesionalidad de uno de los enólogos mejor considerados hoy en día en la zona, Toni Coca. Vinyes Domènech cuenta con varios vinos en el mercado, entre los cuales destacan Furvus, Teixar, Rita, y un tercer tinto, Bancal del Bosc. Las primeras Denominaciones de Origen vinícolas españolas fueron reconocidas en 1932 en el Estatuto del Vino promulgado por el gobierno estatal, entre las que figuraba la DO Tarragona. Dentro de los límites de la DO Tarragona se diferenciaba la "subzona Falset", que ocupaba el actual territorio de la DO Montsant. Finalmente, teniendo en cuenta las características específicas de nuestros vinos y la importancia del cultivo de la vid en la zona, en 2001 se aprobó la creación de la Denominación de Origen Montsant, que arrancaba con 28 bodegas inscritas, y hoy cuenta ya con 53. Estos 53 bodegas se encuentran repartidos entre 16 municipios, la mayoría de la comarca del Priorat y algunos de la Ribera de Ebro: Cabacés, Capçanes, Cornudella de Montsant, Darmós, Els Guiamets, El Masroig, El Molar, Falset, La Bisbal de Falset, la Figuera, la Serra d'Almos, la Torre de Fontaubella, Marçà, Margalef, Pradell de la Teixeta y Ulldemolins. El Consejo Regulador.
Los vinos de la DO Montsant están amparados por la normativa del Consejo Regulador de la Denominación de Origen. Este organismo está integrado por los representantes del entorno vitivinícola: viticultores, elaboradores y la Administración Pública. Su misión es garantizar la tipicidad y la calidad de los vinos que se producen en el territorio. El reglamento de creación, publicado en el Diario Oficial de la Generalidad de Cataluña el día 5 de noviembre de 2001, establece las especificidades de todos los vinos que se producen bajo el amparo de la DO. Este reglamento fue actualizado y publicado en el DOGC el 28 de junio de 2005, y es vigente en la actualidad. El control de los vinos se ejerce desde la viña hasta su comercialización. Los vinos se someten a diferentes controles analíticos y organolépticos para conseguir el sello de garantía de la DO, que le acredita ante el consumidor como un vino de la DO Montsant. Un panel de catadores se encarga de llevar a cabo la cata sensorial de calificación de los vinos que salen amparados con el distintivo de la DO Montsant.
El estudio de las zonas.
El estudio de zonificación de la DO Montsant, iniciado en 2008 en colaboración con el NCAVI, es un proceso de autoconocimiento de la propia DO para profundizar en el vínculo del vino con el territorio, afianzar su identidad y explotar su potencial vitivinícola. A partir del análisis de diferentes parámetros como el clima, el paisaje, los suelos, y del ciclo fenológico de viñedos de garnacha y cariñena, se ha llevado a cabo la segmentación de la DO Montsant en 6 zonas diferentes. Aunque estas primeras conclusiones, la DO Montsant se encuentra inmersa todavía en este proceso de autoconocimiento. Los estudios de zonificación son un proyecto vivo que a la larga debe permitir llegar a conocer todas las características de la zona parcela a parcela hasta saber qué carácter transmiten estas variables en las cepas allí plantados y, en consecuencia, a sus uvas y vinos.
Las Garnachas y Cariñenas.
Las garnachas y las cariñenas son las variedades más representativas del territorio de la DO Montsant, con un 37% y un 31% respectivamente. Con estos datos en la mano, la DO Montsant apuesta por dar valor a estas variedades autóctonas y, en su voluntad de autoconocimiento, inicia este proyecto en colaboración con el VITEC, el Parque Tecnológico del Vino de Falset. A partir de sus primeros estudios de zonificación, el año 2016, la DO Montsant se propone conocer a fondo cómo son sus garnachas y cariñenas, y qué diferencias presentan en función de la zona donde se encuentran plantadas. De cara a la elaboración de este estudio de caracterización se han seleccionado una veintena de viñedos de ambas variedades y de diferentes zonas, pero que comparten rasgos comunes como, por ejemplo, la edad de la cepa. Han sido viñedos vendimiadas en el mismo punto de maduración y se han vinificado igual (en depósitos de acero inoxidable, sin madera). De este modo, sin diferencias de ningún tipo, los matices vendrán dados por la zona donde crecen y su entorno. Las vinificaciones hechas hasta ahora están ayudando tanto a los viticultores como a los enólogos a trabajar estas variedades en las mejores condiciones posibles. De momento, los resultados analíticos de los parámetros estudiados por VITEC y las valoraciones de los técnicos del centro y los enólogos de la DO establecen grandes diferencias entre ellas. Diferencias que van desde la coloración, la tanicidad, la acidez o el grado alcohólico hasta matices que afectan el volumen en boca, a la presencia de notas florales o fruta, los toques de hierbas aromáticas.
Ejes de trabajo de la D.
