Pero una Denominación de Origen, además de un lugar concreto y de un conjunto de reglas de elaboración, está constituida también por los operadores: los viticultores y bodegueros que hacen posible los vinos y que son, en definitiva, los responsables de que la Denominación alcance y mantenga su prestigio entre los consumidores. La tutela de las Denominaciones de Origen "Jerez-Xérès-Sherry" y "Manzanilla - Sanlúcar de Barrameda" está legalmente encomendada al Consejo Regulador. Desde el punto de vista jurídico, el Consejo Regulador de las Denominaciones de Origen es una Corporación de Derecho Público representativa de intereses económicos y sociales que en el ejercicio de determinadas facultades públicas actúan con el carácter de órgano desconcentrado de la Consejería de Agricultura y Pesca de la Junta de Andalucía. Dicho de forma simple, en el Consejo Regulador confluyen una dimensión "privada", puesto que representa los intereses privados de todos los viticultores y bodegas inscritas; y una dimensión "pública", pues actúa por delegación de la Administración en una serie de materias directamente relacionadas con la gestión y tutela de un bien que tiene un carácter público, como es la propia Denominación de Origen. Nuestro Consejo Regulador fue el primero en publicar el Reglamento de una Denominación de Origen con arreglo a lo dispuesto en el Estatuto del Vino español del año 1933: el de "Jerez-Xérès-Sherry". Por tanto, estamos hablando de la Denominación de Origen más antigua de España.
Origen geográfico.
La Zona de Producción de los vinos amparados por las Denominaciones de Origen "Jerez Xérès Sherry" y "Manzanilla - Sanlúcar de Barrameda" está situada en el extremo sur de la península ibérica. Sólo los viñedos de los términos municipales de Jerez de la Frontera, El Puerto de Santa María, Sanlúcar de Barrameda, Trebujena, Chipiona, Rota, Puerto Real, Chiclana de la Frontera y Lebrija situados en terrenos que el Consejo Regulador considere adecuados pueden producir uva para la elaboración de vinos de Jerez y Manzanilla. En la actualidad la Zona de Producción ocupa una superficie de unas 7.000 hectáreas. Dentro de la Zona de Producción se distingue la tradicionalmente designada como "Jerez Superior", integrada por las viñas plantadas en tierras de albarizas que por la constitución físico química de las mismas, su situación y características climatológicas son las idóneas para la producción de vinos de calidad superior. Otra importante delimitación geográfica es la llamada "Zona de Crianza", también conocida como el Triángulo del Jerez. Sólo en las ciudades de Jerez de la Frontera, El Puerto de Santa María y Sanlúcar de Barrameda puede completarse el proceso de crianza de los vinos amparados por la Denominación de Origen "Jerez-Xérès-Sherry" y por tanto sólo en estas ciudades se encuentran las llamadas Bodegas de Crianza.
En el caso de la Denominación "Manzanilla - Sanlúcar de Barrameda", la correspondiente Zona de Crianza se limita exclusivamente a esta ciudad. Aunque la materia prima (uva o vinos base) para la Manzanilla puede provenir de cualquier lugar dentro de la Zona de Producción, el proceso de crianza debe de llevarse a cabo en Sanlúcar de Barrameda. Las especiales condiciones microclimáticas de esta ciudad, situada en la desembocadura del río Guadalquivir y a escasa distancia del Coto de Doñana, confieren a los vinos elaborados en sus bodegas mediante crianza bajo velo de flor unas características peculiares y diferenciadas del resto de los Vinos de Jerez. Las bodegas situadas en el resto de la Zona de Producción suelen producir mostos y vinos que luego son transferidos a las bodegas de la Zona de Crianza. No obstante también puede producir y comercializar su propio vino bajo el nombre de cada localidad.
Historia del Jerez hasta los romanos.
