DG Viticultors: Brand.
Objetivos.
DG Viticultors, es una empresa familiar que tiene como objetivo crear vinos que reflejen las características especiales de unas viñas plantadas en un terreno y clima particulares. Un paisaje de montaña en la Sierra Prelitoral central catalana, en Pontons (Barcelona), donde es posible elaborar vinos distintos y especiales. Lo que sobretodo nos gustaría, es hacer disfrutar. Buscamos que nuestros vinos reflejen y se identifiquen con la tierra y paisaje de la cual proceden. La historia de esta bodega está ligada a la adquisición familiar de unas fincas, las llamadas Mas Fonoll y Sapera. Unas fincas situadas en la pequeña localidad de Pontons, en el Alt Penedés, en Barcelona.
Las fincas.
Mas Sapera.
Separada poco más de 500 metros de Mas Fonoll y en un plano inferior comprendido entre 600 y 650 m de altura sobre el nivel del mar. Formada por suelos franco-arcillosos y calcáreos. Es un viñedo de 14 Ha de superficie que queda protegida por la montaña donde se encuentra Mas Fonoll.
Mas Fonoll.
Con alturas comprendidas entre 750 y 820 m de altitud, es un viñedo de montaña de tierra pobre, en la que predomina el componente calcáreo con estructura franco-arcillosa. Es un viñedo en un paisaje espectacular con vistas preciosas. Tiene una superficie de 40 Ha dentro de 200 Ha de bosque, con orientaciones diversas debido a que está ubicada alrededor del alto o Puig de Mas Fonoll. Su ubicación y altura hace que tenga uno de los climas más fríos de la comarca del Alt Penedès.
Tierra y vinos.
En total suman una superficie de viña de 54 Ha, dentro de una propiedad de más de 200 Ha., que constituyen un entorno único. Mas Fonoll tiene una superficie de 40 Ha. y Sapera 14 Ha. de viña. En este clima frío, debido a la altura, la brotación y la vendimia de la viña, se retrasa bastantes semanas en comparación de otras zonas del Penedés. DG Viticultors es un proyecto familiar dirigido por Pedro Doménech Garay y Antonio García Blasco, que se inició con la elaboración de vinos dulces, debido a la feliz aparición de brotritis cynerea en las uvas que se cultivaban. Más tarde incorporaron el cava en su portfolio, elaborando un rosado de Pinot noir y un blanco de Chardonnay. En las fincas de Mas Fonoll y Sapera, caracterizadas por sus suelos pobres y poco profundos crecen las variedades: Pinot noir, Chardonnay, Sauvignon blanc, Albariño, Incroccio manzoni, Gewürztraminer y Merlot.

Origen.
La variedad Chardonnay es el fruto de una viña originaria de la región francesa de Borgoña, donde se localiza un pueblo del mismo nombre. Dentro de las uvas blancas, es la más extendida y popular en todo el mundo, por lo que, para mucho público, Chardonnay es sinónimo de vino blanco. Es una uva muy equilibrada en fruta, acidez y textura. Se puede considerar que marida con todo, desde comidas potentes hasta las más suaves, desde platos picantes y quesos fuertes, hasta pescados y aves. Además de los vinos blancos de mesa, es la uva con la que se elaboran la mayor parte de los champanes.
Características.
Si fuera una persona, Chardonnay sería un diplomático por su facilidad de maridaje, diversidad en sabores y facilidad de consumo. Como la uva en sí no tiene un sabor concreto, extrae su aroma del terruño donde se cultiva y obtiene sabores muy diversos, que pueden ser desde vinos muy limpios y sabrosos hasta otros ricos en toques de roble y mantequilla. Su racimo es de tamaño más bien pequeño, bastante compacto y con pedúnculo muy característico y de tamaño muy reducido. Las uvas en sí son pequeñas, uniformes y muy esféricas. Su piel es amarillento-verdosa cuando madura, hollejo de grosor considerable y una pulpa poco o nada pigmentada, textura blanda, muy jugosa y con aroma afrutado. La cepa es precoz en su brote, vigorosa, resistente y muy versátil por adaptarse a terruños y climas muy diversos, con la única condición de que no sean excesivamente húmedos. Es muy fértil, aunque con rendimientos bajos, aunque de una calidad bastante elevada. Esta viña se ve afectada por suelos con carencia de magnesio y precisa de niveles altos de fósforo y nitrógeno. Es una variedad de uva muy sensible a la carencia de magnesio y muy afectado por el secado fisiológico del raspón. En cuanto a sus hándicaps, es sensible al oídio, a la flavescencia dorada, al mildiu y a la podredumbre gris, así como a la polilla y a los cicadélidos y especialmente a los ácaros. Por otra parte, los hongos de la madera no le afectan en exceso y resiste perfectamente a la clorosis. Debido a su desborre precoz y maduración temprana es una viña que no gusta de los fríos primaverales, dando unos rebrotes de muy baja fertilidad, no obstante, aguanta bien los inviernos crudos y es muy resistente a los vientos fuertes.
