Martín Codax es el nombre de uno de los juglares más afamados de la historia nacional y el nombre de la bodega gallega más internacional. Fundada en 1986 por un grupo de viticultores en el Valle del Salnés, en la actualidad se erige como uno de los timones fundamentales de la D.O. Rías Baixas. Estandarte del I+D en Galicia y una de las bodegas que más han trabajado en favor de la variedad albariño, cuenta con el asesoramiento vitícola del reputado profesor José Ramón Lissarrague. Martín Códax es la bodega que está dando a conocer el albariño en EE.UU., una auténtica pionera del ‘albariño por el mundo’. Exporta un 60% de su producción total, y prácticamente el 50% se destina al consumidor estadounidense (el resto viaja a Reino Unido, Alemania, Países Bajos…). Así, cada año, un millón de botellas de albariño Martín Códax traspasa las fronteras nacionales.
La célebre cooperativa de Rias Baixas.
Martín Códax toma su nombre del más célebre trovador gallego del que aún se conservan sus cantigas, las más antiguas del galaico-portugués, en las que se canta al amor y al mar. Este proyecto nació hace algo más de 30 años a partir de la ilusión de un grupo de viticultores de la zona. Hoy, el número de socios de la cooperativa asciende a unos 270 socios. Además, la bodega cuenta con 300 familias más de cuyas uvas se abastece. Con la idea de base de establecer un diálogo y nexo de unión con la sociedad del Valle de Salnés, donde se encuentran sus instalaciones, nació la bodega Martín Códax, para elaborar productos de primera calidad. Fruto de su propia evolución, esta bodega tradicionalmente ligada al albariño de Rías Baixas, hoy está asociada también al compromiso con la promoción de la cultura. Os Xoves de Códax es un ejemplo de ello, un proyecto con el que apoya la expresión musical y artística. Por otrro lado, Martín Códax se nutre de su compromiso con el medio ambiente y trabaja para reducir su huella de carbono al máximo posible. De ahí que sus investigaciones en innovación estén encaminadas a este propósito. En esta línea, el equipo técnico de la bodega dispone de una parcela experimental de 13 hectáreas de viñedos dedicada a la investigación en viticultura en la que se desarrollan diversos proyectos en colaboración con instituciones gallegas y con la Universidad Politécnica de Madrid. La profesionalización de la gestión de la cooperativa ha facilitado su expansión a zonas como Monterrei, Bierzo y Rioja. Estas otras bodegas conforman un grupo empresarial con la matriz en Rías Baixas que a día de hoy es buque insignia de los vinos gallegos.
El suelo.
En la D.O Rías Baixas, la mayoría de viñedos se encuentran ubicados a poca distancia del mar, por lo que son terrenos bajos y poco profundos, que como máximo llegan a los 300 metros sobre el nivel del mar. Esta ubicación provoca que los suelos se caractericen por ser principalmente arenosos y minerales, especialmente graníticos, y algo ácidos, lo que le confiere toques de salinidad a los vinos.
La uva albariña.
La uva albariña es la uva protagonista de la D.O. Rías Baixas y una de las más importantes y conocidas de Galicia. Sus racimos y frutos son pequeños, no superando los 125 gramos de peso y realizan una maduración temprana. Se trata de una uva dulce y glicérica, con alto nivel de azúcar y acidez que le confiere una gran frescura a los vinos. Cultivada tradicionalmente en emparrado, es uno de los símbolos de Galicia por excelencia. Sin embargo, la D. O. cuenta también con otras variedades, tanto blancas como tintas. Entre las blancas, cabe destacar la variedad treixadura, caíño blanco y loureira.
El clima.
El clima de la D.O. Rías Baixas es de influencia atlántica con temperaturas suaves y elevadas precipitaciones que disminuyen considerablemente en la época estival. La temperatura media durante el invierno ronda los 10ºC y apenas existe una pequeña diferencia entre el día y la noche. Por su parte, las precipitaciones están en torno a los 1200ml. de media al año.
La bodega.
En 1986 nace Bodegas Martín Códax y toma por nombre el del más célebre trovador gallego del que aún se conservan sus cantigas, las más antiguas del galaico-portugués con la música original, en las que se canta al amor y al mar que baña nuestras costas. Desde entonces, Bodegas Martín Códax ha crecido y evolucionado apoyando siempre a su gente, su tierra y su cultura. Una cultura que promueve por más de 40 países en todo el mundo. Un proyecto que comenzó con la ilusión y el esfuerzo de un grupo de viticultores y que hoy en día es ya una realidad que ha convertido a Bodegas Martín Códax en emblema de los vinos gallegos fuera y dentro de nuestras fronteras.

Según cuenta la historia, el origen de la uva albariño se sitúa en el siglo XII, época en la que fue importada por unos monjes de Cluny (Francia) que se situaron en tierras gallegas, más concretamente en el Monasterio de Armenteira (Pontevedra), desde donde se extendió al resto de Galicia y norte de Portugal, aunque hay opiniones que sitúan el origen de esta uva en Galicia en la época de los romanos. Independientemente de cuál sea el origen, lo cierto es que es la variedad por antonomasia de uva blanca gallega, y la asociación con su cultura y gastronomía está presente en nuestra mente al igual que las queimadas, las meigas y la tarta de Santiago. Decir albariño es decir Galicia, variedad con la que se elaboran los vinos del mismo nombre.
Características.
La uva albariño se produce en cepas altas, vigorosas que con un desborre precoz y una maduración media/tardía, presentan una fertilidad elevada. Los racimos son de tamaño medio, no demasiado compactos y con pedúnculo corto. Las uvas son de tamaño reducido, uniformes, esféricas y con una epidermis de color verde pálido amarillento en maduración, suave y delicada, aunque en su estrujado presenta un hollejo grueso. Su pulpa es blanda, muy jugosa y con apenas pigmentación, con sabor y aromas peculiares y característicos florales intensos. La albariño también es conocida con los sinónimos albarina, alvarín blanco, alvarinha, alvarinho, azal blanco, galego y galeguinho. Es una cepa que resiste bastante bien a botritis y mildiu, sin embargo, es atacada con facilidad por el oídio y las sequías.
Zonas de cultivo.
Los viñedos de uva albariño se localizan principalmente en Galicia (España), más concretamente en la zona conocida como Rías Baixas en la provincia de Ponteverdra. También existen plantaciones en otras regiones españolas como Cantabria, Castilla y León y Cataluña y en las portuguesas de Monção y Melgaço, en el noroeste del país, que linda con la zona Gallega de Rías Baixas. Las principal Denominación de Origen que utiliza esta uva es la D.O. Rías Baixas así como a la Indicación Geográfica Protegida Vino de la Tierra de Barbanza e Iría, también en Pontevedra. También viñedos de albariño en las áreas vitícolas de California.
Vinos.
Sus monovarietales son los vinos blancos más prestigiosos de Galicia. Presentan una graduación alcohólica elevada y una acidez notable. Son caldos muy potentes en aroma con notas intensas afrutadas y con matices florales. Algunos expertos estiman algo negativo ese “exceso” de aromas afrutados, calificándolos de empalagosos. Pare evitar este, según ellos, defecto, la crianza puede ser una buena opción. es de las pocas uvas blancas españolas que permite una óptima crianza sobre lías. La mayor parte de los vinos se consumen jóvenes, aunque, como se comentó con anterioridad, algunas bodegas los elaboran con crianza en barrica.
