Historia.

Antes de 1894, las uvas Nebbiolo se vendían para hacer vino Barolo, o simplemente se etiquetaban como "Nebbiolo di Barbaresco". Pero en esa fecha, Domizio Cavazza, director de la Real Escuela de Enología de Alba y residente de Barbaresco, creó la primera cooperativa, "Cantine Sociali", al reunir a nueve propietarios de viñedos de Barbaresco para hacer vino en el castillo local que poseía. La zona y su clima.

La “Denominazione di Origine Controllata e Garantita Barbaresco”, traducida al español como denominación de origen controlada y garantizada Barbaresco, se encuentra en una zona rica en viñedos del noroeste de Italia, el Piamonte, a dos horas en coche de Milán, a una hora de Turín, y aproximadamente una hora y media de la frontera francesa. El Barbaresco, como su gran vecino Barolo, se vinifica en varietal de Nebbiolo. La cosecha.

Nebbiolo es una variedad de maduración tardía, muy sensible a los diferentes suelos y al clima y tiene una gama compleja y fascinante de sabores. Las uvas se cultivan en suelo arcilloso, a una altitud de 200 a 400 metros sobre el nivel del mar, en colinas muy empinadas "prealpinas" en el sur del Piamonte. El suelo es arcilloso y rico en piedra caliza, aunque con concentraciones variables de caliza y venas arenosas en cada ladera, dando características diferentes en cada viñedo.

Notas de cata.

Barbaresco es un vino tinto seco, elegante, con cuerpo, rico en taninos y con una nariz muy compleja. Los barbarescos jóvenes se cierran un poco en boca, tienen una nariz agradable con aromas afrutados y un final picante y tánico. Al evolucionar con el tiempo, cuando se ha desarrollado completamente durante unos años, revela aromas de flores secas, violetas, trufas blancas, anís, presenta una boca compleja al abrirse, tánico, potente con un acabado suave pero persistente. Tradicionalmente degustado con platos de caza, carne, aves, polenta, fonduta y trufa blanca del Piamonte, Barbaresco es un rico complemento para muchos platos.
