Los vinos deben realizarse con mosto que contenga un mínimo ya antes de todo enriquecimiento o bien concentración, de ciento setenta y ocho gramos de azúcar natural por litro y presentar, tras la fermentación, una graduación alcohólica mínima de 10,5°. El límite de desempeño por hectárea de viñedo va a ser de cuarenta y cinco hectolitros. La producción media anual es de setenta y ocho hectolitros, y la superficie declarada la de mil cuatrocientos diez hectáreas. Las vides Margaux se plantan en suelo de grava blanca, una especie de grava traída de la montaña por el río. Margaux es el resumen de la excelencia del terruño y el trabajo del enólogo. Las bodegas se concentran en el pueblo, y los viñedos están más entremezclados que en otros lugares.Las vides maduran 7-10 días antes que el resto del Médoc. Los vinos Margaux tienen un aroma muy fragante y una notable elegancia.
Descripción.
Fue reconocida oficialmente en agosto de 1954, la A.O.C. Margaux se ubica en el alto Médoc, en la orilla izquierda del estuario de la Gironda, al norte de Burdeos, extendiéndose por los pueblos de Cantenac, Arsac, Soussans, Labarde y, por supuesto, Margaux. Su superficie de 1490 hectáreas la convierten en la segunda más grande de esta subzona vinícola tras Saint-Estèphe. La clasificación del vino de Burdeos de 1855 califica como grand cru a 21 châteaux para la apelación de Margaux. Los tintos de la denominación son refinados hasta el punto de que se suele decir de ellos que son los más femeninos del Médoc: fragantes, perfumados, con notas acusadas a grosella negra y en la parte sur, a ciruela. Actualmente se cultivan unas 1.490 hectáreas, con una producción anual de unos 6.100.000.-litros de vino producidos con las variedades de uva autorizadas Cabernet Franc, Cabernet Sauvignon, Merlot.
Clima y el suelo.
El clima dominante es templado. Las temperaturas son suficientemente moderadas y cálidas como para propiciar el cultivo de la vid, incluso en los terrenos más llanos. Los inviernos son suaves y los veranos calurosos, pero sin llegar a la sequía, todo ello gracias a la proximidad del estuario de la Gironda. Las precipitaciones son uniformes durante todo el año, siendo el otoño la época más lluviosa. El suelo de la A.O.C. Margaux es el más fino del Médoc, debido a la gran proporción de grava, la mayor de esta zona vinícola. La grava propicia un mejor drenaje y absorbe el calor.

La variedad Semillón es una uva blanca originaria de la región francesa de Burdeos, donde se emplea en coupage con la variedad Sauvignon Blanc para elaborar algunos de los mejores y clásicos vinos Sauternes. Esta cepa ha sido injustamente considerada creyendo que con ella no se podían elaborar mucho más que vinos sencillos. La historia de la uva semillón es difícil de determinar. Se sabe que llegó a Australia por vez primera a principios del siglo XIX y que sobre el año 1820 la uva crecía en el 90% de los viñedos de Sudáfrica, donde se la conocía como wyndruif, esto es, “uva de vino”. En el pasado se le consideró la uva más plantada del mundo, aunque esto ya no es así.
Características.
Es una variedad muy bien adaptada a todo tipo de suelos, diferenciándose en los aromas que son más suaves en suelos silícicos y más intensos en suelos calcáreos. De alta fertilidad y productividad por lo que debe podarse en pulgares cortos y evitar varas en la poda Guyot. Las cepas presentan un pámpano de porte semi-ergido, son vigorosas y dan buenas producciones, su desborre es temprano y la maduración tardía. Los racimos de semillón son grandes y compactos, con pedúnculo corto y hombros muy marcados, bayas de difícil desprendimiento. Las uvas, de sección elíptico-circular, son grandes y bastante uniformes, tienen una piel fina de color verde muy vivo que torna a un verde amarillento al madurar, su hollejo es fino, con poca pruína, es muy sensible a las heridas por rozamiento. Con pulpa sin pigmentación, blanda y muy jugosa. La semillón es una variedad muy bien adaptada a todo tipo de suelos, diferenciándose en los aromas que son más suaves en suelos silícicos y más intensos en suelos calcáreos. Sensible a la podredumbre gris, que potenciada o inoculada sobre los racimos en maduración da excelentes dulces y licorosos peculiares (tipo sauternes). También lo es al mildiu, al black rot, a las enfermedades de la madera y muy especialmente a la yesca. La polilla del racimo, los cicadélidos y los ácaros le afectan sensiblemente. Es poco sensible al oídio y a la eutipiosis. Resiste bastante bien los fríos primaverales, el sol y los calores intensos e incluso a la sequía. Con pocos requerimientos en Magnesio, posee una alta demanda en potasio por lo que debe evitarse su injerto sobre patrones sensibles a la carencia en potasio.
Zonas de cultivo.
En Francia, la semillón crece sobre todo en Burdeos, donde es mezclada con la sauvignon blanc y la moscatel. Conocida también como bordeaux blanc, se hacen vinos secos de coupage en las AOC de Pessac-Léognan, Graves, Entre-Deux-Mers y otras con menos renombre. También se pueden encontrar viñedos de esta variedad en Portugal, Israel, California, Chile, Argentina, Sudáfrica, Australia y Nueva Zelanda. Actualmente se dice que Chile es el país con mayores plantaciones de esta uva. En Argentina existen dos zonas ideales para su implantación por sus características climáticas, el valle de Uco y el Alto Valle del Río Negro.
Vinos.
Esta variedad es la base de la mayoría de los Burdeos blancos ya sean del tipo secos (Graves) como de los dulces y procedentes de uvas con botritis (Sauternes), aunque casi siempre estos vinos están faltos de acidez. Los vinos jóvenes son herbáceos y muy afrutados y al envejecer en barricas de roble se obtienen vinos secos de gran calidad, con sabor a pan tostado y a miel, muy redondos y con bastante densidad y cuerpo. En Burdeos, cuando se utiliza para hacer vinos dulces (como los e Sauternes, Barsac y Cérons) suele ser la variedad mayoritaria. En estos vinos, la vid se expone a la podredumbre noble o a la botrytis cinerea, que consume parte del contenido de agua de la uva, aumenta su acidez y concentra la cantidad de azúcares presentes en la pulpa.

