La bodega estaba ubicada en el centro histórico de Serralunga d'Alba, en el pasado, era una pequeña bodega. A mediados de la década de 1930 nos "mudamos", si podemos decirlo, al otro lado del único camino que cruza el pueblo de Serralunga, ubicado en la cima de una de las colinas más hermosas de Langhe, en el Piamonte. En el bajo la casa familiar, organizamos el primer departamento de vinificación y envejecimiento del vino. Al pasar de los años, los tiempos cambian y poco a poco hemos tenido la suerte de poder seguir exclusivamente nuestra pasión, dedicando todas nuestras energías a la producción de uvas y vino. Todo el crecimiento que ha experimentado la bodega, siempre se han llevado a cabo de conformidad con la fantástica armonía del pueblo medieval de Serralunga d'Alba, definido como uno de los pueblos más bellos de Italia. Con tenaz obstinación, no queríamos abandonar el centro histórico y cualquier ampliación adicional se hizo bajo tierra , donde nuestros vinos pueden "nacer" y refinarse en condiciones óptimas. Hoy, gracias a la finalización del ambicioso proyecto de renovación, que aún mantiene la estructura histórica de la casa patriarcal, estamos haciendo realidad otro de nuestros sueños: Tener los espacios necesarios para acoger y dar la bienvenida a todos aquellos que nos quieran visitar y que se sientan como en su casa.

A principios del siglo XX, los enólogos de Barolo y Barbaresco creyeron que era necesario unirse para proteger proteger sus producciones, solicitando, en 1908 la creación de un "certificado de origen" emitido por una asociación que operaba bajo el control de administración provincial y unión vinícola piamontesa, pero no fue hasta 1924, cuando el Parlamento italiano promulgó la ley sobre vinos típicos y estableció que sus características debían ser constantes y definidas por los estatutos del consorcio. Geografía.
El nombre, de origen celta, significa "lenguas de tierra" y se refiere a las colinas alargadas, a menudo con laderas muy empinados, dispuestas paralelamente entre sí formando valles profundos y estrechos. Los Langhe se encuentran en la parte sur del Piamonte, cerca de los Alpes Marítimos y los Apeninos de Liguria. El área de Langa es una de las regiones más generosas del mundo por la calidad y variedad de su producción de vino. Las raíces de esta excepcionalidad se encuentran en la ubicación geográfica particular, en el clima adecuado y en el rico subsuelo que distingue estas áreas montañosas y las convierte en un ambiente con abundante biodiversidad.
Geología.
El suelo Langhe tiene orígenes sedimentarios y marinos, y deriva de la antigua cuenca terciaria piamontesa. Hace unos 12 millones de años, durante el Mioceno, en el fondo marino se iban depositando los sedimentos que, tras su litificación, dieron lugar a las rocas sedimentarias propias de estos suelos. Durante este largo período de tiempo, las condiciones se modificaron considerablemente, tanto la profundidad del mar como la forma de la cuenca, y como consecuencia, esas rocas registraron cambios en su composición y textura, generando las formaciones geológicas Murazzano (Langhiano-Serravalliano), Lequio (Serravalliano), Areniscas de Diano (tortoniano) y Marne di Sant'Agata Fossili (Tortonian-Messinian), cuyas composición son margas muy ricas en piedra caliza, capas de arena fina y capas de marga arcillosa, en distintas proporciones en función de la formación en que nos encontremos.
El clima.
El área de Langhe está dominada por un clima subcontinental, frío pero no extremo, con características precisas que solo se encuentran en este territorio. El efecto protector de los Alpes y la influencia de las corrientes suaves y húmedas del mar de Liguria, contribuyen a determinar un contexto climático único en todo el Piamonte. La presencia de valles y colinas a diferentes altitudes, así como las diferentes exposiciones y vientos, crean una increíble variedad de microclimas diferentes, que generan condiciones que permiten que la uva disminuya en varias expresiones. En el área de Dogliani se encuentra el clima más fresco, ya que está más cerca de los Alpes y se caracteriza por las crestas estrechas y altas que se enfrentan a la fría llanura de Cuneo. El área de Barolo tiene temperaturas intermedias, se encuentra en un área particular protegida de los vientos pero influenciada tanto por las corrientes alpinas, como por el aumento del aire cálido y húmedo del valle de Tanaro. Los vinos.
