La familia Fariña goza del reconocimiento de haber sido uno de los principales artífices del desarrollo de la D.O. Toro. La continua innovación dirigida a una producción de calidad, el respeto al terruño, y el profundo conocimiento de la variedad autóctona, la TINTA DE TORO, han sido pilares fundamentales de su filosofía enológica. Más de 300 hectáreas de viñedo propio permiten a esta bodega un control de producción integral y una óptima orientación de sus elaboraciones hacia la calidad y singularidad de sus vinos.La amplia gama de vinos con una marcada personalidad y con el carácter de la zona, ha sido clave para que esta bodega sea una de las más atractivas del panorama vitivinícola español. Sus tintos son estructurados, muy adecuados para la crianza en madera, y presentan una excelente evolución en el tiempo. Los blancos y rosados son afrutados, frescos y de gran intensidad aromática. Todos ellos componen un verdadero muestrario de singularidad y elegancia.
Historia.
Fundadas en 1942, Fariña es una de las bodegas más antiguas de la región de Toro. Su fundador, Salvador Fariña, inició su actividad en una rudimentaria bodega cavada en tierra calcárea en Casaseca de las Chanas, un pequeño pueblo de la provincia de Zamora, situado a 30 kilómetros de Toro, en la otra orilla del río Duero. En aquel momento, nadie podía imaginar que aquel humilde comienzo pudiera ser el nacimiento de una de las bodegas más prestigiosas del panorama vitivinícola español. Es a finales de los años 60 cuando Manuel Fariña, hijo de Salvador, regresa de sus estudios de enología, y se incorpora al negocio familiar. En 1987 el entusiasmo y empuje de Manuel le convierten en uno de los principales impulsores de la D.O. Toro y el primer presidente de su Consejo Regulador. Ese mismo año la construcción de una nueva y moderna bodega en Toro supone dirigir la mirada hacia la nueva realidad del mercado y el inicio de una nueva etapa. La confianza de Manuel en el potencial de la región y en particular en el de su variedad local, la Tinta de Toro, le llevaría a impulsar una serie de cambios que por su trascendencia, supusieron sin duda una verdadera revolución vitivinícola en la zona. El primer cambio consistió en adelantar en tres semanas la recolección de la uva, lo que permitió el paso de unos vinos que rondaban los 17º de contenido alcohólico a otros nuevos cuya graduación de entre 13º-14º, le acercaba a un nuevo consumidor cuyos parámetros de calidad habían cambiado. La instalación de un avanzado sistema de control de temperatura en la fermentación, supuso el otro gran cambio que permitiría obtener unos vinos que mantenían el gran carrusel de aromas que ofrecía ya una Tinta de Toro vendimiada en su momento óptimo de maduración. Los esfuerzos no se podían reducir al área de la producción, sino que era necesario dar a conocer, dentro y fuera de España, las virtudes de lo que se dió en llamar “ el nuevo vino de Toro”. En efecto, los más prestigiosos enólogos y líderes de opinión de todo el mundo, coincidieron en destacar las virtudes de estos vinos considerándolos como un gran descubrimiento.
Por su parte, aquella primera bodega de Casaseca de las Chanas, en la Tierra del Vino, creció y evolucionó también al ritmo que requerían los nuevos tiempos. La incorporación de la nueva tecnología le ha permitido orientar su producción hacia un mercado vinícola cada vez más exigente y competitivo. Bajo el marchamo de calidad de “Vinos de la Tierra de Castilla y León” la bodega originaria ofrece interesantes elaboraciones de Tempranillo, Merlot, Cabernet Sauvignon, Syrah, Moscatel y Albillo. Al mismo tiempo, las experiencias con variedades españolas e internacionales, como el Albariño, la Sauvignon Blanc, la Pinot Gris y la Marsanne, ponen de nuevo de relieve el espíritu innovador de la Familia Fariña. Ahora la tercera generación Fariña va tomando el relevo para continuar con la andadura en un mundo, el del vino, siempre apasionante y en continua evolución.
El Viñedo.
La familia Fariña ha sido siempre consciente del papel fundamental que el viñedo juega en la elaboración de vinos de calidad. Por ello, a lo largo de todo el año, el cuidado de las viñas se convierte en un trabajo diario, de especial trascendencia. En la actualidad se cultivan cerca de 300 hectáreas de viñedo propio y se compra uva a viticultores de la zona, estrictamente seleccionados y asesorados, para que se cumplan las directrices marcadas, en todas las fases del ciclo vegetativo hasta la entrada de la uva en la bodega. Los viñedos de Fariña se encuentran ubicados en distintas zonas, con suelos y microclimas diferentes. Ello permite una mejor orientación de las producciones hacia la elaboración de los distintos tipos de vino. En los últimos años Fariña ha llevado a cabo un intenso programa de investigación en relación con la plantación y explotación de la viña. Las conclusiones de este programa le llevaron a plantar en espaldera la mayor parte del viñedo. En esta disposición y siguiendo el sistema de doble guyot se ha conseguido el control del número de racimos por cepa y aumentar la superficie foliar expuesta al sol, mejorando así la eficacia del proceso de fotosíntesis. El sistema implantado permite también un crecimiento limitado de las uvas, lo que favorece la concentración de sus componentes y en definitiva de su calidad.
La bodega.
En cuanto al edificio de la bodega, este se inspira en una arquitectura tradicional, algo que contrasta con la muy alta tecnología con la que la bodega cuenta en sus instalaciones. El edificio consta de dos plantas, alberga también una sala de crianza con un parque de más de 1.800 barricas de roble francés y americano, además de una colección de tinas de roble francés de 16.000 litros cada una, donde se llevan a cabo las fermentaciones malolácticas y se completan los coupages de las producciones más limitadas.