El carácter genuino del vino de Jerez, su propia identidad, no es solamente el resultado de un origen geográfico determinado, por más excepcionales que sean las condiciones naturales que confluyen en el Marco de Jerez. Durante 3.000 años, las distintas circunstancias históricas han ido moldeando la identidad de estos vinos, del mismo modo que el vino en sí, su producción, su comercio y su disfrute, han supuesto un factor determinante en la historia de esta región y en la identidad cultural de sus habitantes. Los vinos de Jerez son el resultado de la impronta dejada en esta tierra por culturas muy diversas y, a veces, de orígenes muy lejanos. Civilizaciones distintas que, seducidas por esta tierra, han ido sedimentando su aportación a un producto que es, por encima de todo, cultural. Las primeras noticias del vino de Jerez nos las proporciona Estrabón, geógrafo griego del siglo I a.C., quien en su libro Geografía, Libro III, escribía que las vides jerezanas fueron traídas a la región por los fenicios alrededor del año 1100 a.C. Los yacimientos arqueológicos de origen fenicio del Castillo de Doña Blanca, situados a 4 kms. de Jerez y en los que se han descubierto varios lagares para la elaboración de vino, confirman que fueron los mismos fundadores de la antigua Gades, Cádiz, los que trajeron hasta nuestras tierras el arte de cultivar la vid y elaborar el vino, desde las lejanas tierras del actual Líbano. Desde Xera, nombre que dieron los fenicios a la región donde hoy se ubica Jerez, este pueblo de comerciantes producía vinos que luego eran distribuidos por todo el Mediterráneo, especialmente en Roma. Hacia el año 138 a.C. Escipión Emiliano pacificó la Bética, dando comienzo a la dominación romana, e iniciándose una corriente comercial muy importante de productos de esa región hacia la metrópoli. Los gaditanos vendían a Roma aceite de oliva, vino de la región de Ceret y garum, una especie de salsa escabeche. Ya por aquel entonces la fama del "Vinum Ceretensis" traspasaba nuestras fronteras y era apreciado no sólo en Roma, sino en otros muchos rincones del Imperio. En los primeros años de nuestra, el gaditano Lucio Moderato Columela, recoge en su obra "De Rústica" lo que ha conformado durante siglos las bases del viñedo jerezano: los tipos de suelo y de vides, el emplazamiento de las viñas, las faenas que se le debían efectuar y en qué estación del año, la calidad del mosto resultante.
El Jerez desde los árabes a hoy.
En el año 711 da comienzo la dominación árabe en España, que en el caso de Jerez habría de durar más de cinco siglos. Durante todo este tiempo, Jerez siguió siendo un importante centro de elaboración de vinos, a pesar de la prohibición coránica de consumo de bebidas alcohólicas. La producción de pasas y la obtención de alcohol con distintos fines (perfumes, ungüentos...) y el uso del vino con fines medicinales actuaban en cierta forma como excusas para el mantenimiento del cultivo de la vid y de la elaboración de vino. De aquella época, en el año 966 el Califa Alhaken II decidió, por razones religiosas, arrancar 1/3 del viñedo jerezano. En 1264, el monarca castellano Alfonso X reconquista Jerez, dando lugar en años posteriores, a la repoblación de vides. Ya en el siglo XVIII, la tendencia a almacenar prolongadamente vinos de diferentes cosechas y la necesidad de abastecer al mercado con una calidad estable dio lugar a una de las aportaciones fundamentales de la vinatería jerezana: el sistema de envejecimiento de criaderas y solera. A finales del siglo XIX, el negro manto de la epidemia filoxérica arrasó los viñedos del Marco de Jerez, siendo la recuperación del viñedo jerezano relativamente rápida en comparación con otras zonas europeas. Se realizó una selección de las variedades de uva que aún hoy siguen utilizándose en la elaboración del vino de Jerez. Los años posteriores fueron años de prosperidad. En las primeras décadas del siglo XX, el vino de Jerez continuó expandiéndose por los mercados internacionales. Ya en el último tercio del siglo XIX, los bodegueros del Marco de Jerez, empresarios auténticamente adelantados de su tiempo, habían estado presentes en todos aquellos foros internacionales en los que se gestaba lo que habría de ser el posterior esquema jurídico de defensa de las Denominaciones de Origen. No es de extrañar por tanto que, en 1933, cuando se publica la primera Ley Española del Vino, ya ese texto recogiera la existencia de la Denominación de Origen Jerez. Amparados por el nuevo texto legal, los productores jerezanos se pusieron manos a la obra y en enero de 1935 se publicó finalmente el primer Reglamento de la Denominación de Origen Jerez y de su Consejo Regulador, el primero en constituirse legalmente en nuestro país.

