Origen y fundación.
Los orígenes de Freixenet, empresa familiar y líder en su sector, datan de 1861, cuando Francesc Sala Ferrés funda Casa Sala, marca pionera en exportación de vinos en Sant Sadurní d'Anoia. Su hijo,
Joan Sala Tubella, siguió con el negocio y, después de la boda de su hija Dolors Sala Vivé con Pere Ferrer Bosc, empieza el negocio del cava, en 1914. El negocio se fue ampliando y empiezan a aparecer las primeras etiquetas de cava con la marca Freixenet Casa Sala. Desde el primer momento optaron por elaborar exclusivamente cava, un vino espumoso natural, siguiendo el método utilizado en la Champaña (Francia) desde hacía un par de siglos. Las cavas se instalaron en Sant Sadurní d'Anoia (Cataluña), una población situada en el corazón de la comarca del Penedès. Esta región ya era conocida desde la época del Imperio Romano por la calidad de los vinos que se producían en ella.
Trayectoria y proyección.
En los años 20 y 30, el impulso de los fundadores y la seguridad en la calidad de sus productos ya habían procurado notoriedad a la firma. Incluso se iniciaron gestiones destinadas a situarlo en los mercados exteriores: El primer establecimiento en los Estados Unidos (Nueva Jersey) data de 1935. La guerra civil española, primero, y la II Guerra Mundial, después, ralentizaron el desarrollo de la empresa. Pese a todo, la empresa lanzó en 1941 el que, con el tiempo, se convertiría en uno de sus productos estrella, el cava Carta Nevada, y en 1974 el cava Cordón Negro, líder en exportación, haciendo que Freixenet despegara definitivamente hasta convertirse en una de las bodegas españolas más conocidas en todo el mundo, estando presente hoy en más de 140 países. Actualmente el Grupo Freixenet cuenta con 19 bodegas entre España (en las DD.OO. Cava, Penedès, Rías Baixas, Ribera del Duero, Priorat, Montsant y Rioja), Francia (Burdeos y Champagne), Australia, Argentina, Estados Unidos y México y produce más de 130 millones de botellas en España. Una bodega que además se presenta como modelo de internacionalización: el 80% de su producción se destina al mercado internacional.
Innovación con carácter tradicional.
Freixenet se caracteriza por la elaboración de muy distintos tipos de cava, siempre manteniendo el carácter tradiciónal, siempre utilizando las variedades típicas de la zona. En los últimos años, pero, han incorporado a sus elaboraciones variedades foráneas como la Chardonnay y la Pinot Noir. Su amplio abanico recoge los cavas Freixenet tipo Brut, con distintas elaboraciones siendo tanto cavas jovenes como cavas de largo envejecimiento. Pero no han olvidado la opción más dulce de los cavas, tan popular hace años, elaborando cavas Freixenet semiseco o dulces, como el sugerente Freixenet Malvasía Dolç. Freixenet es una marca con vocación de expansión y con la voluntad de estar presente en los principales mercados mundiales, pretendiendo poseer el liderazgo de los vinos espumosos elaborados según el método tradicional. Origen.
La pinot gris es una variedad de uva, de la que se tienen noticias desde la Edad Media en la región de Borgoña, donde probablemente se la llamaba fromenteau. Llegó a Suiza desde Borgoña, junto a la pinot noir, a principios del siglo XIV. Según se cree, esta variedad era la favorita del Emperador Carlos IV de Luxemburgo, quien envió esquejes de esta vid, llevados por los monjes cistercienses, hasta Hungría. Los religiosos crearon viñedos de pinot gris en las laderas de Badacsony, a orillas del lago Balatón, en 1375. Poco después, la vid fue llamada szürkebarát, que significa "monje gris". En 1711, un comerciante alemán, de nombre Johann Seger Ruland, descubrió una uva creciendo silvestre en los campos del Palatinado. El subsiguiente vino que produjo fue conocido como ruländer y, posteriormente, se descubrió que esta vid era la pinot gris. Hasta los siglos XVIII y XIX, la uva era popular en Borgoña y en Champaña, pero las malas cosechas en la zona hicieron que decayera. En Alemania ocurrió algo similar, pero los viticultores de principios del siglo XX fueron capaces de desarrollar clones que producían cosechas más consistentes y fiables.
Características.
La variedad Pinot Gris es una uva originaria de Borgoña donde le llaman Pinot Beurots. Investigadores de la Universidad de California en Davis, han determinado que la pinot gris tiene un perfil de ADN similar a la pinot noir y que la diferencia de color deriva de una mutación genética que ocurrió hace siglos. Las hojas y las cepas de ambas vides son tan similares que la diferencia de color es lo único que permite diferenciarlas. Las cepas de pinot gris son de vigor medio bajo, de porte erecto, desborre y maduración semitardíos a tardios. Su producción es escasa. Los racimos son pequeños, compactos, homogéneos, cilíndricos, alados, con ramificación claramente diferenciada y muchas veces largamente pedunculada. Las bayas del pinot gris son pequeñas de sección circular y perfil ligeramente elíptico. Su hollejo es grueso de color gris-rosado-marrón, con mucha pruina. La pulpa es compacta, jugosa y muy aromática. Es una viña que resiste bien el frío, no se ve muy afectada por las heladas, tanto las de invierno como las de primavera. Resiste muy poco la caliza activa y la sequía. Es muy sensible a la botritis ya la podredumbre gris y ácida. Es sensible black-rot, al desecado del raquis, a los ácaros, cicadélidos y a la polilla del racimo, sin embargo, es poco sensible a la excoriosis.
Zonas de cultivo.
La variedad Pinot Gris se asocia generalmente a las regiones vitícolas de Alsacia (Francia) y Oregon (Estados Unidos). Pero su cultivo se ha extendido a muchas otras zonas de todo el mundo, siendo también cultivada en Borgoña, California, Alemania, Italia, Australia, Nueva Zelanda, Argentina, Austria, Canadá, Chile, Hungría, Italia, Moldavia, Rumania, Sudáfrica, Eslovenia, Suiza y Ucrania.
Vinos.
Los vinos hechos de pinot gris varian mucho dependiendo de la región y de su estilo de vinificación, pudiendo encontrar desde vinos livianos a vinos con mucho cuerpo.
