Historia.

La historia de Argentina como región productora de vino se remonta al año 1536, cuando el presbítero Juan Cedrón (o quizá Cidrón) plantó en Santiago del Estero las primeras cepas de uva moscatel y "uva país", procedentes de España y a su vez traídas desde la ciudad chilena de La Serena. El propósito del clérigo era utilizar el producto en el ritual católico de la misa. Aproximadamente medio siglo después los franciscanos importaron de Canarias a la provincia de Salta uvas malvasía, el fin de estos misioneros era lograr un vino blanco y suave, asimismo apto para dicho ritual. Así, se obtuvieron variedades de mistela a través de uvas como la vitis rupestris y la vitis labrusca, o bien de las llamadas "uvas chinches," las cuales dan lugar a vinos de sabor áspero y ácido. Asimismo, se debe a los jesuitas y franciscanos la importación temprana de excelentes cepas de vitis vinifera. A fines del siglo XVI las órdenes religiosas introdujeron cepas por el Río de la Plata, llegando a ser hoy la zona interfluvial de Concordia un importante centro productor.

Siguación geográfica.

En el centro oeste del Argentina, al pie de la cordillera de los Andes, Mendoza concentra el 75% del total de los viñedos del país sudamericano y la mayor cantidad de bodegas del país. Esto la convierte en la provincia vitivinícola más importante y uno de los principales centros productores a nivel mundial. La presencia de los Andes, que actúa como barrera a los vientos húmedos del Pacifico, sumado a la distancia al océano Atlántico, modelan el clima generando condiciones ideales para el cultivo de la vid. La altura, el clima continental, la heterogeneidad de suelos y el agua proveniente del deshielo constituyen factores clave para la producción de vinos de excelente calidad, que se suman a una marcada tradición vitivinícola. El territorio de Mendoza puede dividirse en cinco grandes subregiones, que imprimen a las variedades sus características particulares: Valle de Uco, integrado por los departamentos de Tunuyán, Tupungato y San Carlos; la Primera Zona, que comprende los departamentos de Luján de Cuyo y Maipú; y los oasis norte (Lavalle y Las Heras), este (San Martín, Rivadavia, Junín, Santa Rosa y La Paz) y sur (San Rafael, Malargüe y General Alvear), cubriendo prácticamente toda la geografía provincial.

Región vitivinícola.

El alto grado de desarrollo alcanzado por la vitivinicultura, sumado a las nuevas investigaciones impulsadas por una generación de productores inquietos, ha llevado a la identificación de microrregiones con atributos diferenciales de terroir, reflejando el carácter diverso de la vitivinicultura argentina. Es específicamente en el Malbec donde mejor se aprecia esta cualidad. Con el 20% de la superficie total de Malbec plantado en el país, Mendoza es la principal productora, aunque también se destacan la Bonarda, el Cabernet Sauvignon, Syrah y Tempranillo entre sus variedades predominantes. Mendoza es cuantitativa y cualitativamente la provincia más importante en lo que se refiere a producción de vinos argentinos, produciendo el 65% de la producción nacional.

Los vinos.

Si bien las cepas son muchas, dentro de los tintos se destacan los Malbec, Bonarda, Cabernet Sauvignon, Merlot y Syrah. Dentro de los blancos se destacan los Chardonnay, Riesling, Sauvignon Blanc y, muy especialmente el Torrontés. En cuanto al Malbec, es oriundo de Cahors en Francia, y su nombre en argot francés significa mal pico es decir, en lenguaje figurado francés "mal gusto", y esto es por poseer demasiados taninos en su región de origen, sin embargo en Argentina el malbec ha encontrado un terroir que le da un gusto calificado por los expertos enólogos y sommeliers de "amable", caracterizándose por su exquisitez y gustos aromas delicados, lo cual ha hecho que el Malbec argentino se haya convertido en un vino de renombre mundial. Por otra parte, en el ya citado Valle de Uco se producen excelentes vinos espumantes, muchos de ellos pueden mantener el nombre de origen Champagne, ya que son producidos por las mismas empresas bodegueras francesas.

Origen.

