La finca Ca N'Estruc está situada en la ladera de la montaña de Montserrat, en el término municipal de Esparreguera (Barcelona) y está arraigada al mundo del vino desde 1548. Las 26 ha de viñedo se encuentran a 165 m de altitud sobre el nivel del mar, y éste disfruta de un microclima específico ya que se encuentra resguardado de los vientos fríos del norte por la montaña de Montserrat. Español [ ES ]La vid, las uvas y los vinos.
Las nuevas plantaciones suelen optar por el sistema de conducción en espaldera, con podas largas tipo Guyot o bien cortas con cordón Royat, simple o doble. No obstante, continúan existiendo muchas viñas viejas con la conducción tradicional en vaso, con 4-6 brazos y cabezas de dos borrones vistos. Las densidades de plantación de viña pueden ir de los 1.800 a los 4.500 cepas/ha., siendo la más habitual entorno las 2.500 cepas/ha. No obstante, con las últimas plantaciones se está observando una cierta tendencia a incrementar este valor, aproximándolo más a las 3.000 cepas/ha. La producción máxima admitida para poder ser destinada a la elaboración de vinos con DO Catalunya es 10.000 kg/ha para las variedades de uva negra y 12.000 kg/ha para las variedades de uva blanca. Hay 36 variedades de uva autorizadas, autóctonas e internacionales. Esta DO tiene reconocidas 19 variedades de uva blanca, que son: Albarinho, Chardonnay, Chenin, Garnacha blanca, Gewürztraminer, Macabeo, Malvasía, Malvasía de Sitges, Moscatel (de Alejandría y de Frontignan), Parellada, Pedro Ximénez, Picapoll blanco, Riesling, Sauvignon blanc, Sumoll blanc, Viognier, Vinyater y Xarel·lo. Entre la diversidad de vinos encontramos vinos blancos, vinos rosados y vinos tintos. También hay crianzas, reservas y grandes reservas, con una estada mínima en barrica, en el caso de los tintos, de 6, 12 o 24 meses, y un período de envejecimiento total de 2, 3 o 5 años respectivamente. También disponen de vinos de aguja y vinos de licor.
La DO.
La Denominació d’Origen Cataluña, aprobada en el año 1999, fue creada para recoger la tradición de elaborar vino tan presente en el territorio catalán desde hace más de 2.000 años. Su objetivo es dar cobertura a diferentes bodegas de unos 200 municipios catalanes que producen vinos de calidad, pero sin una Denominación de Origen específica. También esta DO se creó con el objetivo de que la viticultura experimentase con una gama más amplia de variedades y con menos restricciones, abriendo la posibilidad de embotellar vinos en una denominación con uva proveniente de otra denominación, o de hacer mezclas con uvas de diferentes denominaciones. Es por ello que la investigación e innovación son las principales características de esta DO. Se trata de una denominación de origen creativa, que no duda en aplicar nuevas tecnologías en busca de mejorar la calidad de sus vinos. Bajo esta denominación se incluyen unas 4.000 hectáreas de viñas dispersas por el territorio. En general, domina un clima mediterráneo, con muchas horas de sol y no muy caluroso. En estos terrenos, las viñas se cultivan de manera tradicional. Se pueden encontrar 25 variedades de uva, en las que destaca, entre la uva blanca, la garnacha blanca, el gewürztraminer, el macabeo y la malvasía; y entre la uva negra, el cabernet franc y sauvignon y la garnacha negra. Ampara a vinos blancos, rosados y tintos, y también licorosos tradicionales, mistelas, rancios y dulces naturales. Generalmente, sus producciones tienen un aire moderno e innovador, de color atractivo, de intensidad aromática media y acidez moderada. Los blancos son ligeros y afrutados, y los tintos, potentes y equilibrados. Todos estos vinos pueden conocerse y probarse en la Mostra de Vins i Caves de Cataluña, que tiene lugar en Barcelona a mediados de septiembre. Muchos de los viñedos de la Denominació d’Origen Cataluña se encuentran en torno a monasterios de la Edad Media, como los de Montserrat, Santes Creus, Poblet o Sant Pere de Rodes. Ello es debido a que, en muchos casos, los monjes eran quienes tenían los permisos reales para producir vino. Asimismo, los vinos de esta denominación se pueden conocer visitando las bodegas en las que empezaron a elaborarse.
Clima.
El clima varía en función de las diferentes áreas de viñedos. El ámbito geográfico de la DO Catalunya tiene globalmente un clima mediterráneo, con muchas horas de sol, más de 2.500 horas al año, con inviernos secos y templados y veranos no demasiado calurosos. La primavera y el otoño acostumbran a ser las estaciones más inestables y lluviosas. La temperatura media anual está entorno de los 14-15ºC y la pluviometría va de los 350mm al año, de las áreas más secas, a los más de 600mm al año, de las zonas más húmedas. En el prelitoral y litoral, las marinadas regulan el calentamiento solar, que es más intenso a medida que nos adentramos hacia el interior.
