Historia.

La región que hoy día ocupa la Denominación de Origen Jumilla, posee una tradición vinícola importante que se pierden en el tiempo. Ya en tiempo de los romanos, allá por el siglo I, existían viñedos en esta zona. Los restos de vitis vinífera más antiguos de Europa, datados sobre el año 3.000 a.C, se han encontrado en Jumilla, así como utensilios y restos arqueológicos, como los pendientes de oro íbero con forma de racimo de uva que están fechados en el siglo IV a.C. Estos y otros hallazgos han llevado a los expertos a cifrar en más de 5.000 años la antigüedad de la tradición vitivinícola de esta comarca que forma la DO Jumilla. Pero fue a mediados del siglo XIX cuando la plaga de la filoxera castiga amplios territorios europeos, sobre todo Francia; lo que motivó el despegue espectacular de la economía vitícola jumillana, con el aumento de las plantaciones de vid y un incremento significativo de las exportaciones de mosto al país vecino, lo que enriquecerá al sector agrario local. Con el paso del tiempo, Jumilla se convertirá en una de las Denominaciones de Origen más antiguas de España, con reglamentación desde 1966. Desde principios del siglo XX funciona la Estación Enológica (hoy Laboratorio Regional Agrario y Bodega Experimental) que actualmente colabora con el Consejo Regulador.

Geografía.

Abarca una amplia comarca en el sureste español, entre el norte de la región de Murcia, el municipio de Jumilla, y parte de la provincia de Albacete, concretamente los municipios de Ontur, Tobarra, Albatana, Hellín, Montealegre y Fuente Álamo. La Denominación de Origen Jumilla, constituida en 1966, agrupa en la actualidad a casi cuarenta bodegas y más de 4.000 viticultores, cuyos productos están garantizados por el Consejo Regulador de la D.O. Jumilla. El municipio de Jumilla se encuentra al Este de la Comarca Campos de Hellín con una población de menos de 1000 habitantes y 31 km2 de extensión, cuya actividad principal es la viticultura y la olivicultura, algo de ganadería y otros cultivos específicos como es el azafrán. Cuenta con una cooperativa vitivinícola, una bodega privada y una almazara. La Denominación de Origen Protegida Jumilla se extiende a lo largo de 19.000 ha de viñedo, estando el 400% en el municipio de Jumilla, contando con casi 2.000 viticultores y 45 bodegas inscritas.

La elaboración.

La elaboración y crianza de los vinos de Jumilla, tiene lugar en bodegas situadas dentro de la zona de producción de la denominación, disponiendo de las más modernas instalaciones, con mesas de selección, materiales inertes, estrujadoras de rodillos, aparatos de frío, prensas neumáticas, etc. todo con el fin de obtener vinos de máxima calidad. Igualmente, las naves de crianza poseen durante todo el año, temperaturas constantes y frescas, con humedad y ventilación adecuadas, destinando a los vinos de crianza los vinos de más calidad, que son introducidos en barricas del mejor roble. Actualmente los vinos de la Denominación de Origen Jumilla se elaboran con las técnicas más modernas, lo que, unido al esmerado cuidado de la uva, hace que los vinos de Jumilla sean de una excelente calidad, consiguiendo que la Denominación de Origen Jumilla sea una denominación emergente y puntera dentro del panorama vitícola nacional e internacional.

Las uvas.

Decir Jumilla es decir monastrell. La Denominación de Origen Jumilla tiene a esta variedad de uva como buque insignia por ser la que mejor se ha adaptado, a lo largo de los tiempos, a sus condiciones climáticas y de suelo, y que imprime el carácter a sus vinos; esta variedad representa más del 80% de los viñedos de la denominación. La uva monastrell, es una cepa de origen español, se encuentra extendida por todo el litoral mediterráneo, siendo en España la tercera variedad más plantada. Además de la monastrell, también se autoriza la elaboración de vinos las variedades tinta cencibel, garnacha tintorera, garnacha, cabernet sauvignon, merlot, syrah y petit verdot y las blancas, airen, macabeo, pedro ximenez, malvasía, chargonnay, sauvignon blanc, mocatel de grano menudo y verdejo.

Los vinos
La diferencia entre los vinos de la D.O. Jumilla y el resto es que éstos presentan la característica de estar elaborados a base de la variedad Monastrell, la cual representa más del 80% de la superficie cultivada y que, con el esfuerzo de modernización de productores y elaboradores, han conseguido ganarse el prestigio y reconocimiento del mundo vitícola español y mundial. Los vinos de jumilla presentan cualidades organolépticas características, especialmente en cuanto a color, aroma y sabor, muy vinculadas a la tierra y sus variedades. Todos los vinos estarán limpios, sin mostrar turbidez, transparentes y brillantes a la vista, deben tener una intensidad aromática apreciable y presentarse francos en nariz, con ausencia de suciedades, olores sulfúreos, podredumbres, humedades, olores de oxidación, maderas mohosas, y cualquier otro olor desagradable o impropio. En función del tipo y edad del vino se detallan a continuación las características organolépticas. Los vinos blancos tienen una fase visual amarillo pajizo pálido a amarillo, ligeramente dorado en los de menos de dos años, y de amarillo paja a amarillo dorado en los que, superando esta edad, tengan alguna mención de envejecimiento. En nariz predominan las sensaciones aromáticas afrutadas, frescas y/o maduras, tanto en vía olfativa directa como en retronasal. Su boca es equilibrada en acidez, cuerpo y grado alcohólico, frutal y de persistencia media. En caso de tratarse de vinos dulces, a estas características se añade el sabor dulce predominante en boca, bien integrado con la acidez. Los rosados tienen un color entre fresa y rosa violáceo, aromas afrutados frescos y/o maduros, tanto en vía olfativa directa como en retronasal. En boca son equilibrados en acidez, cuerpo y grado alcohólico, frutales y de persistencia media. Para los vinos dulces se añade el sabor dulce predominante en boca, bien integrado con la acidez. Los tintos tiene un color de rojo violáceo a rojo cereza cuando son jóvenes y en los que tienen envejecimiento muestran capas rojo cereza a rubí o con tonos teja en el caso de vinos con largas crianzas. Los dulces tienen un color cereza de de intensidad media a muy alta, pudiendo llegar casi a la opacidad y presentar irisaciones teja. Con abundante lágrima. En nariz los tintos jóvenes muestran frutas frescas y/o maduras, mientras que al envejecer sus aromas son complejos, especias, balsámicos y recuerdos de roble. Los dulces tienen una nariz limpia y muy intensa, frutas confitadas y pasas, con notas balsámicas y especiadas. En boca son amplios, con cuerpo, equilibrados, carnosos; con taninos maduros apreciables, pero sin agresividad. Limpios y persistentes en el postgusto. Para los vinos dulces se añade el sabor dulce predominante en boca, bien integrado con la acidez.

Vino en el que convergen la omnipresente fruta de la uva moscatel y la sequedad de los blancos más elegantes. La altitud de sus viñedos (700 m) y el mimo en bodega, hacen de este Juan Gil un blanco aromático pero también gastronómico que sorprenderá incluso a los paladares más entrenados.