El origen de la viognier es desconocido, aunque se cree que es una vid antigua, posiblemente originaria de Dalmacia (en la actual Croacia). Una leyenda dice que el emperador romano Probo llevó esta vid al Ródano en el 281 d. C., también se dice que esta vid fue empacada con la syrah en un barco mercante, que fue por el Ródano en dirección a Beaujolais, y que fue capturado por un grupo de forajidos (conocidos como culs de piaux) cerca de la actual Condrieu. Así como se desconoce a ciencia cierta cuál es el origen de esta uva, su nombre también ese viognier es oscuro. Probablemente provenga del nombre de la ciudad francesa de Vienne, donde había un puesto avanzado de los romanos. Otra leyenda dice que el nombre proviene de la expresión romana via gehenne, que significa "carretera del valle del Infierno". Probablemente, este nombre fuese en alusión a la dificultad de cultivar esta uva. En 2004 el análisis de ADN de la Universidad de California en Davis demostró que la uva era una pariente cercana de la variedad freisa, del Piamonte, y que era prima de la variedad nebbiolo.

Características.

La cepa de variedad viognier presenta un pámpano de porte horizontal y produce racimos compactos, de tamaño pequeño, con pedúnculo visible y poco lignificado, con desborre de primera época y brotación temprana. Su maduración también es temprana, aunque en menor medida. Las bayas son de tamaño pequeño, redondas, esféricas y de coloración verde-amarilla. La calidad potencial del vino de viognier depende también de la viticultura y del clima. El hollejo es grueso. El mosto tiene un muy alto contenido en azúcares y de una baja a muy baja acidez. La uva requiere una estación de crecimiento larga y cálida, para madurar por completo, pero un clima muy cálido puede hacer que la uva desarrolle altos niveles de azúcares que den lugar a un alto grado alcohólico antes de que estas notas aromáticas se desarrollen. Su cultivo es difícil, debe podarse a poda larga moderada, dando bajos rendimientos de forma natural. Se suele plantar con densidad de plantación bastante elevada, dependiendo de la zona entre 4.000 y 6.000 cepas por hectárea. Esta variedad de viñedo es, como todas las cepas de brotación temprana, ligeramente sensible a las heladas primaverales. Aunque es bastante vigorosa tiene una sensibilidad media al viento, por lo que se recomienda su disposición en espalderas. No presenta ninguna sensibilidad particular a ninguna enfermedad y/o plaga, salvo el oídio. Se adapta muy bien a terrenos ácidos y a climas húmedos, siendo muy sensible a sequías extremas. Da mejores rendimientos en suelos profundos, aunque no necesariamente excesivamente fértiles.

Zonas de cultivo.

La viognier es una variedad noble de uva blanca, originaria de Ródano, en Condrieu, que se cultiva poco incluso en su lugar de origen, pero con mayor éxito en Languedoc-Rosellón (Francia). En Francia la viognier es la única variedad permitida en las denominaciones de Condrieu y Château Grillet, que se encuentran en el lado oeste del río Ródano, a unos 40 km de Lyon. En España podemos encontrar algunas viñas viognier en el Priorat, Jumilla, Castilla la Mancha y Castilla y León. A partir de la década de los ochenta, las plantaciones de viognier en los Estados Unidos y Canadá han aumentado enormemente. La Costa Central de California es el mayor productor de USA. Argentina y Chile tienen cantidades significativas de viognier. Se han realizado pequeños cultivos en Brasil y Uruguay. En Australia, el lugar donde está más extendida es el valle Edén, en Australia Meridional, donde se hacen vinos varietales y donde también se mezcla con shiraz.

Vinos.

En algunas regiones vinícolas, la viognier es fermentada junto con la uva tinta syrah, para aportar color y buqué al vino. Los vinos elaborados con variedad viognier dan como resultado unos vinos muy perfumados y afrutados y de un final muy largo en boca. Los vinos de viognier son bien conocidos por sus aromas florales y por los terpenos También hay muchos aromas que dependen del terruño, las condiciones climáticas y la antigüedad de las vides. Aunque algunos de estos vinos, sobre todo aquellos de vides antiguas y de vendimia tardía, son aptos para la crianza la mayoría son realizados para ser consumidos jóvenes. Los vinos de viognier de más de tres años de edad tienden a perder muchos de sus aromas florales. La crianza de estos vinos a menudo un vino muy fresco pero con un aroma flojo. El color y el aroma del vino recuerda a los vinos dulces, pero los vinos de viognier son predominantemente secos, aunque se hacen algunos vinos de postre de vendimia tardía.
