El Consejo Regulador.

Constituido en el año 1957, el Consejo Regulador de Vinos de la Denominación de Origen Protegida Valencia tiene como principal objetivo garantizar el origen y la calidad de los vinos que ampara, controlando su producción, promocionando y difundiendo su conocimiento y su calidad y defendiendo asimismo, los intereses de las más de 80 firmas y casi 12.000 viticultores a los que representa. Hoy por hoy, el potencial vitícola de la DOP Valencia se sitúa en torno a las 13.000 hectáreas de viñedo, repartidas en cuatro subzonas de producción, todas ellas salpicadas por entrañables y pintorescas poblaciones impregnadas por un encanto singular. La subzona de Alto Turia, emplazada al noroeste de la provincia, ofrece unos vinos blancos brillantes, frescos, afrutados y aromáticos. Valentino y Moscatel de Valencia, en la parte central de la provincia, la primera con blancos ligeros, afrutados y aromáticos, y tintos suaves y redondos, y la segunda con vinos de licor con una graduación alcohólica mínima de 15º y un aroma particular, fluido y suave, aunque también se utiliza en la elaboración de vinos secos y dulces de moscatel, prestigiosos vinos espumosos, así como para potenciar los aromas de moscatel en otros vinos blancos. Y por último, Clariano, situada al sur, donde se producen blancos ligeros, pajizos y aromáticos, y tintos color rubí, francos de nariz, de extenso aroma y sabrosos en boca. La Denominación de Origen Protegida Valencia es una denominación abierta, dinámica, con una gran vocación y tradición exportadora. En la actualidad sus vinos están presentes en cerca de 100 países de todo el mundo, con una cifra de comercialización superior a los 46 millones de botellas, de las que un total de 30 millones se destinan a la exportación.

Subzonas de la DO.

Existen 4 subzonas de producción. Una de ellas es el Alto Turia: Su área geográfica se identifica con el punto más al Noroeste de la provincia de Valencia. Son tierras de altas cumbres, inviernos rigurosos y veranos secos, donde la vid se cultiva entre los 700 y los 1.100 metros. La práctica totalidad de las variedades cultivadas son blancas, entre las que destacan la Merseguera y la Macabeo. Otra zona es la llamada Valentino; esta subzona situada en la parte central de la provincia de Valencia. Abarca las comarcas de la Hoya de Buñol, Camp de Túria y Los Serranos. El viñedo se cultiva entre los 200 y los 650 metros. Las variedades de vid que se cultivan son muy variadas, pudiéndose encontrar Merseguera, Macabeo o Planta Fina entre las variedades blancas más habituales, hasta las últimas incorporaciones como son Semillón o Chardonay. Entre las variedades tintas destacan Tintorera, Tempranillo y Cabernet Sauvignon. La diversidad de suelo y clima que posee esta zona proporciona una gran variedad de vinos. Otra subzona es la Moscatel de Valencia, situada en la parte central de la provincia de Valencia, solapada con la subzona Valentino. Su producción corresponde a la zona limitada por los municipios de Chiva, Cheste, Godelleta, Montroy, Monserrat, Real de Montroy y Turís. De clima cálido y soleado, influenciado por la brisa del mar Mediterráneo, que permite obtener de la variedad Moscatel Romano o de Alejandría el vino más representativo de la historia de la Denominación de Origen Valencia, la mistela de Moscatel o Vino de Licor Moscatel. Y por último tenemos la cuarta subzona, Clariano, que está situada al sur de la provincia, comprende las comarcas de La Vall d´Albaida y la Costera. Dentro de la comarca de La Vall d´Albaida se pueden distinguir dos zonas bien diferenciadas: una más próxima al mar, donde dominan las variedades blancas y entre las variedades tintas reina la Tintorera, y otra en el interior, en el triángulo formado por los municipios de La Font de la Figuera, Moixent y Ontinyent, siendo Fontanars dels Alforins su eje; zona dominada por las variedades tintas, entre las que destacan Monastrell, Cabernet Sauvignon, Merlot y Tempranillo. Asimismo, dada la continuidad edáfica, proximidad geográfica y analogías climáticas y enológicas y atendiendo a los derechos históricos existentes, se considera también zona de producción la ocupada por otros términos municipales limítrofes.