Los vinos Barolo tienen un color granate completo e intenso, un aroma afrutado y picante al mismo tiempo, dando, tanto en la nariz como en boca, recuerdos a frutas rojas, las cerezas en alcohol y la mermelada, pero también ofrece recuerdos florales a rosa seca y violeta, canela y pimienta, nuez moscada, vainilla y, a veces, regaliz, cacao, tabaco y cuero. Los Barbaresco son 100% Nebbiolo y tiene un color intenso y brillante que se desvanece del rojo rubí al granate y un estimulante ramo de aromas aún afrutados, pero etéreos que recuerdan a mermelada de frambuesa y fruta roja, geranio y morado, pero también pimiento verde, canela y nuez moscada, heno y madera, avellana tostada, vainilla e incluso anís. Debe envejecer al menos dos años, de los cuales nueve meses en roble y después de cuatro se puede definir como "Reserva". La variedad Chardonnay es el fruto de una viña originaria de la región francesa de Borgoña, donde se localiza un pueblo del mismo nombre. Dentro de las uvas blancas, es la más extendida y popular en todo el mundo, por lo que, para mucho público, Chardonnay es sinónimo de vino blanco. Es una uva muy equilibrada en fruta, acidez y textura. Se puede considerar que marida con todo, desde comidas potentes hasta las más suaves, desde platos picantes y quesos fuertes, hasta pescados y aves. Además de los vinos blancos de mesa, es la uva con la que se elaboran la mayor parte de los champanes.
Características.
Si fuera una persona, Chardonnay sería un diplomático por su facilidad de maridaje, diversidad en sabores y facilidad de consumo. Como la uva en sí no tiene un sabor concreto, extrae su aroma del terruño donde se cultiva y obtiene sabores muy diversos, que pueden ser desde vinos muy limpios y sabrosos hasta otros ricos en toques de roble y mantequilla. Su racimo es de tamaño más bien pequeño, bastante compacto y con pedúnculo muy característico y de tamaño muy reducido. Las uvas en sí son pequeñas, uniformes y muy esféricas. Su piel es amarillento-verdosa cuando madura, hollejo de grosor considerable y una pulpa poco o nada pigmentada, textura blanda, muy jugosa y con aroma afrutado. La cepa es precoz en su brote, vigorosa, resistente y muy versátil por adaptarse a terruños y climas muy diversos, con la única condición de que no sean excesivamente húmedos. Es muy fértil, aunque con rendimientos bajos, aunque de una calidad bastante elevada. Esta viña se ve afectada por suelos con carencia de magnesio y precisa de niveles altos de fósforo y nitrógeno. Es una variedad de uva muy sensible a la carencia de magnesio y muy afectado por el secado fisiológico del raspón. En cuanto a sus hándicaps, es sensible al oídio, a la flavescencia dorada, al mildiu y a la podredumbre gris, así como a la polilla y a los cicadélidos y especialmente a los ácaros. Por otra parte, los hongos de la madera no le afectan en exceso y resiste perfectamente a la clorosis. Debido a su desborre precoz y maduración temprana es una viña que no gusta de los fríos primaverales, dando unos rebrotes de muy baja fertilidad, no obstante, aguanta bien los inviernos crudos y es muy resistente a los vientos fuertes.
Zonas de cultivo.
Podemos encontrar esta variedad de uva prácticamente en cualquier área vitivinícola pues está extendida mundialmente. Es muy común en Francia, España e Italia, aunque también se cultiva en Portugal, Estados Unidos, Australia, nueva Zelanda, en los países de América del sur y en África del Sur. Se calcula que hay en torno a 160,000Ha de uva chardonnay plantadas, de las cuales una tercera parte está en Francia. Además de su nombre genérico, también es conocida como Franciacorta en Italia, Chardoney y Pino Shardone en Bulgaria, Feinburgunder y Morillon en Austria y Pinot Chardonnay en Chipre.
Vinos.
Sus características pueden variar desde vinos ricos, gruesos y espesos, adecuados para envejecer en botella, a vinos más ligeros y frescos hechos sin madera y destinados a ser bebidos jóvenes. Es una de las variedades con que se elaboran el Champagne. Los vinos chardonnay presentan en su fase visual una capa variable entre pajiza muy pálido y un amarillo casi dorado, con reflejos verdosos. En nariz se observan los aromas característicos que son manzana verde, limón, pomelo, pera, acacia, frutas tropicales como mango, piña, banana, melón o ananá, algo de especias o caramelo. Cuando envejecen en barrica despiertan aromas a vainilla, miel y manteca. Su boca es elegante, larga, sin demasiada acidez, pero con una gama de sabores que va desde manzanas a cítricos, melón, peras, miel, cera, caramelo, dulce de leche y minerales entre los más destacados. Como consejo, es preferible adquirir vinos de esta variedad que se elaboren en regiones vinícolas de clima frío.
