A los pies de un paraje tan mágico e histórico como Castel del Monte, una fortificación de Puglia construida por Federico II de Suabia y nombrada Patrimonio de la Humanidad por la Unesco, la bombino nero es una variedad de maduración tardía y presenta unas perfectas condiciones para la vinificación de rosados, a los que otorga una nariz y un paladar concentrado y delicado a la vez. Los viñedos se localizan a una altitud cercana a los 600 metros y cuentan con una óptima exposición. Los suelos ricos en minerales, los mismos con los que se construyó el cercano Castel del Monte, otorgan a los vinos una frescura y un nervio envidiables y un amplio abanico de fragancias afrutadas en nariz. La sabia vinificación de estos vinos, con un tiempo inicial en depósitos de acero seguida de varios meses de afinamiento en botella, no hace sino destacar esta riqueza aromática.