En la costa, el clima es más suave y templado, con temperaturas que aumentan de norte a sur, inversamente a la pluviometría. El interior, alejado del mar, presenta un clima continental mediterráneo, con inviernos fríos y veranos muy calurosos.
Crianza.
En todos los procesos de crianza los envases de madera de roble tendrán una capacidad inferior o igual a 1000 litros. Para poder utilizar el término crianza, el proceso de envejecimiento será de dos años naturales.
Para los vinos negros, este proceso tendrá una permanencia mínima en bota de madera de roble de seis meses.
Para los vinos blancos y rosados, la duración de este proceso no será inferior a dieciocho meses como mínimo, con una permanencia mínima en bota de madera de roble de seis meses. Para poder hacer constar el término reserva, el proceso de envejecimiento será el siguiente: Para los vinos negros, la duración de este proceso no será inferior a los treinta y seis meses, con una permanencia mínima en bota de madera de roble de doce meses y un envejecimiento en botella de veinticuatro meses. Para los vinos blancos y rosados, la duración de este proceso no será inferior a veinticuatro meses como mínimo, con una permanencia mínima en bota de madera de roble de seis meses y un envejecimiento en botella de dieciocho meses. Para la utilización del término gran reserva, el proceso de envejecimiento será el siguiente: Para los vinos negros, será necesaria una permanencia en bota de madera de roble de veinticuatro meses como mínimo, y un envejecimiento en botella de treinta y seis meses como mínimo.
Para los vinos blancos y rosados, la duración de este proceso será como mínimo de cuarenta y ocho meses, con un envejecimiento en madera de roble como mínimo de seis meses y un envejecimiento en botella de cuarenta y dos meses. En todos los procesos de envejecimiento las botas de madera de roble tendrán una capacidad inferior o igual a 330 litros. Para poder hacer constar el término reserva, el proceso de crianza será: Para los vinos tintos, la duración de este proceso no será inferior a los treinta y seis meses, con una permanencia mínima en envase de madera de roble de doce meses. Para los vinos blancos y rosados, la duración de este proceso no será inferior a veinticuatro meses como mínimo, con una permanencia mínima en envase de madera de roble de seis meses. Español [ ES ]Origen.
Esta variedad de uva blanca, de etimología italiana chiarello –clarete-, tiene su origen y capitalidad en Cataluña siendo el fruto de un cruce entre la gibi y la brustiano faux. Ya se tienen referencias de esta uva en el siglo X, cuando se utilizaba en Alella como mistela y sus vinos tenían aromas a uva pasa. En esa época era muy apreciada por alcanzar un buen grado alcohólico y acidez. También es conocida como Pansa Blanca, Pansal, Castoixa, Xarello y Sucre.
Características.
Es una variedad vigorosa, de porte tumbado y con mucha ramificación de sarmientos muy gruesos, adecuado para ser conducido en espaldera. Disfruta de una buena fertilidad, pero es de producciones irregulares. Sus racimos son de tamaño medio, con uvas uniformes, poco compactos y con hombros bien definidos. Las bayas son de tamaño medio, esféricas, difíciles de desprender de sus pedúnculos, con una piel de color verde amarilla, variando a dorado oscuro al madurar. El hollejo es grueso y consistente pero muy sensible rozamientos y escaso de pruina. La pulpa carece de pigmentación, aunque al sobremadurar suele oscurecerse, es consistente, dura, jugosa y afrutada. Al ser de desborre precoz puede verse afectada por las heladas primaverales en plantaciones situadas en terrenos hundidos. Es una variedad vigorosa pero sensible al corrimiento del racimo cuando los frutos aún no han terminado de cuajar. La disminución de bayas por racimo está acentuada en los años en que las condiciones climatológicas de cambios de temperatura, humedad y lluvias influyen desfavorablemente en el proceso de cuajado. Es muy sensible al mildiu, al oidio y a la botritis, así como a la polilla del racimo y a los ácaros. Por el contrario, resiste bastante bien a los ataques de Botrytis.
Zonas de cultivo.
El rango de altitudes a las que esta variedad funciona bien va desde el nivel del mar hasta los 400m, siendo una cepa muy rústica que se adapta muy bien a climas cálidos y secos. Hoy es una variedad extensamente cultivada en la D.O. Penedès, donde es la variedad con mayor superficie de cultivo, y en el Campo de Tarragona. También se cultiva en Castilla-la Mancha, Castilla y León, Extremadura, Mallorca y Aragón. Además de en la D.O. Penedés, existen viñedos de xarel·lo en las denominaciones de origen Alella, Costers del Segre, Tarragona y Cava. La extensión de plantaciones de xarel·lo es de aproximadamente 8.400Ha.
Vinos.
El coupage de Xarel·lo junto con la Parellada y la Macabeo, ha sido la combinación clásica que tradicionalmente se han empleado para la elaboración del cava. Esta variedad le aporta al cava cuerpo, estructura, grado alcohólico y acidez. Produce vinos con extracto, consistentes y voluminosos en boca.