O. Montsant.
La DO Montsant tiene marcada una política de trabajo que se centra en tres puntos, como son, el control, para garantizar la trazabilidad y la calidad del producto. Esto pasa por mantener el control de la procedencia de la uva durante la vendimia y para controlar los puntos de venta del producto etiquetado como DO Montsant. Otro punto es la promoción, que durante los últimos años, la DO Montsant ha dedicado una parte importante de sus esfuerzos en los principales mercados exteriores, tanto con acciones en el punto de destino como con diferentes misiones inversas. Siempre sin descuidar el mercado catalán, tan importante para la DO Montsant por el contacto directo con el consumidor, y por último, el conocimiento: La DO Montsant se encuentra inmersa en dos grandes proyectos, LIFE Priorat-Montsant y PECT Priorat. De esta manera, con recursos propios y ajenos, se trabaja para conocer los beneficios de las prácticas sostenibles, tanto en el campo como en la bodega, y para tener un conocimiento en profundidad de las 1.860 ha que integran la DO. La voluntad es adquirir todo este conocimiento para luego transmitirlo a todos los que forman parte de la DO Montsant.

El origen de la uva garnacha está localizado, según se ha comprobado ampelográficamente, en la región de Aragón, en el noreste de España. Desde allí fueron llevados a otros territorios de la Corona de Aragón, como Cerdeña o el Rosellón, en el sur de Francia. Uno de los primeros nombres que recibió fue "tinto aragonés”. En Cerdeña se conoce como cannonau, donde se afirma que se originó allí y que se extendió a otras tierras del Mediterráneo que estaban bajo el gobierno de Aragón. La garnacha ya estaba bien difundida a ambos lados del Pirineo cuando la región de Rosellón fue anexionada por Francia. A partir de ahí la vid se abrió camino a través de Languedoc y al sur de la región del Ródano, donde quedó bien asentada en el siglo XIX. A pesar de su preponderancia en las cercanas regiones de Navarra y Cataluña, la garnacha no fue plantada ampliamente en La Rioja hasta principios del siglo XX, cuando se replantaron los viñedos después de la epidemia de filoxera. Australia comenzó a plantar cepas de garnacha en el siglo XVIII, convirtiéndose en la variedad de uva de vino tinto más plantada del país hasta que fue superada por la syrah a mediados de los años sesenta. En el siglo XIX, los viticultores de California apreciaron la capacidad de la vid para producir altos rendimientos y soportar el calor y la sequía.
Características.
La variedad garnacha crece en cepas muy vigorosas de porte erguido, con elevada fertilidad y muy productivas. Los racimos son entre medianos y grandes, muy compactos y de bayas bastante uniformes, con pedúnculo corto. Las bayas son medianas de tamaño, esféricas, con epidermis de color rojo violeta oscuro, de difícil desprendimiento de su pedicelo. Su hollejo es fino, muy sensible a roces y con mucha pruina. La consistencia de su pulpa es blanda, muy jugosa, sin pigmentación. La garnacha tinta es una variedad muy sensible al mildiu tanto en hojas como en racimos, al black rot, a la excoriosis y a la yesca. Resiste muy bien al oídio, pero no al oídio tardío. Es muy sensible a distintos tipos de corrimientos ya sean fisiológicos, por frio, o inducidos por determinados patrones como Rupestris de Lot. Se ve bastante afectada por la polilla del racimo y los cicadélidos. Sensible a la necrosis bacteriana y a los virus del amarillo y bandeado de nervios, así como al desecado del raquis y por ello con altos requerimiento en magnesio. Su sensibilidad a la botritis y a la podredumbre ácida es media. No tolera bien los suelos muy húmedos o encharcados. Las cepas de garnacha son algo sensibles al corrimiento y poco a la eutipiosis y a los ácaros. Son cepas que resisten muy bien el viento y la sequía, adaptándose a cualquier tipo de suelo. Sus podas han de ser cortas, dando buenas producciones y de calidad al disponerse en espalderas, pero producciones excesivas reducen el color y minimiza su contenido en azúcar y pierde aroma. También es exigente en fósforo y boro. Poco exigente en nitrógeno.
Zonas de cultivo.
La garnacha está muy presente en todo el mundo, destacando Francia y España, aunque desde finales del siglo XX la superficie plantada ha ido decreciendo debido a que se han puesto de moda otras viñas como tempranillo, cabernet Sauvignon y merlot. En España es común en Borja y Cariñena, ambas en Aragón. Se usa en las zonas de Denominación de Origen Calificada de la Rioja y Priorato, además de en las áreas montañosas al suroeste de Madrid, al norte de la provincia de Toledo (D.O. Méntrida) y en Cebreros (Ávila). Otras regiones vitícolas con considerables plantaciones de garnacha incluyen Costers del Segre, L'Empordá-Costa Brava, La Mancha, Madrid, Penedés, Somontano, Tarragona, Terra Alta. Es una variedad recomendada en las comunidades autónomas de Aragón, Castilla-La Mancha, Castilla y León, Cataluña, Extremadura, Madrid, País Vasco y Comunidad Valenciana y otras con menor presencia. Es la uva protagonista de una gran mayoría de los vinos rosados de la D.O. Navarra. Vinos.
La garnacha es una uva que se utiliza, en muchas zonas, para mejorar el color y la graduación alcohólica de vinos de otras variedades. Los Los vinos jóvenes de garnacha tienen aromas de pimienta recién molida pero manteniendo aromas de frambuesa y moras. Al envejecer, con poca crianza en barricas de roble, los vinos mantienen su color potente, adquieren aromas a fruta madura, manzana y toques minerales, sobre todo los procedentes del Priorato. Son vinos de grado alcohólico elevado, afrutados, redondos y amables, con gran intensidad aromática (frutas negras muy maduras, ciruelas secas) y con buena capacidad de crianza.
