Los vinos blancos secos de Chablis son una referencia a nivel mundial. Son muy reconocibles porque tienen una personalidad única marcada: un carácter mineral que viene de las tipicidades de sus suelos. El Chardonnay es la única cepa autorizada para producir vinos blancos en esta región. El nombre de Chablis viene de un pueblo de 3000 habitantes situado al norte de la región de Bourgogne Este viñedo tiene mucha historia: son monjes cistercienses que empezaron a producir vinos en Chablis en el siglo XII. Este viñedo de más de 4.000.- ha se divide en 4 denominaciones de origen (AOC): AOC Comunal Petit Chablis: alrededor del pueblo de Chablis, se toman más jóvenes
AOC Comunal Chablis, AOC Chablis 1er Cru (79 Crus o Climats); AOC Chablis Grand Cru (7 Crus o Climats: Les Clos, Vaudésirs, Valmur, Blanchot, Bougros, Preuses, Grenouilles). Tradicionalmente, en Chablis se usa toneles de roble para elevar el vino. Sin embargo, muchos productores cambiaron para usar sólo cubas de acero inoxidable. Existe hoy en día un debate entre los productores que usan barricas de roble y los que no las usan: los primeros defienden el hecho que el roble aporta más complejidad al vino, los segundos dicen que la madera daña el carácter único y mineral del Chablis.
La historia.
Sus orígenes vitícolas se encuentran en la era monástica, pero solo en las últimas décadas la región realmente se ha ganado su designación no oficial como porte d'or de Borgoña.o "puerta de oro". Al igual que en otros lugares de Borgoña, a fines del siglo XIX y principios del siglo XX hubo muchas dificultades.En el pasado distante, los vinos Chablis eran de gran reputación, eclipsando a los del vecino más grande de la aldea, Auxerre, pero el año 1855 marcó el comienzo de un siglo oscuro para la región. En ese año se abrió un ferrocarril Marsella-París, que proporciona un medio rápido y eficiente para transportar vinos baratos a la capital francesa y más allá, al tiempo que disminuye la capacidad de Chablis para competir. El futuro parecía sombrío: la década de 1880 trajo la doble devastación del mildiu polvoriento (1886) y la filoxera (1887), y la Primera Guerra Mundial convocó a cada vigneron disponible—Y sus caballos— al frente. El Sacy de alto rendimiento desmanteló Chardonnay en los viñedos en disminución de la región. Chablis sufrió un fuerte bombardeo alemán durante la Segunda Guerra Mundial, y a pesar de la victoria en el campo de batalla, la cosecha de 1945 fue víctima de las heladas. Hoy en día casi el 95% de los viñedos de Chablis se cosechan a máquina. Cuando las leyes de AOC de Chablis se establecieron en 1938, el INAO restringió la zona vitícola a áreas en las que los suelos se superponen a la marga Kimmeridgiana. Los mejores viñedos de Chablis, los Grands Crus , que suman alrededor de 100 hectáreas en total, se encuentran en un tramo de laderas de dos kilómetros al norte de la ciudad, orientados al sur y suroeste en un arco junto al Serein. Producto de la coincidencia del suelo kimmeridgiano y de un aspecto privilegiado, las grandes pendientes cruzadas son las más cálidas de la región, bañadas por la luz de la tarde y protegidas de los vientos fríos del norte.
Los viñedos.
Los viñedos de Chablis solo producen vinos blancos secos y fragantes, elaborados con una sola variedad de uva, Chardonnay. Esta variedad de uva se expresa de manera diferente, dependiendo de su exposición y la composición del suelo. La uva Chardonnay se llama localmente Beaune; presenta una hoja mediana, orbicular, lóbulo entero, seno peciolar en forma de lira, con un color verde claro. Las bayas son pequeñas, de un diámetro entre 8 y 12 milímetros, esféricas y amarillas. Los racimos a veces tienen dos aletas.
