Historia del cava.
El origen del Cava viene asociado al esplendor de la viticultura catalana de mediados del s.XIX. Los estudios de microbiología de Louis Pasteur aplicados al vino supusieron el control de la segunda fermentación en botella, y el descubrimiento del corcho permitió evitar la pérdida de las burbujas producidas en el vino. Nació así el método tradicional o champenoise. En este s. XIX, varias familias de Sant Sadurní d’Anoia, inician la investigación de esta nueva técnica de elaboración aplicada a los cultivos de la zona, fruto de sus estudios y ensayos, vinculados al prestigioso Instituto Agrícola Catalán San Isidro. Nace así el Cava con una identidad propia distinta de cualquier otro vino espumoso de calidad. En 1872, se elaboran en el municipio de Sant Sadurní d’Anoia las primeras botellas de Cava siguiendo el método tradicional de segunda fermentación en botella. Se inicia así su elaboración y la villa se convierte en la capital neurálgica del Cava. En los años 20, el CAVA se afianza en el mercado español alcanzando su gran crecimiento en los 60 y su consolidación internacional en los 80. Hoy es uno de los sectores vitivinícolas más dinámicos y prósperos de la viticultura “esencialmente catalana” con una producción que ha superado los 240 millones de botellas al año que llegan a consumidores de todo el mundo.
El Consejo Regulador.
Es un organismo desconcentrado del ministerio de agricultura, alimentación y medio ambiente. Está integrado por viticultores, elaboradores y por representantes de las comunidades autónomas de la “región del cava” y del ministerio. Sus antecedentes se remontan al año 1959 cuando se establecieron las normas de comercio de los vinos espumosos y asificados, donde aparece por primera vez la mención cava. Posteriormente la orden del ministerio de agricultura de 23 de abril de 1969 reglamenta los vinos espumosos y gasificados, quedando reconocida como designación propia de los espumosos elaborados por el sistema “clásico de fermentación en botella y envejecimiento en cava”, pudiendo así “caracterizar sus productos con la denominación cava”. Esta definición sirvió como base para designar el nombre del producto. Fue en el año 1972 cuando se promulgó la Orden Ministerial de 27 de julio y se constituyó el Consejo Regulador de los Vinos Espumosos con funcionamiento equiparable al de las Denominaciones de Origen. Con esta disposición el Cava queda sujeto a normativa propia, en cuanto a elaboración, producción y comercialización. La adhesión de España a la U.E. supuso la equiparación de los vinos con D.O a vinos de máxima categoría (v.c.p.r.d.). Antes del Tratado de Adhesión, el Cava era la única denominación específica española que contaba con una estructura propia, idéntica a la de las Denominaciones de Origen; la diferencia estribaba en la delimitación de la zona y por esta razón a principios del año 1986 se estableció la “Región del Cava”, que delimitaba su zona de producción. Así el Cava queda protegido ante la U.E. y reconocido como vino espumoso de calidad producido en una región determinada (v.e.c.p.r.d.).
El viñedo y la variedades de la DO.
El Cava nace, entre otras cosas, de la radical transformación del viñedo derivado de la invasión de la filoxera.
Las propiedades y características del Cava tienen su origen en los de los suelos de sus viñas, de las variedades de uva utilizadas y también de la climatología. El cultivo de la vid se extiende desde el litoral mediterráneo hasta las zonas más altas, alrededor de 800 m. de altitud. No obstante, es en la zona central, a una altitud de 200 a 300 m., donde se ubica la mayor superficie de viñedo. El clima es mediterráneo, luminoso y soleado, de inviernos suaves y veranos no excesivamente calurosos. Todo ello junto, a una moderada pluviometría que se reparte a lo largo de todo el año, produce un microclima óptimo para el cultivo de la viña y la maduración de la uva. Las variedades de vid autorizadas para producir uva destinada a la elaboración de vino base y “Cava” en las variedades de uva blanca son, el Macabeo (Viura), el Xarel.lo, la Parellada, la Malvasía (Subirat Parent) y el Chardonnay; en las variedades de uva tinta son el Monastrell, el Pinot Noir, el Trepat y la Garnacha tinta. Desde mediados de agosto hasta finales de octubre se realiza la vendimia. La uva se transporta a las bodegas en cajas con un peso máximo de entre 25 a 30 Kg. o en remolques de acero inoxidable. Los vinos obtenidos de las diferentes variedades los combina el enólogo en las proporciones que considera idóneas en función de la caracterización de sus productos.
El proceso de elaboración.
El nivel de calidad que ha alcanzado el Cava, empieza en el viñedo. La recolección de la uva, su acondicionamiento y el transporte hasta las bodegas de elaboración, se realiza con todo cuidado y con la máxima celeridad para que el tiempo transcurrido entre la recolección y la obtención del mosto sea el mínimo posible.Al llegar la uva a la bodega se inicia el proceso de elaboración del vino base, con la extracción del mosto mediante un prensado suave, que permite obtener mostos de gran calidad. Seguidamente estos mostos se clarifican, iniciándose el proceso de fermentación con levaduras seleccionadas y riguroso control de temperaturas a fin de aprovechar al máximo los aromas propios de las distintas variedades, cada una de las cuales se vinifica separadamente. Finalizada la vinificación, los técnicos determinan la proporción de cada tipo y variedad que conformará el “cupage” que dará origen a los diferentes cavas. Los vinos de distintas variedades, se complementan para dar como resultado un vino con personalidad propia que definirá las características de cada marca elaboradora.
Importante: El control de calidad.
El Cava está sometido a la verificación de la calidad que ejercen los servicios técnicos del Consejo Regulador. Estos controles empiezan en los viñedos, basado en los registros de las parcelas con derecho a producir uvas con destino al Cava, en el control de rendimientos, vigilancia de la calidad y destino final de estas uvas. Las bodegas elaboradoras inscritas deben reunir condiciones técnicas específicas para obtener el derecho a elaborar tanto el vino base como el Cava. Los tapones de tiraje del Cava deberán marcarse con el mes y año de la operación a fin de garantizar los periodos mínimos de crianza exigidos en el Reglamento. Se realizan controles de calidad, analíticos y organolépticos a fin de calificar los vinos base, proceso durante el cual se efectúan inspecciones periódicas, declaraciones de existencias y verificación de movimientos. Las etiquetas de cualquier Cava deben ser previamente autorizadas por el Consejo, reuniendo los requisitos de acuerdo con la legislación vigente. Todo este complejo sistema de control se complementa con la verificación de la calidad del producto acabado, autorizando el uso de la denominación “Cava” y también de las menciones «Reserva”, y “Gran Reserva”, expidiendo el distintivo de control numerado (disco o tirilla) de manera diferenciada, con las tres menciones citadas que deberán llevar todas las botellas que se destinen al consumo, como marchamos que garantizan la calidad y el origen del Cava. Las características de los cavas dependerán de las diferentes combinaciones varietales, añadas y también de los distintos períodos de crianza. Para ostentar la calificación de Gran RESERVA, los cavas están sometidos a especiales controles de calidad, efectuándose entre otros, exámenes organolépticos y analíticos. La indicación “Gran RESERVA” únicamente podrá utilizarse en la presentación de los tipos “Brut Nature”, “Extra Brut” y “Brut, cuya crianza no sea inferior a treinta meses y se haya realizado dentro de la misma bodega. En la etiqueta deberá constar de manera obligatoria la indicación Gran RESERVA y el año de la cosecha. En este sentido, el Cava es el único vino espumoso que puede ostentar esta distinción.
