Tradición vinícola.

La bodega Elvio Cogno se encuentra en las colinas del Bricco Ravera, en Novello, en el corazón de las Langhe. Ubicada en una antigua casa centenaria, rodeada de 11 hectáreas de viñedos, la bodega expresa en sus vinos un encantador paisaje de suaves colinas y cielos abiertos. La familia Cogno se dedica a la viticultura desde hace 4 generaciones, elaborando los tradicionales vinos de las Langhe, uno de los más nobles de Italia y del mundo entero. Los grandes vinos de Elvio Cogno, especialmente su Barolo y su Barbaresco, proceden en primer lugar del cuidado y la atención con el que el viñedo ha sido cultivado, sin forzar ni su ritmo ni su equilibrio natural. Este cuidado no termina en el viñedo sino que prosigue hasta la bodega, donde tiene lugar la fermentación mediante levaduras indígenas y un envejecimiento en madera perfectamente equilibrado. El resultado son unos tintos de gran calidad, ricos y sin excesos, armónicos y de carácter clásico, dóciles y elegantes.

El manejo de los viñedos.

Solo hay una forma de mejorar un vino que proviene de uno de los terruños más adecuados del mundo, el de estudiar y conocer los viñedos, el suelo en el que crecen, el entorno natural y antrópico que los rodea. Es en esta fase en la que se forma el carácter del vino, su "alma", que el trabajo del viticultor puede comprender e interpretar, que es lo le permite expresarse. La atención de Elvio Cogno a la gestión de su viñedo avanza en esta dirección, desarrollando la idea de que, en el sector vitivinícola, el progreso real coincide con la capacidad de armonizar el trabajo agrícola y el biológico, de acuerdo con procesos e intervenciones marcadas por el respeto por el medio ambiente, el hombre que lo trabaja y la sostenibilidad a largo plazo. Desde hace algunos años, por lo tanto, la compañía ha comenzado a convertirse en orgánica, cosa que se concibió para obtener la certificación europea. Sin embargo, junto con la esa certificación, se está trabajando para mejorar el ecosistema de la vid y la biodiversidad del medio ambiente, eliminando definitivamente los tratamientos y los fertilizantes sintéticos, la química en la bodega y los procesos invasivos.

Viticultura natural.

Descripción.

D.O.C.G. Moscato d'Asti es la denominación de origen que distingue al famoso moscato del Piamonte, uno de los vinos más apreciados en Italia. Aunque la cuna de esta zona de producción es la ciudad de Asti, ésta abarca además cerca de 50 municipios de las provincias de Cuneo, Asti y Alessandria, sumando 9.700 hectáreas de viñedo de la variedad moscato, también conocida como moscatel de grano menudo. El moscato d’Asti nacido de esas uvas es un blanco dulce, de bajo grado alcohólico, notable frescura y elegantes aromas florales y de fruta de hueso, que suele ser el acompañante perfecto para todo tipo de postres. Dentro de la misma D.O.C.G. también figura el Asti spumante, un espumoso dulce, que con el prosecco y el lambrusco, es el vino elaborado en Italia más exportado. El Moscato d’Asti se caracteriza por su denominación de origen controlada garantizada, de ahí que su etiqueta lleve las siglas D.O.C.G., que es garante del rigor de los métodos de producción y de la alta calidad de la uva Moscato Bianco que se usa en su elaboración. Esta uva se ha venido cosechando en el Piemonte por cientos de años, donde los viñedos cubren un área de 9.700 hectáreas en los montes a lo largo del río Tanaro.