El Palomino es la variedad base de los vinos de Jerez, traído en el siglo XVI por las tropas de Flandes y perfectamente adaptado a las características del medio y clima de las comarcas vitícolas andaluzas y extremeñas. La variedad blanca de uva palomino es una variedad autóctona española, utilizada en la elaboración de los vinos generosos de jerez y manzanilla, concretamente, la variedad es muy predominante en el Marco de Jerez, el triángulo formado por las localidades gaditanas de Jerez del Frontera, Sanlúcar de Barrameda y El Puerto de Santa María y que abarca, además las localidades de Chiclana, Chipiona, Puerta Real, Rota, Trebujena y Lebrija, de donde proceden estos vinos de fama mundial, donde representa el 95% del viñedo. Es una variedad complementaria para la elaboración de vinos en otras denominaciones españolas, concretamente, según el mapa interactivo del reparto de las variedades de uva españolas, Andalucía agrupaba cerca de 9.000 hectáreas de viñedo de esta variedad. Pero el dominio de la palomino en estas latitudes no siempre fue tan absoluto. la palomino fino se fue imponiendo poco a poco y lo venía haciendo ya desde el XVIII y XIX, pero su crecimiento y aumento de presencia fue a más de manera meteórica tras las replantaciones posteriores a la llegada de la plaga de la filoxera.
Características.
Dos son las claves del éxito de esta variedad, por un lado, su carácter neutro, perfecto para la elaboración de los vinos generosos. Por otro, su perfecta adaptación a las épocas del año idóneas para la vendimia en el marco. La palomino es una variedad de brotación y maduración tardía que resulta muy resistente a la sequía y sabe vivir en condiciones de adversidad. Sus racimos son grandes y tienen forma piramidal mientras que las bayas de las uvas son esféricas, aunque irregulares, de tamaño mediano y de un color que oscila entre el verde y el amarillo. También es conocida como palomino, palomino blanco, Chipiona y pinchito. Es una variedad muy resistente a la sequía y a los intensos calores estivales, bien adaptado, si el patrón es adecuado a los suelos calizos, en los que muy difícilmente muestra clorosis férrica. Es sensible a la rotura de sarmientos por el viento y es muy conveniente establecer las cepas en espaldera y podas en cordón. Es muy sensible al mildiu, al oídio, sobre todo en ataques a los racimos, a la podredumbre gris, la botritis y a los ataques de la polilla del racimo. No se ve muy afectada por las enfermedades de madera.
Zonas de cultivo.
Destaca el cultivo en Jerez, donde representa el 95% del viñedo. Se cultiva en la zona formada por Jerez de la Frontera, El Puerto de Santa María, Sanlúcar de Barrameda y Trebujena, todas ella comunidades gaditanas. Está admitido su uso, como variedad complementaria, en vinos de otras procedencias, como Tierra del Vino de Zamora y D.O. León. Según la normativa, es una variedad recomendada para la comunidad autónoma de Andalucía (donde es conocida como listán, palomino y palomino fino).
Vinos.
Con la variedad palomino se elaboran varios vinos de los considerados generosos secos. En los vinos de Jerez hay dos grandes ramales o familias: las que pertenecen a la crianza biológica y las que pertenecen a la crianza oxidativa. Además, están los amontillados y palos cortados a medio camino entre las dos crianzas. Todos ellos utilizan la variedad palomino en su elaboración, de hecho, los únicos vinos elaborados en Jerez que no utilizan la variedad palomino son los vinos dulces, que se elaboran con pedro ximénez y moscatel. Además, la variedad palomino también se utiliza para elaborar vinos jerezanos generosos licorizados con cierto dulzor, clasificados como pale cream, medium y cream. Además, el vino manzanilla, de la DO Manzanilla, situada en Sanlúcar de Barrameda, también se produce con la variedad palomino.