Breve historia.

La cultura vitivinícola de la demarcación geográfica de esta Denominación de Origen es ancestral, encontrando sus raíces en los fenicios, quienes introdujeron las primeras cepas de vino en nuestro territorio. A lo largo de los siglos, la actividad vitivinícola ha venido incrementando y consolidando su implantación en nuestra provincia, y consolidando extraordinariamente la comercialización de los vinos durante los últimos años. En cuanto a la DO, su origen se remonta a 1932, tras la aprobación del Estatuto del Vino, convirtiéndose en una de las denominaciones más representativas e históricas del sector vitivinícola nacional. Es en 1957 cuando se aprueba el Reglamento del Consejo Regulador para los vinos de la provincia de Valencia, amparados por las Denominaciones de Origen “Valencia”, “Utiel-Requena” y “Cheste”. Con fecha 16 de noviembre de 1976 aparece publicado en el B.O.E. El Reglamento de la Denominación de Origen Valencia y de su Consejo Regulador. El 20 de mayo 2011 se publica la orden 3/2011 con las últimas modificaciones del Reglamento.

Variedades de uva tinta.

Entre las variedades de uva tinta tenemos las siguientes: Bobal, dan unos vinos de gran color y nariz bastante afrutada. Es en los rosados donde esta variedad es única y produce unos vinos muy aromáticos, intensos y agradables.Racimo medio, compacto y largo. Granos de tamaño medio, regulares y esféricos con color negro azulado. El Cabernet-Sauvignon, proporcionan unos vinos excelentes, aromáticos, con una constitución tánica potente pero de gran calidad, evolucionan muy bien en crianza. Ofrece buenos resultados en la mezcla mejorando tintos de otras variedades. Racimo pequeño de bayas esféricas, pequeñas y duras. El Merlot da unos vinos muy coloreados, redondos y grasos, de aromas especiados, boca persistente con taninos suaves y elegantes. Aporta a los vinos suavidad, finura, aromas, color y alcohol. Racimo de tamaño medio-pequeño, con granos pequeños, muy negros de reflejos azules. La uva Monastrell da unos vinos de gran calidad, alcohólicos, de color intenso y gran aroma que envejecen con rapidez. Racimos de tamaño medio, grano pequeño, esférico, de color negro intenso. El Pinot Noir, da vinos jóvenes perfumados y frutales, de boca aterciopelada y fresca. Con el tiempo estos vinos se vuelven más intrigantes, de textura delicada y largo gusto. Racimo pequeños y compactos, con pequeñas bayas de colores que van de violeta oscuro a negro. El Tempranillo da colores muy intensos rojo-rubí. Muy aromáticos, varietales, con sabores intensos y agradables, gran equilibrio cuerpo acidez. Se adaptan muy bien para crianza y envejecimiento. Racimo de tamaño medio, compacto y largo, granos medios, regulares y color negro azulado. La Tintorera da vinos de mucho color, buena graduación alcohólica, acidez equilibrada y bastante aroma, se utiliza para mezcla y mejora de otros vinos. Racimo pequeño, con granos esféricos y pequeños de color negro intenso. Y por último, la DO autoriza las siguientes variedades tintas: Bonicaire, Cabernet Franc, Forcallat, Garnacha, Graciano, Malbec, Mencía, Mazuelo, Petit Verdot y Syrah.

Variedades de uva blanca.