Zonas de cultivo.
Podemos encontrar esta variedad de uva prácticamente en cualquier área vitivinícola pues está extendida mundialmente. Es muy común en Francia, España e Italia, aunque también se cultiva en Portugal, Estados Unidos, Australia, nueva Zelanda, en los países de América del sur y en África del Sur. Se calcula que hay en torno a 160,000Ha de uva chardonnay plantadas, de las cuales una tercera parte está en Francia. Además de su nombre genérico, también es conocida como Franciacorta en Italia, Chardoney y Pino Shardone en Bulgaria, Feinburgunder y Morillon en Austria y Pinot Chardonnay en Chipre.
Vinos.
Sus características pueden variar desde vinos ricos, gruesos y espesos, adecuados para envejecer en botella, a vinos más ligeros y frescos hechos sin madera y destinados a ser bebidos jóvenes. Es una de las variedades con que se elaboran el Champagne. Los vinos chardonnay presentan en su fase visual una capa variable entre pajiza muy pálido y un amarillo casi dorado, con reflejos verdosos. En nariz se observan los aromas característicos que son manzana verde, limón, pomelo, pera, acacia, frutas tropicales como mango, piña, banana, melón o ananá, algo de especias o caramelo. Cuando envejecen en barrica despiertan aromas a vainilla, miel y manteca. Su boca es elegante, larga, sin demasiada acidez, pero con una gama de sabores que va desde manzanas a cítricos, melón, peras, miel, cera, caramelo, dulce de leche y minerales entre los más destacados. Como consejo, es preferible adquirir vinos de esta variedad que se elaboren en regiones vinícolas de clima frío.

Origen.
Según cuenta la historia, el origen de la uva albariño se sitúa en el siglo XII, época en la que fue importada por unos monjes de Cluny (Francia) que se situaron en tierras gallegas, más concretamente en el Monasterio de Armenteira (Pontevedra), desde donde se extendió al resto de Galicia y norte de Portugal, aunque hay opiniones que sitúan el origen de esta uva en Galicia en la época de los romanos. Independientemente de cuál sea el origen, lo cierto es que es la variedad por antonomasia de uva blanca gallega, y la asociación con su cultura y gastronomía está presente en nuestra mente al igual que las queimadas, las meigas y la tarta de Santiago. Decir albariño es decir Galicia, variedad con la que se elaboran los vinos del mismo nombre.
Características.
La uva albariño se produce en cepas altas, vigorosas que con un desborre precoz y una maduración media/tardía, presentan una fertilidad elevada. Los racimos son de tamaño medio, no demasiado compactos y con pedúnculo corto. Las uvas son de tamaño reducido, uniformes, esféricas y con una epidermis de color verde pálido amarillento en maduración, suave y delicada, aunque en su estrujado presenta un hollejo grueso. Su pulpa es blanda, muy jugosa y con apenas pigmentación, con sabor y aromas peculiares y característicos florales intensos. La albariño también es conocida con los sinónimos albarina, alvarín blanco, alvarinha, alvarinho, azal blanco, galego y galeguinho. Es una cepa que resiste bastante bien a botritis y mildiu, sin embargo, es atacada con facilidad por el oídio y las sequías.
Zonas de cultivo.
Los viñedos de uva albariño se localizan principalmente en Galicia (España), más concretamente en la zona conocida como Rías Baixas en la provincia de Ponteverdra. También existen plantaciones en otras regiones españolas como Cantabria, Castilla y León y Cataluña y en las portuguesas de Monção y Melgaço, en el noroeste del país, que linda con la zona Gallega de Rías Baixas. Las principal Denominación de Origen que utiliza esta uva es la D.O. Rías Baixas así como a la Indicación Geográfica Protegida Vino de la Tierra de Barbanza e Iría, también en Pontevedra. También viñedos de albariño en las áreas vitícolas de California.
Vinos.
Sus monovarietales son los vinos blancos más prestigiosos de Galicia. Presentan una graduación alcohólica elevada y una acidez notable. Son caldos muy potentes en aroma con notas intensas afrutadas y con matices florales. Algunos expertos estiman algo negativo ese “exceso” de aromas afrutados, calificándolos de empalagosos. Pare evitar este, según ellos, defecto, la crianza puede ser una buena opción. es de las pocas uvas blancas españolas que permite una óptima crianza sobre lías. La mayor parte de los vinos se consumen jóvenes, aunque, como se comentó con anterioridad, algunas bodegas los elaboran con crianza en barrica.