La cepa Sauvignon, cuyo nombre nace de la unión de sauvage (salvaje) y vignon (viña), es originaria de Sancerre y Pouly-Fume donde se producen vinos dulces muy reconocidos. Existen gran cantidad de viñedos plantados en la zona de Burdeos (Francia), y según la Organización Internacional de la Viña y el Vino, en su informe de 2013, es la cuarta variedad de uvas blancas más difundida en el mundo con 121000 Ha.
Características.
Los racimos de Sauvignon son pequeños, con uvas también pequeñas, compactas y uniformes, tan apretadas que suelen deformarse al presionarse entre ellas. La forma de las uvas es redondeado-elíptica, su epidermis es verde con estomas y lenticelas muy visibles en maduración. El pedúnculo es muy corto y robusto, lo que hace difícil el desprendimiento de la baya. El hollejo es bastante grueso y su pulpa apenas tiene pigmentación, pero es muy jugosa, consistente y deja en boca un sabor afrutado y muy aromático. Las cepas son vigorosas, de desborre tardía y dan unas producciones altas, al igual que sus rendimientos. Esta variedad de viña se desarrolla bien en suelos poco fértiles, sueltos y que no tiendan a encharcarse. Su resistencia a las heladas invernales es media, pero tolera bastante bien los fríos primaverales. Es muy sensible a varias enfermedades y plagas como la podredumbre gris del racimo, la eutipiosis, el complejo de hongos de la madera, incluso la yesca, el mildiu, el black rot y la excoriosis. También le afecta sensiblemente la polilla del racimo, los ciacdélidos y los ácaros, así como el desecado de raquis y las sequías intensas y la carencia de magnesio.
Cultivo.
Los suelos donde se encuentran viñas de la variedad Sauvignon, requieren de altos niveles de fósforo y magnesio y, debido a lo vigoroso de esta viña, necesitan ser abonados con poco nitrógeno puesto que, si no se hiciese de esta manera, se producirían muchas racimas (conjunto de racimos que por pequeños y despreciables quedan en las cepas cuando se vendimia) ya que muchas yemas del año brotan dando hijuelos de madera. Una buena opción es utilizar el abonado foliar pues, aunque a veces retrasa la maduración del fruto, obtiene muy buenos resultados. Debido a que no es fértil en las primeras yemas, es recomendable hacer podas largas para la obtención de rendimientos medios-altos. Los vientos fuertes le afectan notablemente, ya que sus sarmientos son frágiles y quebradizos, por lo que se recomienda su conducción en espaldera, lo que también.
Vinos.
Es una variedad que se puede utilizar tanto para vinos jóvenes como para vinos con crianza, aunque su envejecimiento no es fácil, para lo cual se requiere mantener el vino durante mucho tiempo en barricas de roble, siendo vinos más complejos con aromas calizos, pedregosos y a humo. Las sensaciones de los vinos Sauvignon cambian en función del suelo en el cual se produce, pero por lo general, los mostos obtenidos con esta uva son ácidos, sabores a frutas verdes, hierba y hojas, con recuerdos a grosellas, sauco, setas y flores, produciendo unos vinos blancos, de alcohol medio y acidez elevada, secos, muy elegantes y equilibrados, con aromas de hierba recién cortada. En boca es fresco y persistente. Como maridaje, se recomienda acompañar el Sauvignon con pescados, mariscos o ensaladas.

Contiene 21 Cru Classé châteaux, más que cualquier otra comuna en Burdeos. Las comarcas de Cantenac, Arsac, Soussans y Labarde. Está en la margen izquierda de la Gironda. Es la denominación más meridional del Médoc, no muy al norte de Burdeos. Al este se encuentre el bosque de las Landas.