Entre las variedades de uva blanca tenemos: Chardonnay, con un sabor rico, complejo y persistente, de fina estructura y fresco. Cualidades que señalan su potencial para que sobrevivan muchos años, excelentes para fermentar en barrica. El racimo es pequeño y compacto con bayas pequeñas y redondas de color amarillo-verdoso. El Macabeo, que da vinos jóvenes de color amarillo pajizo con tonos verdosos, aromas frutales intensos y notas florales, boca fresca y con buena acidez. Muy equilibrados. Racimos grandes, bayas esféricas de tamaño medio y color amarillo dorado. La Malvasía que da vinos suaves y afrutados con tendencia hacia los tonos dorados, bastante alcohólicos y de nariz característica. Racimo de tamaño medio con bayas esféricas no muy grandes. La Merseguera, que es la variedad básica de los vinos valencianos. Pálidos, de tonos verdosos finos y aromáticos, de acidez media y poco alcohólicos. Excelentes como vinos jóvenes. Racimos de tamaño medio-grande, de grano medio, redondo y color amarillo-verdoso. Otra variedad importante es el Moscatel, que tradicionalmente se han empleado para la elaboración de vinos de licor y para mezclar con vinos de otras. Racimos grandes, largos y sueltos, de bayas grandes de color verde amarillento variedades menos aromáticas. Muy aromáticos y característicos. Por último, aunque no por eso la menos importante, es la Verdil, que es una variedad que se puede acoplar a diferentes tipos de vino, pudiéndose elaborar, tanto vinos de alta graduación como vinos afrutados, frescos y muy aromáticos. Racimos de tamaño medio, compactos. Las bayas son esféricas de tamaño medio color amarillo-dorado. Otras variedades blancas autorizadas: Gewürtztraminer, Planta fina de Pedralba, Planta nova, Pedro Ximénez, Riesling, Sauvignon Blanc, Semillón Blanc, Tortosí, Verdejo y Viognier.

Los vinos.

Los vinos tintos, procedentes de las variedades con vocación enológica en nuestra provincia como Monastrell, Tempranillo y Tintorera, y otras de reconocida calidad mundial como Merlot o Cabernet-Sauvignon. Son vinos de hermoso color rubí, reflejos violáceos y tonalidades púrpura o granates. De nariz limpia y franca, aroma intenso, notas frutales, grosella, frutos rojos maduros. En boca son potentes, carnosos, redondos, persistentes y de buen cuerpo. Los vinos rosados, elaborados con variedades tintas en la que el mosto solo ha macerado unas horas con sus pastas, propiedad que proporciona a estos vinos un color y aroma tan característico. Poseen aspecto limpio y muy brillante, con una alta gama de tonalidades que van desde la grosella hasta la cereza. Olores de extraordinaria intensidad, afrutados y limpios. Sabores frescos, agradables y largos. Los vinos blancos, son transparentes y brillantes, con tonalidades entre el amarillo pajizo de reflejos verdosos y el amarillo dorado. Vinos fragantes muy afrutados. En su elaboración se utilizan variedades como Merseguera, Malvasía, Macabeo y la autóctona Verdil. Recientemente se han incorporado Chardonay y Semillón. Por último, el vino Moscatel, donde su elaboración parte de una práctica enológica tradicional de la Comunidad Valenciana a partir del mosto de la uva Moscatel Romano o de Alejandría. Se obtiene un vino de licor conocido también como Mistela de Moscatel, con unas propiedades aromáticas únicas por su potencia y calidad. De aspecto limpio y brillante, con colores que van desde el amarillo pajizo hasta el ámbar mas oscuro. Vino dulce, untuoso, muy agradable, un producto único, natural y muy nuestro.

Production region	The production region of D.O. Valencia is located in La provincia de Valencia, formada por 4 subzonas: Valentino, cuyo nombre procede de "Valentia Edetanorum" situada al noroeste, y la de mayor extensión, donde el del terreno de cultivo va asciendo desde la costa hacía el interior y podemos, a su vez, distinguir tres áreas situadas a distintas altitudes: Cheste y Marquesado a 180 metros sobre el nivel del mar, Campos de Liria, a 280 metros de altitud y Serranía, a 550 metros. Alto Turia al oeste de Valentin y a 625 metros de altitud sobre el nivel del mar, Moscatel, que parte de límites occidentales de la ciudad, al nivel del mar, hacia el interior alcanzando una altitud de 100 metros y Clariano, aislada de las otras zonas de cultivo y que limita al norte con Valencia capital y al sur con Játiva y Gandía.
